Dilly Cucumber Salad - Mondays With MiMi


     Pops has been harvesting cucumbers faster than I can use them this year.  Although I throw them in every lettuce salad I make and have shared them with friends and family, we have more than we can eat.  I made a batch of refrigerator pickles and still had more to use.  Cucumber salad came to mind.  We really enjoy a creamy cucumber salad and love cucumber dill dip so I combined the two.  this is a keeper.

       MiMi shared this recipe with us last summer, but it needed a new picture.  The only picture we had of the finished dish was on the buffet table outside and really close up.  I made these using her recipe.  The picture still doesn't do it justice, but you'll just have to make it to find out how good they are!  I hope you all had a lovely weekend!





Dilly Cucumber Salad

Ingredients:

4 cups sliced cucumbers
3/4 cup sour cream
1 T vegetable oil
1 tsp sugar
1/2 tsp each dill, garlic powder and salt
1/4 tsp each pepper and white vinegar


  1. Place cucumbers in a large bowl.  
  2. Place remaining ingredients in a bowl or canning jar and mix.  Add to the cucumbers and toss to coat. (Go ahead and use those clean hands of yours for this).
  3. Cover and refrigerate until chilled through. (At least 1 hour). Mix again before serving cold.

    1. This is one of my favorite ways to have them! My cousin recently shared two refrigerator pickle recipes with me and they are both lovely too! Good thing we are overrun with cucumbers right now!
