Waffled Cupcake Sundaes

    MiMi made some homemade banana ice cream for family dinner this week.  She had a busy day helping Kristie move, so she didn't get anything sweet made past that.  Which was perfect for me!  I had an idea... and it would be just the right thing.  I had made some chocolate banana cupcakes and I had big plans for them.

    Everything goes in a waffle maker these days.  I got an email the other day reviewing all sorts of different things in the waffle maker.  The bready items all got high marks... the hot dog seemed questionable!  So, I thought we could waffle my cupcakes.  It would make them warm, increase the chewy outside portions AND give the banana ice cream little waffley crevices to pool in.  What is not to love?!
   Do you see how the melty ice cream has a perfect little nook to stay in?!  Isn't it perfect?
     All you have to do is spray your waffle maker, stick in a cupcake, smoosh and cook for about 30 seconds.  Top with ice cream and some fudge and voila!  Warm cakey waffle topped with cold homemade ice cream.  A wonderful end to a great meal!

Chocolate Banana Waffled Cupcake Sundaes

Ingredients:

1 cupcake (I used a Chocolate Banana Cupcake)
1 scoop ice cream (we had homemade hybrid banana ice cream using part frozen banana method and part traditional ice cream method made by MiMi... but she was just messing around when she made it so we can never have the exact same thing again... wah wah)
Hot fudge!!!

  1. Spray your waffle iron with cooking spray
  2. Place cupcake on the waffle iron and smoosh it down - go ahead and smash it to smithereens! 
  3. Cook for about 30-45 seconds
  4. Remove and top with ice cream and fudge!

    1. We really enjoyed them! I really like how the waffle iron made the cupcake warm all over again. There is just something about cold melty ice cream on a hot dessert!
