Quick and Easy Pumpkin Fudge - A Guest Post by MiMi

With just 4 ingredients and a couple of minutes you can have this perfectly fall fudge.  Great for Thanksgiving, fall movie night or just because!
      Today is Tuesday and Thanksgiving is Thursday and I told Carlee that I would create another easy fudge recipe for the holiday.  I also happen to be the dessert committee for our large family gathering.  Oreo Acorn Balls done.  2 -3/4 Old Fashioned Honey Maple Pecan Pies in the refrigerator along with a Pumpkin Slab Pie.  Flourless chocolate cake and Reese's peanut butter cookies ready to go too.  I just have a few finishing touches left to do and the dessert part of my contribution will be done.  And just now I remember my promise to Carlee.

     That's the nice part about making quick and easy fudge.  I suppose it's because I'm smelling that wonderful slab pumpkin pie that pumpkin came to mind.  White chocolate sounds like a great companion to pumpkin.  When I was almost done making the fudge Chloe walked in the room.  She thought I should add pumpkin spice to it too.  Yum.  What a fun easy addition to our Thanksgiving dessert table.  I can't wait to find out how this family tackles these dessert choices.  It will be fun to watch this scene unfold.

Quick and Easy Pumpkin Fudge

Ingredients:

1/2 cup pumpkin puree
1 can sweetened condensed milk
2 bags white chips
1 tsp pumpkin pie spice

  1. Line a 9 inch baking dish with foil and brush with melted butter or spray it.
  2. Combine the sweetened condensed milk and the chips in a microwave safe bowl.
  3. Heat on high for 30 seconds and stir.  Repeat heating and stirring for 30 more seconds then stir in the pumpkin.
  4. Continue heating for 30 seconds and stirring until smooth.  Stir in the pumpkin pie spice and pour into the prepared dish.  Refrigerate until firm.  Cut and enjoy.
