I start my day with black coffee most mornings.  I am just not in the mood for a big breakfast.

My husband doesn’t wake up hungry, he needs time to build an appetite.  Little Dude wakes up so hungry that he can’t wait for breakfast to be made.

Luckily this tasty breakfast casserole also makes a wonderful dinner. We have enjoyed it as that several times.

Though we have also doubled the recipe and made it for brunch with family as well. It is so easy to put together, you will find yourself making it for all kinds of occasions.

You can serve it with a green salad if you are having it for lunch or dinner. Or serve it with a nice fruit salad as a tasty breakfast or brunch option.

Easy Substitutions and Additions

We love making this egg casserole with ham because it is easy. All you have to do is chop it up and toss it in.

However cooked and crumbled bacon or some browned breakfast sausage are also good. Use whichever meat you happen to have on hand or your favorite.

The cheese is another place where you can play. We like shredded cheddar, but Swiss, Colby jack, pepper jack or gouda would be delicious.

You can add veggies if you would like. I would cook them down a bit before adding them, but that is up to your personal preference.

Go ahead and assemble the casserole the night before if you want. Just wrap it and refrigerate it until you are ready to bake it off.

Pull the casserole out of the refrigerator when you start preheating the oven to take a little bit of the chill off, then bake as directed. It’s an easy way to have a tasty breakfast in the morning.

Ingredients
 

  • 45 frozen tater tots
  • 9 eggs
  • 1 cup shredded cheddar cheese
  • ¼ pound bacon or ham cooked and crumbled or diced
  • ½ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 350°F
  • Arrange tater tots in a greased 8-inch square baking dish.
    45 frozen tater tots
  • Top with chopped ham and shredded cheese.
    1 cup shredded cheddar cheese, ¼ pound bacon or ham
  • Beat the eggs. Stir in the seasonings.
    9 eggs, ½ teaspoon onion powder, ¼ teaspoon garlic powder, salt and pepper to taste
  • Pour over the tater tots.
  • Bake for about 45 minutes or until eggs are fully cooked. Check the center as that will be the last place to set.
  • Cover with your favorite toppings and enjoy!
