1 6 in tortilla
4 T shredded cheese (we have used cheddar and co-jack)
Oil for pan
- Heat a skillet (I use a cast iron pan). Add enough oil to lightly coat the bottom of the pan.
- Scramble the egg and cook until set.
- Place tortilla in pan, arrange egg on one half the tortilla and top with shredded cheese.
- Fold tortilla over egg and cheese. Cook until lightly browned on the bottom, then flip and cook until all of the cheese is melted and the tortilla is crispy.
Jax like his with some fruit and yogurt!
