A while back, I asked my Facebook friends how they like their pasta salad best. I am 90% sure that my cousin Cori responded saying she likes hers with pepperoni, cheese and Italian dressing. That is it, pure and simple. So when I was planning her baby shower, I went back to confirm that this was in fact the case. I couldn't find the post anywhere! How does it just disappear like that?! Anyway, Cori, I hope I got it right!
Update: Cori has confirmed that this is her favorite pasta salad. Sometimes simple and delicious is the way to go!This makes a huge batch of pasta salad, perfect for a party. Of course you can scale it back a bit if you are just making dinner for the family. I served the leftovers to our football watching guests the next day and they really enjoyed it too! They said it was the perfect mix of ingredients. Plus there were no pesky vegetables to get in the way of your pasta salad enjoyment! ;-)
Cori's Pasta Salad
24 oz pasta
6 oz pepperoni, chopped
16 oz cheese, cubed (I used half colby jack and half colby)
1 bottle Italian dressing
- Cook pasta according to package directions. Drain and rinse with cold water.
- Toss with Italian dressing, cover tightly and refrigerate until cold.
- Stir in pepperoni and cheese. Either serve immediately or cover and refrigerate until ready to use.
