Strawberry Banana Baked Oatmeal


   Jax and I have made this oatmeal many times before.  Really I have made it many times and he has eaten it.  Now that he is such a big boy, he is able to help.  He has the best time stirring and dumping and helping!



   He is such a good helper, making sure everything is mixed just so.  He also individually placed each strawberry.  You don't have to be quite so precise, though you definitely could! 


   This oatmeal turns out much like you would expect.  It is not as light and pudding like as the hot cocoa baked oatmeal.  This one is denser and more like you would think of oatmeal.  It is really delicious and stick to your ribs good!



Strawberry Banana Baked Oatmeal

Ingredients:

3 ripe bananas
2 cups milk
2 eggs
1 1/2 tsp vanilla
3 T honey
1 1/2 T coconut oil, melted
3 cups rolled oats
1 tsp baking powder
1 tsp cinnamon
1/4 tsp salt
2-3 cups strawberries (fresh or frozen)
  1. Preheat oven to 375 F.
  2. In a large bowl, mash bananas until mostly smooth.  Stir in eggs, milk, vanilla, honey and coconut oil.  
  3. Mix in oats, baking powder, salt and cinnamon. 
  4. Layer berries in the bottom of a 9x13 baking dish or 2 qt casserole.  Pour oatmeal mixture over top.
  5. Bake for 25-30 minutes in a shallow dish.  Mine took closer to 35 minutes due the dish I used this time being smaller and deeper.
