Peach Crisp

    We have been loving peach season!  I am constantly buying a few more.  We have had fun baking with them and just eating them plain.  I knew I wanted to make a crisp before the season was over.  Really any excuse to use some fresh fruit and one of my trusty cast iron skillets is a good one!

    It is hard to go wrong with fruit as delicious as this!  Just a really simple topping and some time in the oven and dessert is ready.  I don't even bother to peal the peaches.  It makes the prep a lot easier and I think you will find it won't bother you at all.  Just slice the peaches thin and throw them in.  YUM!

Peach Crisp


4 large peaches
1/4 cup maple syrup
1 T lemon juice
1/4 tsp salt
1/2 cup white whole wheat flour
1 cup old fashioned oats
1/2 tsp baking powder
dash of salt
5 T coconut oil, melted
1/3 cup brown sugar
1/2 tsp cinnamon

  1. Preheat oven to 375 F
  2. Stir together peaches, maple syrup, lemon juice and salt.  Pour into a 9 inch cast iron skillet or baking dish
  3. In a bowl, mix together flour, oats, baking powder, salt, coconut oil, brown sugar and cinnamon.  Sprinkle over peaches.
  4. Bake for about 25 minutes.  I love peach crisp served warm with homemade vanilla ice cream.
