Jax's Breakfast Quesadilla

   It is nice to have a fall back when Jax doesn't like what we are having for dinner.  Sometimes what we are having is too spicy, sometimes he is just in a mood.  Either way, trying to make an almost two year old eat something he has decided he doesn't sound like fun!  So I try to come up with well rounded things for him to eat instead.  These scrambled egg quesadillas are always a hit.  You could add bacon or veggies if you'd like.  Jax prefers his with just eggs and cheese.
Breakfast Quesadilla

Ingredients:


1 egg
1 6 in tortilla
4 T shredded cheese (we have used cheddar and co-jack)
Oil for pan

  1. Heat a skillet (I use a cast iron pan).  Add enough oil to lightly coat the bottom of the pan.
  2. Scramble the egg and cook until set.
  3. Place tortilla in pan, arrange egg on one half the tortilla and top with shredded cheese.
  4. Fold tortilla over egg and cheese.  Cook until lightly browned on the bottom, then flip and cook until all of the cheese is melted and the tortilla is crispy.

   Jax like his with some fruit and yogurt!

  2. My kids can always go for eggs with cheese - and tortillas - they prefer that over bread I feel like at times. Looks like a delicious and simple back up meal.

    1. Jax would be happy to live on eggs, cheese and grapes if I would let him! We make these quesadillas at least once a week for him. He loves them for breakfast, lunch or dinner!
