If you are like me, you love fried chicken but hate the mess and the grease. This cornflake crumb chicken recipe is a great way to get a similar feel but it is made in the oven.

The seasoned corn flake crumbs bake up nice and crisp, while the chicken inside stays tender and juicy. We love using chicken leg quarters or split breasts, but you can easily use boneless chicken if that is what you prefer.

This one is an oldie but a goody.  My mom grew up eating it. I grew up eating it.

Little Dude will probably grow up eating it if he ever decides to like chicken.

He will eat pork loin and pork chops, hamburger… but the tiniest bit of chicken will get spit out.  He doesn’t even eat chicken in nugget form.  

What kid doesn’t like nuggets?  

He will try to drink the honey mustard and leave the nuggets!

Not that I really mind that he doesn’t like nuggets, really.  It just doesn’t seem right!

Anyway, if you have never had corn flake crumb chicken, the crumbs form a nice crisp crust and the chicken stays moist and delicious.  It is baked, so it is easy to make and it is so yummy!

Tips for Corn Flake Crumb Chicken

When dipping the chicken in the egg mixture and cornflakes, it is good to have a wet hand and a dry hand. Always use the same hand to dip the chicken in the egg mixture and move it to the corn flake crumbs.

Then always use the other hand to apply the crumbs and move the chicken to the baking tray. If you use one hand for the whole process, the crumbs will build up on your fingers and you’ll have a mess.

You can crush your own cornflakes in a food processor or smash them in a plastic bag. Or most grocery stores sell cornflake crumbs that are ready to use.

This chicken is best fresh from the oven. The coating will soften a bit in the refrigerator.

It will still taste good, but will lack the crunch. If you reheat the chicken in a toaster oven, air fryer, or the oven, it will crisp back up.

Feel free to play with the seasonings. A BBQ rub would be good, or add some kick with cayenne or a chipotle seasoning.

Ingredients
 

  • 5 chicken leg quarters
  • 1 cup cornflake crumbs
  • ½ Tablespoon seasoned salt
  • 1 teaspoon garlic powder
  • 1 large egg
  • 1 Tablespoon milk

Instructions
 

  • Preheat oven to 375°F
  • In shallow bowl, mix together the egg and milk.
    1 large egg, 1 Tablespoon milk
  • In another bowl, mix corn flake crumbs and seasonings. 
    1 cup cornflake crumbs, ½ Tablespoon seasoned salt, 1 teaspoon garlic powder
  • Dip chicken quarters in egg mixture and then the crumb mixture, making sure the coat the whole chicken piece.

  • Place on greased baking sheet and bake until crisp and golden brown (about 45 minutes to an hour).  Use an instant read thermometer to ensure the chicken is fully cooked. 

Notes

You can buy cornflakes already crumbed so they are uniform, or crunch up your own. Either way works.
