Slow Cooker Salsa Chicken for Burrito Bowls

Everybody needs a couple of really simple to make really big on flavor recipes in their box of tricks.  This is a simple dump and go slow cooker recipe that results in a delicious dinner.

Come home, make some rice and you have burrito bowls in no time. You could also use tortillas to make fun tacos or burritos.

Flavorful easy dinners are always in high demand. Making a yummy recipe in the slow cooker is not only simple but you have the benefit of knowing you are coming home to something tasty.

Salsa chicken is a perfect example of that. Just load up the slow cooker in the morning and go about your day.

While you are doing your thing, the chicken is getting tender. The beans, corn, salsa and seasonings blend into the perfect meal.

It is fabulous served over cilantro lime rice or Mexican rice as burrito bowls. Just pile it on top of the rice and top with sour cream, cheese, guacamole or more salsa if you want.

Alternatively, stir a little rice in and load it up in a tortilla. It makes a fabulous burrito as well.

This has to be one of the recipes we make the most at our house. So it is shocking I haven’t revisited the post to share it with you again.

I did share an instant pot salsa chicken recipe, but I know there are still a lot of crock pot lovers out there.

So I wanted to make sure my slow cooker slayers haven’t forgotten about this gem. It had some new pictures and a little video too.

Of course you don’t really need it. This recipe is as simple as can be.

All you have to do is throw the ingredients in the slow cooker and let it go.  When you are ready to eat, shred the chicken, stir in some cilantro and make some cilantro rice.  Yum!

Simple dump and go slow cooker recipes like this are always great for busy weekdays. There is nothing like coming home to having dinner mostly ready.

You can make it with dry black beans if you have them. Otherwise it is great with a couple of cans of beans as well. 

Just make sure to adjust the water accordingly. The recipe as written is for dry beans but the canned beans adjustments are in the notes.

Bonus recipe for easy Mexican rice in the Instant Pot

If you are looking for a super simple way to make a yummy version of Mexican rice, you are in the right place. This recipe only takes 3 ingredients and one of the is water!

This is a great side dish for enchiladas, tacos or chimichangas.  It is also a great base for burrito bowls topped with the salsa chicken!

Mexican Rice Ingredients:

  • 2 cups white rice
  • 2 cups water
  • 1 cup salsa
  1. Put water, rice and salsa in instant pot. Pressure cook on high for 4 minutes.
  2. Let pressure naturally release for at least 5 minutes, then release the pressure.
  3. Fluff with a fork and serve.

Ingredients
 

  • cups dried black beans*
  • 1 medium onion chopped
  • cups frozen corn
  • 1 cup salsa
  • 1 package taco seasoning
  • 3 cups water
  • 1 pound Chicken Breasts
  • cilantro to taste

Instructions
 

  • Place black beans in the bottom of slow cooker.
    1½ cups dried black beans*
  • Add diced onion, corn, salsa, taco seasoning and water. Stir to combine. Add chicken breasts.
    1 pound Chicken Breasts, 1½ cups frozen corn, 1 cup salsa, 1 package taco seasoning, 3 cups water, 1 medium onion
  • Cook on low for 6-8 hours.
  • Using forks, shred chicken and stir in cilantro.
    cilantro to taste
  • Serve over rice and top with your favorite toppings. We like guacamole, a little more salsa, sour cream, cilantro and cheese.

Notes

*You can use 2 cans of black beans and cut the water to 3/4 cup if you’d like

I made a rookie mistake and still added 3 cups of water after using a can of black beans. I misunderstood the instructions as the beans just needed to be dried off?!? Lol. Anyways, I doubled up on beans and corn, added tahini seasoning and onion powder. Before shredding the chicken, I added a half cup of heavy whip to soak up some of the water and not take away the flavor. Didn’t turn out exactly like the recipe (obvi) but it was absolutely delicious! Creamy and we couldn’t get enough. Thank you!!
