lemon raspberry Texas sheet cake. I had extra lemons and raspberries so I decided to make ice cream to go with it. These two flavors go really well together and made for a very refreshing dessert. It seems to be that I have a new hobby. I really enjoy coming up with new flavors of homemade ice cream. My family seems to be willing taste testers.

MiMi made up this recipe to go with her Lemon Texas Sheet Cake and Lemon Raspberry Ice Cream. She used 3/4 of the recipe for the cake and the other 1/4 for the ice cream. It would also be great drizzled over vanilla ice cream, or on your favorite chocolate bundt cake. Heck, it is good on a spoon if you are desperate!

My Aunt Jenny and Uncle Jim have been making this pork loin for a number of years now. They have made it for us a few times and every time it has been delicious! We even had it for Christmas dinner one year. With the meat going on the grill, you can fill the oven with fabulous sides!

MiMi was having a family get together and she knew she wanted to make a s'more themed dessert for the kids. Of course the adults loved it too! The s'mores ice cream MiMi made was the run away hit of the evening. These bars were popular too. Sometimes quick and easy yields really tasty results!

Our blackberry bushes are in full production right now! We were lucky enough to have a patch of thornless vines going already at this house when we moved in, and this year is looking to provide a bumper crop. The only problem is it feels like it has been raining non-stop for months. The lack of sunshine has lead to berries that are a little more tart than normal. Jax loves picking the berries. He likes to point out the ones that aren't ready and collect the dark berries. He doesn't mind that they are tart. The neighbor boy doesn't either. I'll eat a few while picking, but not as many as normal. It's ok, I love baking with them anyway and I knew they would be perfect with a little added sugar! ;-)

Every time dessert comes up, Matt mentions key lime pie. He denies it now, but really he does. He had a key lime pie at a family holiday a while back and now every dessert is compared to that. On the other hand, I have been really wanting to make a lemon meringue pie. I mean I have really wanted one. Like REALLY wanted one, for a long time.
So, I had my craving meet his in the middle. I made a key lime meringue pie!

I wanted to make something fun for our family 4th of July celebration. As I was brainstorming, I was listening to the TV. Food Network was on, of course. Guy's Grocery Games was on but I was too busy searching around Pinterest for ideas to really pay attention. I perked up with I heard the contestant describe his offering to the judges. A hamburger that was a beef patty on one side and a pork patty on the other. He put cheese in the middle. A new version of our favorite hamburger surprises. That's it. I heard Guy call it a Juicy Lucy so I searched and found that Juicy Lucies (or is it Juicy Luci?) are a pub favorite in a variety of locales. Nobody makes it with pork and beef as far as I could tell. So, I made up this version.

These little nuggets are the softest cookies you can imagine. My Aunt Marlene made these for us for the first time when we were still small kids. We had never eaten cookies quite like them! They are still very much a family favorite and go quickly when Marlene makes them. I believe she normally puts a cream cheese frosting on them, but I made a quick butter and powdered sugar glaze and these were a last minute addition to a friend's gender reveal party spread. (That explains the color too, Marlene's a usually creamy white.) My first cookie idea was a big flop when the candies I baked into them melted everywhere turning everything into a sticky mess! I made these the morning of the party because I just knew there needed to be pink and blue cookies to go with the cupcakes.

I can still remember my Aunt Marlene teaching me this recipe. I was still in grade school and after I knew how simple it was to make such a delicious frosting, I was armed and dangerous! It is simple enough to commit to memory and very easily adapts into a hot fudge sauce (try it over peppermint ice cream in the winter... oh my!) I still remember her teaching me to cool it in an ice water bath if you wanted to use it more quickly. It was then my contribution to the family cookbook when that came out.
My favorite way to use this frosting is over rice krispie treats, but it also is a great way to take your pan of box mix brownies up to the next level! This recipe is sized perfectly to give a nice layer of fudgy frosting to a 9x9 pan. Though I am sure you could easily spread it out over a 9x13 of brownies if you wanted a thin layer of frosting.
