Chocolate Peanut Butter Sheet Cake - Made by MiMi



   We love the combination of peanut butter and chocolate.  So, when MiMi was looking for something to make for a family BBQ she knew this would be a winner.  We have really been on a sheet cake kick and we are yet to find one that disappointed us.  MiMi served the cake with homemade vanilla ice cream drizzled with more peanut butter and chocolate.  Even those that were trying to resist dessert couldn't last long once they saw what we were having.  Everyone gave in and went home happy!



     Doesn't that look amazing?  It is delicious and rich and wonderful.  I suggest adding the ice cream and really enjoying yourself.

Chocolate Peanut Butter Sheet Cake

Ingredients:

Cake:
2 cups flour
2 cups sugar
1 tsp baking soda
1 cup butter
1/4 cup cocoa powder
1 cup water
1/2 cup buttermilk
2 large eggs, lightly beaten
1 tsp vanilla extract

Icing:
1 1/2 cups creamy peanut butter
1/2 cup butter
1/3 cup buttermilk
1/4 cup cocoa powder
16 oz powdered sugar
1 tsp vanilla

  1. Preheat oven to 350 F. 
  2. In a large bowl, stir together flour, sugar and baking soda.
  3. In a large saucepan over medium heat, bring butter, water, buttermilk and cocoa to a boil.
  4. Remove from heat and add to the flour mixture.  Stir in eggs and vanilla. 
  5. Spread in a greased 10x15x1 pan.  (MiMi used this one)
  6. Bake 20-25 minutes or until a toothpick inserted in the middle comes out clean.
  7. Cool on wire rack for 10 minutes.
  8. Drop tablespoons full of peanut butter around the warm cake and then spread until evenly covered.  Allow to cool completely. 
  9. To make the icing, combine butter, buttermilk and cocoa in a small saucepan.  Cook on medium heat, stirring constantly.  Bring the mixture to a boil.
  10. Remove from heat and stir in confectioners sugar and vanilla.  
  11. Spread icing over peanut butter and set aside to cool so the icing can set up.
