Orange Cranberry Butter


     Are you looking for a way to take your fall breads and rolls to the next level?  We have found your answer!  MiMi and I were tossing around ideas as to what would make the perfect fall butter for our Thanksgiving rolls.  We looked at a bunch of different recipes and none of them quite met our needs.  We wanted something easy to make with flavors that screamed fall.  We wanted it to be a little sweet, but not so sweet that it turned the roll into dessert rather than a side.  Boy did we ever find a great solution!  This butter will be right at home spread on a homemade roll (that recipe is coming Monday!) and nestled between your turkey and your cranberry sauce.

Easy Indian Corn Fudge - A Guest Post by MiMi


     It has become a new holiday tradition that we can't seem to get enough of.  It started with football fudge for Super Bowl Sunday.  That was such a hit that I was inspired to put a new twist on that recipe for Valentines Day, St. Patrick's Day, Mardi Gras and Easter.  Shortly before it was time to make fudge for the Fourth of July I came across another super easy fudge recipe and decided to give it a try.  I liked it too.  So here we are at Halloween and time to create again.  I saw a cute tri-colored sugar cookie recipe that you layer and slice to look like candy corn.  The thought that I could do the same thing with fudge triumphed my other ideas.  This would be fun to share at any of your fall holiday gatherings.

Cinnamon Pie Crust Cookies - A Guest Post by MiMi


     When I volunteered to make a pie for an occasion as special as a birthday, I figured I needed to do it up right.  I had been wanting to make a slab pie for a while.  The birthday boy wanted pumpkin pie.  Pumpkin slab pie it would be.  Then I decided to top it off with honeyed pecans.  Luckily I remembered that my husband's family loves whipped cream on their pumpkin pie.  I came up with a maple whipped cream to make it special.

Pumpkin Slab Pie - A Guest Post by MiMi



      I have been seeing slab pies around the internet quite a bit this fall.  I can't say I've ever eaten or made one before.  My brother-in-law, Steve, had a birthday last week and was asking for a pumpkin pie instead of a cake.  My mother-in-law has been crazy busy with other things so she was planning to buy him pies for his birthday dinner.  Since I have been wanting to make a slab pie I took this opportunity to create one.  I prefer not to use canned sweetened condensed or evaporated milk in my pumpkin pies if I can avoid it.  I also wanted to make a pie with brown sugar.  It is an unusual ingredient, but I think it adds so much to a pumpkin pie.  I found no recipe for a slab pie that fit my criteria.  That's okay.  I have fun creating new recipes and Carlee can share them on her blog.  That's a win win for us and a very special birthday treat for Steve.

Honeyed Pecans - A Guest Post by MiMi


     I came up with these to go with Steve's birthday Punkin' Slab Pie.  When grandma told me that he wanted a pumpkin pie I couldn't believe my ears.  Is this the same guy we helped crack pecans so he would make us a wonderful fresh pecan pie?  Ok, then grandma. I'll make him that pumpkin pie but we must top it with pecans.  I was going to make spiced pecans, but decided that I didn't want to take away from the spice combo in the pie.  Pecans, salt and honey sounded perfect.  I guess it tasted perfect too.  At least a couple of people said so.

Fall Apple Punch


     My first though for beverages for the apple shower was apple cider.  We have an orchard on the edge of town that makes THE BEST cider.  But, it isn't pasteurized and I wasn't sure if the mommies to be in attendance would want to drink it.  So, I made this apple juice punch instead.  I also made sure to have some hard ciders for those who wanted them.  I thought for sure the guys would have all of the ciders gone before the day was done.  They did drink some ciders, but they drank just as much punch!   It was as pretty as it was delicious!

Apple Cheddar Meatballs


    When trying to think of things to make for Lindsey and Johnny's shower, coming up with make-ahead savory appetizers was the hardest part.  I was sold on doing bacon wrapped apples until just a day or two before the shower.   Then I decided I didn't want both of my savory options to be bacon and I was already making the apple shaped bacon cheddar ranch cheese ball.  So, I called a game time audible and switched to sausage meatballs.  I knew these would be a hit because Lindsey used to make similar meatballs (without the apple) when we would have game nights at her house.  So, I went to work!

Apple Shaped Cheddar Bacon Ranch Cheese Ball


     Of course it was plenty easy to come up with all sorts of fun apple sweets for the apple themed shower, but it was a little harder to come up with savory ideas.  I actually had quite a few of them, but most would be better made and eaten while warm.  I wanted to be able to relax and enjoy the party too, so the more I could make ahead the better.  This cheese ball was perfect for that.  This was the only thing I made that didn't actually have any apple in it, but it looked like an apple so it was close enough!

No-Fail Caramel Sauce



      I just love a good caramel.  The chewy ones are delicious, but I love caramel sauce even more.  You get all of the rich flavor with no fear of losing a tooth!  I have made some great caramel sauces from white sugar.  I have also made some not great ones.  

Look at it wrong and it crystallizes on you. 

Move wrong and the milk curdles.

Southern Caramel Cake #TheCakeSliceBakers


     Welcome to my second The Cake Slice Bakers post!  The group picks a book each November and is given a choice of 4 recipes from the book each month to make.  This is the last month of baking Southern Living Cake Book.   So rather than picking from 4 recipes, the instruction was to bake any cake in the book.  This caramel cake was actually a choice a few months back, but I wasn't in the group yet.  I have been wanting to bake a caramel cake for a while now, so I went ahead and did it anyway.  Hopefully the other bakers aren't tired of the caramel cake already!

Cori's Bun in the Oven Shower

Apple Chips in the Oven


     What a fun weekend!   We hosted a small baby shower yesterday.  It was an "Apple of Their Eye" shower, so there were apples everywhere.  These apple chips will be needed for a few recipes that will be coming soon.  You can also make them to go on your salads (with some pecans and bleu cheese... yum!), or just for snacking.  Just go ahead and make some, you will be glad you did!

Maple Cream Cheese Frosting


    I was making some banana bread cookies for a gathering and they needed some frosting. After all, everything is better with frosting!   I didn't want any run of this mill frosting though.  I wanted something soft and creamy with a flavor that would stand on its own yet compliment the cookies.  So, I went to work. 

     The maple cream cheese frosting that was the result of my little brainstorm was a hit! It even had Matt singing its praises.

Whole Grain Banana Bread Cookies


    I love cookies and I love banana bread.  So, with my most recent batch of overly ripe bananas, I just knew I had to merge the two.  Have you  noticed I seem to have a lot of overripe bananas?  I might just do that on purpose!   These cookies turned out soft and moist like banana bread, but in a easy to grab and go cookie form.  Plus they are filled with fruit, whole wheat flour and oatmeal.  So they are practically a super food.  Of course a healthy dose of maple cream cheese frosting never hurt a thing!

     When Tara from Tara's Multicultural Table asked if I would like to be a part of a virtual baby shower for Lauren of Sew You Think You Can Cook, I jumped at the chance.   Then I heard that she is due in November and Thanksgiving is her favorite holiday, so we were going to do Thanksgiving themed recipes.  My mind really got going then!

Maple Browned Butter Glaze

     
     I absolutely love browned butter glaze, especially for my fall treats.  The browned butter adds such a warm flavor that compliments the spices of fall baked goods.  Want to know how to take to the next level?  Add maple syrup!  I knew a pumpkin skillet cinnamon roll was in order for the fall and what better to top it off than this deliciously sweet and flavorful golden glaze of goodness?

Velvety Maple Pumpkin Pie Baked Oatmeal


     Those of you who have been here a while know that Jax and I love our baked oatmeal.  I used to really enjoy a dense baked oatmeal, but lately we have been really into fluffier baked oatmeal.  Ever since we made the hot cocoa baked oatmeal for the first time, we have been hooked to recipes that end up with a consistency that is part pudding and part oatmeal.  I just knew that consistency would be perfect for this recipe.  It would have the creamy custard properties you love in a pumpkin pie with just enough oatmeal chew so you don't forget that is what you are eating after all.

Chicken Pasta Primavera Pie


        I am not exactly sure how long this recipe has been in the family, but I know it has been at least 20 years.  It has always been a favorite and it has always been my job to make.  See, I am the oldest of 6 kids.  MiMi was very good at making dinner for us, but she only had so much time to devote to dinner.  Luckily I have always loved to cook, so if a recipe called for more steps than she was willing to take she just had me do it.  But don't take that as a sign that this is hard to make, it really isn't!

     I don't know why, but pork just says fall to me.  There is something about it that seems perfect when the weather turns a little cooler.  I have had this idea in my head for a little while now, but it had been so hot that the timing didn't seem right.  It finally cooled down, so I through open the windows and got out a big hunk of pork loin!
