Aloha Punch


   When we were planning the menu for my cousin Cori's baby shower, we knew there had to be punch.  It is funny because we hardly ever make punch, but for a baby shower it seems like a necessity.  We were having the hardest time deciding what flavors to do.  We had already made Grandma's peach punch last spring, so we thought we had to do something a little bit different.

Luscious Deep Chocolate Pudding


   Sometimes you just want a little chocolate pudding.  There is just something so comforting about it.  Now, you could run to the store and buy a box of mix.  Then all you have to do is stir in the milk and let it sit.  Or you can do something that is almost as easy and tastes twice as good.  Chances are you have most of the ingredients in your pantry already, and as a bonus you get to sneak a little warm pudding to tide you over until it cools!  

    In my book those are all wins!   This pudding's chocolate flavor is so deep and delicious.  I added some instant coffee to really round out the chocolate flavor, though you certainly don't have to.  It is sweet enough, but not too sweet.  It is smooth and luscious and a perfect treat that will remind you of childhood while still pleasing your adult pallet.

MiMi Rees' Chocolate Peanut Butter Ice Cream - A Guest Post by MiMi


     The first time I made this ice cream earlier this summer, Pops and K.C. said it was my best homemade ice cream ever.  The texture on this one is unbelievably smooth and cream.  Unfortunately, I did not write down the recipe and was concerned about making it another time in case I didn't make it just the way I did that first time.  I was afraid I'd fail to live up to those standards.

Fall Munchy Snack Mix - A New Twist On Your Fall Favorites


      Since yesterday was the first day of fall, I figured we better celebrate!  This snack mix is a perfect way to enjoy the flavors and colors of fall.  It would be fun to put on your desk at work to share with your coworkers.  It would be great to set out for people to munch on during the football game.  I little baggy would be a special treat in your child's lunch box!  No matter how you decide to serve it, it won't take long before it is gone.  It is like a magnet that keeps drawing your hand in for another bite!

Brunswick Stew



    I LOVE BBQ and smoked meats.  Matt is excellent on the grill and my brother K.C. (who lives across the street) is really enjoying his new smoker. So, I am spoiled.  But even a BBQ lover like me can get a little tired of eating a whole pork butt or brisket by the time you get to the end of it.  This soup solves that problem!

     Hey everyone!  I joined a new (to me) blogging group.  This one is all about cake and I just so happen to love cake, so I was definitely an easy convert.  Each year they pick a cake based cook book.  The administrator picks four recipes from the book each month and everyone bakes one of the four.  Everyone reveals what they made on the 20th of the month.  I can't wait to see what everyone picked and how different they all look!

Homemade Cookie Dough Ice Cream - A Guest Post by MiMi

 
   This summer has been a summer full of creating homemade ice cream recipes for my family.  I have also gotten into making Texas style sheet cakes.  I develop a sheet cake recipe and then make an ice cream recipe to go with it.  For the cookie dough ice cream, I didn't want to just add cookie dough chunks to vanilla ice cream.  After thinking about it, I realized the only change I would need to make to my vanilla ice cream recipe would be to use only dark brown sugar as the sweetener.  The cookie dough bits are so tasty that I wasn't sure they were going to make it into the ice cream. Carlee's brother, Collin, was here to taste test.  Every time I turned my back I caught him sneaking more bits.  Luckily the recipe made more than what I needed to put into the ice cream.  The taste tester of the family also has to taste the ice cream base.  He kept taking bits of cookie dough and dipping it into the ice cream that was left on the freezer bowl.  I knew I had a hit on my hands!

Apple Pie Baked Oatmeal


      Can you tell we like our oatmeal around here?  Jax asks for it all of the time knowing he will get to help make it.  This time we made an apple pie inspired version.  I cubed some apples and tossed them in cinnamon, cloves and lemon juice.  We spread them in the bottom of a pie plate and went to work on the oatmeal portion.

Balsamic & Rosemary Braised Pork Butt


     Summer is holding on with all of its might.  We are supposed to hit near 90 again this week.  However, we have had a few nice cool days sprinkled in here and there these last few weeks.  Fall is starting to show a little promise.  I would love a couple of straight months of 70s, but we rarely get that around here.  It seems like we jump from 90 to 50 forcing us to go from the air conditioner straight to running the heat!  I know there are worse things to worry about, but doesn't a nice long fall sound magnificent?

Brownie Batter Ice Cream


    Maw-Maw and Paw-Paw were up visiting from Florida over Labor Day weekend.  We had a LOT of family dinners planned for the weekend.  So of course MiMi had to make ice cream.  She made three new batches just for the first two nights!  I figured I better get to sharing them while the weather is still warm and people haven't given themselves over completely to the pumpkin spice!

     My herb garden is overrun with basil right now.  I think it would take over the yard if I would let it.  As it is, I need to keep it trimmed so it doesn't lean over the sidewalk.  It is tall and bushy and ready to be used!

Brown Sugar Nectarine Sheet Cake

Nectarines or peaches play so nicely with the warm flavor of brown sugar in this simple sheet cake.  Add a little browned butter glaze for an out of this world flavor combination!



   This scrumptious little beauty combines two of our favorite things lately; cooking with stone fruit and sheet cake.  The results were amazing!

Browned Butter Glaze


    This glaze will take your baked goods and give them a nice warm hug.  The nuttiness that comes out when you brown butter is really apparent when you use it for something simple like this glaze.  It makes it feel so much warmer and it is really simple!  It was a perfect finish to this brown sugar nectarine sheet cake.

Pumpkin Spice Cookie Bars



I am certainly not wishing summer away.  We have had so much fun and there is so much more I want to do.  However, I love fall.  I love fall flavors.  I love football.  I love hoodies.  I love temperate days and cool evenings.  I recently bought myself a little treat, a new bar pan and I couldn't wait to use it.

What?  A new pan counts as a treat!  We all have our vices!

Anyway, my favorite way to season a new pan (especially a stoneware one) is with cookies.  I know, I don't need much of an excuse for cookies.  However, they really are great for this.  All of that butter is excellent for the pan.  So, a new bar pan means lots of cookie bars.  

You want that pan now, don't you?!

    We have been loving peach season!  I am constantly buying a few more.  We have had fun baking with them and just eating them plain.  I knew I wanted to make a crisp before the season was over.  Really any excuse to use some fresh fruit and one of my trusty cast iron skillets is a good one!

Chicken and Mushroom Crepes #FoodieExtravaganza


    May's Foodie Extravaganza theme is mushroom.  I always look forward to making something to share to fit the theme, but it is always SO hard for me to decide what to make.  I love mushrooms, so you would think it would be easy.  A couple of my favorites are on the blog already.  MiMi's Mushroom Flatbread gets requested frequently, but it has already been posted.  These Garlic Grilled Mushroom Skewers were amazing, but they are already up as well.  Cori's Sausage Stuffed Mushrooms are the first thing to go when she brings them to a party, but we already shared that one too.

Surprise Meatballs - A Guest Post by MiMi

     It was time to come up with an idea of what to make for our weekly family dinner.  I usually have a backlog of ideas, but this time nothing really came to mind.  I asked Chloe what she was in the mood for and she suggested spaghetti because I have been making a lot of sauce to freeze from the tomatoes in our garden.  I can't really share that part of the recipe because I make it different every time.  I just roughly chop and saute all of the onions, green peppers, zucchini and eggplant from our garden.  I core and quarter the tomatoes and put them all in a large pot.  This year when I made it I was making two large pots at a time.  We have so many tomatoes that we are having to come up with all kinds of ideas to use them.
