7 Minute Frosting


     I have been wanting to try 7 minute frosting for a while now.  I bought a hand mixer a few months back just to make this frosting!  In fact I have used the hand mixer for quite a few things, but never got around to the frosting.  Until now, that is!  Finally it got to make the frosting!

Oatmeal Creme Pie Bars

Hunk of Burnin' Love Rum Balls


     My boss's wife has a tradition of making rum balls each Christmas.  They are her signature item and they are delicious.  Some have a truffle center others have liqueur soaked cherry centers. She makes them in three strengths ranging from Kahlua or Cointreau to Bacardi 151.  They are always a hit at the company Christmas Party. Matt instantly fell in love with them.

Chimney Cakes - Mondays With MiMi



     Evidently it doesn't take very long for somebody to realize that I enjoy playing around with recipes.  Kristie invited her friend, Josh, to come to Quincy over Thanksgiving weekend.  He is a college student so I assumed he should be spoiled with food when he comes to visit.  We must have done all right because the next thing I know I was getting text messages from both Kristie and Josh about a Hungarian inspired cake.  I knew that he would be coming back over his Christmas break so I promised that I would try the recipe out for him.  I am so glad that I carried through on that promise.  I had never ever seen anything like this.  It kind of reminded me of curly fries in the way it was shaped.  At first bite, we realized that they are very much like a crispy cinnamon roll.  Next time I make them, I plan to make a vanilla icing dip to go with the special treat.

Individual Cranberry Cheese Balls


    When planning a baby shower for our friend we just knew there had to be cheese balls.  They are always one of her favorites.  The problem is, serving from a large cheese ball in a buffet line like that can hold things up.  So, we thought it would be fun to do them as individual cheese balls instead!  All our guests had to do was grab a pretzel stick or two and move on.  We served them with crackers on the side in case people would want to spread them over crackers.  However, that is not completely necessary.  These cheese balls have a fun mix of sweet and savory and are an unexpected addition to your menu.

Star-Spangled Banana Cake #TheCakeSliceBakers


     It seems like baking one cake from a choice of four each month would be easy.  I mean, the hardest part for me is deciding what to make so having a limited selection should make it easier.  But then I read about each and they all sound so good!  All of the recipes I've made from Maida Heatter's Cake Book have been great, so I knew I'd be happy no matter what I chose. I was really tempted to make the lemon loaf cake, but I did a loaf in November when I did the pumpkin gingerbread.  The bull's eye cheesecake looked like fun too, and I always love a good cheesecake.  But when I read the description of the frosting for this Star-Spangled Banana Cake, I knew I had to make this one.  I was excited to join this group so that I could push my boundaries a bit and I had never made a frosting like this.  Plus the idea of a four layer cake with a GALLON of fluffy frosting was definitely intriguing.

Deliciously Chewy Coconut Macaroons


      Pops and Matt really love coconut.  Most of the rest of the family doesn't share the same fondness, so they don't get to enjoy coconut treats very often.  So, I thought it would be fun to make them a special treat.  Of course, I like all things sweet so I was certainly going to share in the deliciousness.  As it turns out, our good friend Ro loves coconut and macaroons too.  So, they had plenty of help eating them.  Which is a really good thing, because Pops is "being good" so he wouldn't take any home and Matt somehow can eat one of something and be satisfied.  So, it would have played out that I would have eaten more than my fair share anyway.  So I was happy to have the help!

Jess's Tailgate Queso and 50 Ideas for the Big Game


     My sister-in-law Jess and her husband, Anthony are both proud Northwestern alumni.  They have a group of friends that tailgates at every home football game.  We try to join them at a game each year, though as the number of kiddos expands it gets a little more difficult.  The regular tailgaters plan who is bringing what.  There are a number of game day treats that have to be there.  This queso dip is a must-have.  A huge pot of it is set out with plenty of tortilla chips and people just dip into the communal queso pot.  It also gets slather on brats and burgers.  It is always a hit.

     Pops and I got married in November 28, 1981.  His side of the family hosted a bridal shower for me and made this very casserole.  I don't believe I have had it since, but think of it often.  Everybody really enjoyed it.  I enjoyed it enough to still remember it all of these years later.

Cheesy Tex-Mex Soup with Quesadilla Croutons


     This time of year I love soups and spice.  Either can take you from cold and sad to warm and cozy in a flash, so why not have a little of both?   This soup will tickle your taste buds and warm you from the inside out.  The quesadillas on top make it a little extra special.  As we all know, Matt is not a fan of soup for dinner.  However, it seems that if you top it with quesadillas, cheese and sour cream he doesn't complain to much!

Forgotten Torte


     After making a giant batch of vanilla bean creme brulee for  New Year's Eve, I found myself with another round of extra egg whites and cream.  I had just made a delicious raspberry cocoa pavlova, so I wanted to do something a little different this time.  This forgotten torte is more or less the same ingredients as the pavlova, but the texture and presentation is completely different.  It was so much fun to give this a try. I had only heard of the forgotten torte recently so it was exciting to make one come to be so quickly.

Buffalo Chicken Nachos


    It's that time of year again, the time when my brain starts thinking about hot wings, pulled pork, nachos and chili.  The big game is right around the corner and I am struggling to pick a menu.  I could go easy and pull out the hot dog roller.  A nacho bar sounds great.  Pulled pork on Hawaiian rolls is always good, but we did that last year.  We went a little overboard on the menu last year, so my main goal is to make a more reasonable amount of food.  We'll see if that happens ;-)

Strawberry Shortcakepien - Mondays With MiMi



     Carlee's brother, K.C. has been talking about making a turducken for several years now.  He decided this was the year to give it a try.  Carlee posted some pictures of the process.  I will tell you that it was a major hit with our family.  After we chose the weekend Carlee and I decided I should make a piecaken to be the perfect ending for this special meal.   Last year, I made a spice cake with a pumpkin pie in the middle.  Unfortunately, that was before Carlee started this blog so we have no recipe for that.  Strawberry shortcake is one of our favorite desserts so I thought it would be fun to make a strawberry pie buried in a shortcake.  Mine did not turn out perfectly, but I will put the corrections that I would make in the directions.

Sprinkle Filled Birthday Ooey Gooey Butter Cake


     Ooey gooey butter cake has always been a family favorite.  How could it not be? It is so easy and just so darn delicious.  Some day I plan on baking one from scratch rather than starting with a mix, but this was not that day.  Besides, I planned on pumping this one full of sprinkles to celebrate a coworker's birthday, so I thought it would be fun to start with a sprinkle filled cake mix.  After all sprinkles are perfect for a party and more sprinkles are better!

Bacon Fig Dippers for Gooey Brie or Camembert


     It is Foodie Extravaganza day!  I am so sad that I didn't participate the last couple of months.  The theme for November was pickles.  Now, I love pickles.  But I had already shared the two recipes my cousin Cori makes this year.  Her refrigerator pickles and gone in a second pickles are both amazing!  So with no family favorite pickle recipes to share and a pretty full slate of other things to post, I opted out.  Then there was the December fruitcake theme.  I had all of my ingredients bought and a recipe picked, but didn't have time to get it all baked before the deadline.  You didn't miss out on anything though, I baked it a few weeks later and it didn't turn out as I envisioned.  It wouldn't have been the kind of thing I would be proud to tell you about anyway.  So I was determined to make something for January.

Our Prime Rib Feast

     Here is how my crazy family works.  As my brother K.C. is preparing The Great Turducken Feast of 2015, we got to planning the next feast.  I had bought a bottle of saffron oil and was looking forward to making a seafood paella.  Somehow we went from discussing that to prime rib.  Next thing you know, we were planning the feast.  There had to be shrimp cocktail, oysters, prime rib.
