Whole Wheat Chocolate Banana Cupcakes

    I have really been on a baking with bananas kick lately.  I think it is mostly because I am still buying a big bunch every time I am at the store, but we haven't been around as much lately to eat them.  To switch it up a bit, I thought I would add chocolate this time.  However, I did want to keep it on the healthier side of cupcakes.  We have been having a lot of treats lately, so I didn't want to take these too far over the top.  The end result was a moist and chocolaty cupcake that still had a nice banana flavor.

Chocolate Banana Cupcakes
Makes About 15 Cupcakes


3/4 cup milk
1 T vinegar
1/4 cup oil (I used olive this time, but vegetable or slightly melted coconut oil would work great)
2 bananas
1 c sugar
1 tsp vanilla
1 egg
1 1/4 cup flour (I used about a quarter cup whole wheat and the rest all purpose)
1/4 cup cocoa powder
3/4 tsp baking soda
1/2 tsp salt

  1. Preheat oven to 250 F and mix milk and vinegar and set aside
  2. In your mixer bowl, cream together bananas and sugar.  Add oil and eggs and mix until uniform
  3. Stir in vanilla. In a separate bowl, mix together baking soda, flour, salt and cocoa.
  4. Alternate adding milk mixture and flour mixture until everything is added and batter is uniform
  5. Fill paper lined cupcake tins until the papers are at least 2/3 full
  6. Bake for 45-50 minutes or until completely set and inserted toothpick comes out clean
  7. Cool completely before frosting
