This is along the lines of a Waldorf salad, but lighter. It is fruit in a light coating of yogurt, vanilla, honey, lemon and cinnamon. It is soooo good and you can feel good about eating it!
Jax loved it! He loves apples, grapes and pears. He also loves yogurt. I had a feeling he would really like it, but sometimes the kid throws you a curve. He ate a whole pizza bread and two helpings of apple salad for dinner. Then a smoothie. I think he is going through a growth spurt!
Apple Salad with Honey Yogurt Dressing
1 pear (or another apple if you'd rather)
1 stalk celery
2 cups seedless grapes
1 cup plain yogurt
2 T honey
1-2 T lemon juice
1/2 tsp cinnamon
1/2 tsp vanilla
1/2 cup nuts (optional... I didn't use them so Matt would eat it, but I would have loved some pecans or walnuts or something)
- Wash and dry all your fruit. Cut your grapes in half. Core the apples and pear and chop them into small cubes.
- Mix together honey, lemon juice, cinnamon, vanilla and yogurt.
- Toss fruit in dressing and serve or refrigerate until ready to serve.
