Brownie Batter Ice Cream


    Maw-Maw and Paw-Paw were up visiting from Florida over Labor Day weekend.  We had a LOT of family dinners planned for the weekend.  So of course MiMi had to make ice cream.  She made three new batches just for the first two nights!  I figured I better get to sharing them while the weather is still warm and people haven't given themselves over completely to the pumpkin spice!


    The brownie batter ice cream is rich and chocolaty.  It also comes out with a really  nice smooth texture.  The mix MiMi used had some chocolate chunks and chips in it, so there were a few in the ice cream too.  Of course, it never hurts to put a few more on top!



Brownie Batter Ice Cream

Ingredients:

2 large eggs
1/2 cup sugar
1 T vanilla extract
1 1/2 cups brownie mix
2 1/2 cups cream
1 cup milk


  1. With an immersion blender, beat the eggs (MiMi does this in a ball jar) until they are light and foamy. This takes about a minute.
  2. Slowly add in the sugar and brownie mix, until well incorporated.  (About two minutes)
  3. Add vanilla.
  4. In a large measuring bowl, mix together the cream and milk. Gently stir in the egg mixture. (you don't want to beat it at this point, the air is already added to the eggs)
  5. Pour into your ice cream maker and make according to your maker's directions. (It normally takes MiMi about 20 minutes in her Kitcheaide  ice cream maker attachment

    1. You may have to adjust it down a little bit. MiMi's ice cream maker is 2 quarts and you are only supposed to put 5 3/4 cups of base in it, so this is pretty close to that number. I hope that helps!
