All you have to do is throw the ingredients in the slow cooker and let it go. When you are ready to eat, shred the chicken, stir in some cilantro and make some cilantro rice. Yum!
Slow Cooker Salsa Chicken
1 lb chicken breasts
1 1/2 cups dried black beans*
1 1/2 cups frozen corn
1 cup salsa
1 pkg taco seasoning
3 cups water*
1 medium onion, chopped
cilantro, to taste
*You can use 2 cans of black beans and cut the water to 3/4 cup if you'd like
Cilantro rice, lettuce, additional salsa, cheese, guacamole and/or sour cream to serve.
- Place black beans in the bottom of slow cooker. Add beans, corn, salsa, taco seasoning and water. Stir to combine. Add chicken breasts.
- Cook on low for 6-8 hours.
- Using forks, shred chicken and stir in cilantro.
- Serve over rice and top with your favorite toppings.
