Slow Cooker Salsa Chicken for Burrito Bowls

    This week has been really busy.  I knew I had a lot of travel on the calendar, so I wanted to have a few things that were quick to throw together.  Then my cousin, Sarah, posted her make ahead slow cooker meals for the week on Facebook and I figured I would take the opportunity to follow along. This may be a new favorite.
    All you have to do is throw the ingredients in the slow cooker and let it go.  When you are ready to eat, shred the chicken, stir in some cilantro and make some cilantro rice.  Yum!


Slow Cooker Salsa Chicken

Ingredients:

1 lb chicken breasts
1 1/2 cups dried black beans*
1 1/2 cups frozen corn
1 cup salsa
1 pkg taco seasoning
3 cups water*
1 medium onion, chopped
cilantro, to taste

*You can use 2 cans of black beans and cut the water to 3/4 cup if you'd like

Cilantro rice, lettuce, additional salsa, cheese, guacamole and/or sour cream to serve.

  1. Place black beans in the bottom of slow cooker.  Add beans, corn, salsa, taco seasoning and water.  Stir to combine.  Add chicken breasts.
  2. Cook on low for 6-8 hours.
  3. Using forks, shred chicken and stir in cilantro.
  4. Serve over rice and top with your favorite toppings.

    1. I love using dry beans when I can. And black beans are prefect for the slow cooker! It makes for a really affordable and filling meal! I hope you have a great day as well!

  2. This is a great idea for when you are gone all day. It cooks 6-8 hours, that is perfect. Especially if you make the rice the night before and warm it up, dinner could be on the table in a few minutes! Awesome.
