Kickin' Corn Dip


   Beware: this dip is addictive!  I knew I wanted some sort of fun dippy appetizer for our pecan pie throw down and shrimp boil.  I didn't want people to exhaust themselves playing yard games and have nothing to eat but pie. Wouldn't that be terrible?


    I had it in my head I wanted to do something in a cast iron skillet, that way I could be flexible about whether I wanted to do it in the house or over the fire.  Besides, I just think it is fun to serve something in cast iron, especially when you are serving things like pecan pie and shrimp boils!  So, I did what you do when you ideas of something fun to make... went to Pinterest.  There were a lot of great ideas, but none of them were exactly what I wanted.  So, I took note of a few things that looked interesting and gave it a tweak to make it more what I had in mind.


    I have to say, this dip was good.  Everyone was raving over it... and it wasn't due to lack of tasty options!  Mike asked for the recipe.  Sam likes to tell me his favorite dish after a party, and this won in his book.  That's right, it was better than shrimp and pie!


    It was up there in my book too.  It was creamy and full of flavor.  The jalapeno gave it just enough heat and melty cheese is always great on a crunchy tortilla chip!  The sweet corn and smoky bacon gave it a really nice balance and the herbs kept it fresh and delicious.   I am sure we will be making this again.  It will be perfect for football season!


Kickin' Corn Dip

Ingredients:

1/2 lb bacon
8 oz cream cheese, softened
1 jalapeno, diced (I left the seeds and ribs for some kick, but you can remove them)
1 lb frozen corn, thawed
6-8 oz Monterey jack cheese, shredded (I meant to add 8 oz, but somebody's little fingers stole some!)
1/2 cup plain yogurt (may sub sour cream)
1/4 cup cilantro, chopped
1/4 cup green onion, chopped
Tortilla chips for serving

  1. Preheat oven to 400 F
  2. In an oven-safe skillet (I used a 12 in cast iron skillet), cook the bacon until crisp.  Remove bacon, set aside to cool.  Drain most of the bacon grease, leaving just enough to coat the pan.
  3. In a bowl, stir together cream cheese, jalapeno, corn, shredded jack cheese and yogurt.  Fold in chopped bacon.
  4. Spread in skillet and bake for 20 minutes.
  5. Remove from oven and sprinkle with chopped herbs.  Serve with tortilla chips.
