Lemon Rosemary Bechamel


Do you like creamy delicious sauces that are full of flavor?  Me too!  And this one fits the bill.  It has the perfect creamy texture.  It is everything you love about a bechamel but made brighter with lemon.  You with me?

Now, take that sumptuous sauce and infuse in some rosemary.

Yep!  It is really easy to make and will kick up anything you put it on.  Imagine it with chicken and pasta.  Ooh, or a white chicken lasagna.  I think that is happening!  SOON!

Crepes


   I had been wracking my brain to come up with a recipe for the next #FoodieExtravaganza theme.  Then it came to me!  Stuffed crepes!  So, of course I needed to make crepes.  Rather than shove that recipe into the top secret yet to come recipe, I decided to post it separately.  After all, there are so many things I could stuff into crepes.  So I may want to refer back to this recipe again!

Healthier Chocolate Banana Bars


     It is back to school time!  It is so hard to believe.  Of  course none of us are going back to school, but we are still getting in the mood.  MiMi liked to have an after school treat ready for us when we came home from grade school.  I imagine I will try to do the same for Jax.  This treat is right up our alley.  So we will practice having after school treats until the time comes!

Marshmallow Buttercream


    By now I think we all know that I am a frosting fan.  I love to make the stuff and I really love to eat it!  I mean that is the whole point of making a cake, isn't it?  I feel like it is hard to go wrong with deliciously plain old buttercream, but sometimes you want to amp it up a bit, am I right?  The super light and fluffy white chocolate buttercream is an excellent example.

Peach Habanero Jelly


     Pops has a habanero plant at the farm that is going crazy.  Every time he goes there to harvest the garden, he comes home with dozens of habaneros.  He isn't quite sure what to do with them though.  He has stuffed some along with he weekly stuffed jalapenos.  They were good, but you can't eat more than one like that.  (You can, but you might not like yourself much afterwards!)  He is thinking of putting some in his dehydrated hot pepper mix.  That should add some kick!  Otherwise he is just trying to give them away.

   I have been wanting him to make some into peach habanero jelly, but he hasn't followed through.  So, I took matters into my own hands!

Blackberry Shortcake Cake


    As you know, we have been having a bumper blackberry crop.  I wanted to make shortcakes, but I thought it would be more fun to make a shortcake cake!  I had been looking for a good excuse to make my favorite whipped cream frosting, so this seemed like a perfect application.

Easy Blackberry Sauce


    This sauce works great with fresh berries as well as frozen.  We get gallons of blackberries off our bushes each year.  We use a bunch during the summer and freeze the rest for sweet treats during the year.  I used some frozen berries to make the sauce for Donna's cheesecake and fresh berries when I made it for the blackberry shortcake cake.

Tomato Basil Cobbler with Whole Wheat Parmesan Crust



    As I told you before, my tomato patch got completely wrecked by a recent storm.  Luckily, my parents have been still getting plenty of tomatoes at their farm garden.  They are at that point in the summer when tomatoes are rotting faster than they could use them.  So, I came to their rescue and took a big bag of red beauties home!

Peaches and Cream Baked Oatmeal



     Jax has really been loving baking in the kitchen.  We have made a few baked oatmeal recipes together, so now he knows to ask to make oatmeal.  That means he will get to help and it is hard for a mommy to say no when their kid wants something hearty like oatmeal.

   We love popcorn around here.  Jax and I  make popcorn at least once a week.  He loves to watch the air popper do his thing.  We both love the results.  Most of the time we just add a little butter and salt.  But we were getting ready for a big family get together, so we thought we better do something a bit more exciting than that!

     MiMi decided she was making BBQ beef for family dinner this week.  She already had an ice cream sundae bar planned for dessert, so I offered to make a vegetable.  I figured Jax and I would go early to play, so I wanted to make something in the slow cooker.  That way we could head over whenever we wanted to and the side would be ready when it was time to eat.

Carrot Green Pesto


     I am not sure if I really told you all, but a big storm blew through our town a couple of weeks ago.   First we had a month or two where it seemed like it rained every day, setting us up with a lot of mud. Then the night of the big storm we had sustained 75 mph straight line winds.  In an older town like ours, with a lot of big trees that spelled disaster.  The tall trees and all the leaves acted like kites, and the mud didn't give much for the roots to hang on to.  The result was a lot of uprooted trees and large limbs down.  The streets were impassable, the power was out nearly everywhere and people were going door to door in many neighborhoods (including ours) evacuating people due to gas leaks where the roots brought natural gas lines up with them.

Vicki's Whipped Cream Frosting {AKA Ermine or Boiled-Milk Frosting)

This frosting is so fluffy, creamy and delicious.  It tastes a lot like whipped cream and that's what it was called when I was introduced to it. Now I know that it's also called Ermine or Boiled-Milk Frosting.  No matter what you call it, it's good! 


     It is hard to believe, but I have been making this frosting for 10 years now!  I was working with my friend Vicki and her birthday was coming up.  Of course I had to bake her a cake!  She requested red velvet cake with whipped cream frosting.

K.C.'s Jalapeno Popper Wontons


     So my brother K.C. is a culinary genius.  Don't worry, he doesn't really read the blog so he won't know I said that.  But really, he is.  He has always been good in the kitchen and isn't afraid to just do something.  It doesn't hurt that he works at a food wholesaler. (Actually, it might hurt his checkbook a little!)  So when he wants crab legs, he buys a case and invites us over for a crab fest. If he wants pulled pork, he just smokes himself up a pork butt.  The rest of us do not complain when his bulk buying leads to an invitation to help eat what he has made!

Loaded Pierogi


   I really struggled trying to decide what potato recipe to do for this month's Foodie Extravaganza theme.  I had a lot of ideas, none of which I was thrilled about.  The idea to do pierogi popped into my head and it sounded wonderful, but I had never made pierogi on my own.  I had helped my mother-in-law once.  It was a lot of fun.  A bunch of Matt's cousins, their kids, my brother-in-law and Nana and Mike all got together to do it.  A group broke off to make homemade polish sausage (it's nothing think the kielbasa I thought of before being introduced to more tradtional Polish recipes).  The rest of us were on team pierogi.  We made a TON of them with a handful of fillings.  It worked out great.

Cori's Refrigerator Pickles


     I love a good crisp deli pickle.  You know the kind.  They have a green skin and a pale white interior.  The have a snap when you bite into them and the garlicy brine is just right.  These are just like that!
