How do you make gooey butter cake even more fun? Add sprinkles, of course! These sprinkle filled gooey butter bars are sure to become a new favorite.

It is perfect as a birthday treat for people who don’t like traditional birthday cakes. Or make it for a party.

You can change up the colors of sprinkles to match the theme or even use holiday colored sprinkles for Christmas, 4th of July, and more.

This cake can really be made with any flavor cake mix you would like. Of course, starting with a funfetti or confetti style cake mix makes it easier.

You can also use a while or yellow cake mix and add some sprinkles. Or try out chocolate, lemon, strawberry, or really whatever you want!

What is Gooey Butter Cake?

Gooey butter cake is a yummy dessert that originated in St Louis, MO around the 1930s.

There’s a cake layer on the bottom and a soft cream cheese layer on top that earns it the gooey name. So you get the effect of a soft crust topped with a cheesecake like topping.

They’re traditionally vanilla flavored, but there are so many tasty ways to switch it up. Usually we play with the flavors, but today we are adding sprinkles to make the traditional vanilla version more fun!

Making Gooey Butter Cake

Gooey butter cakes are so easy to make.  Just mix the cake mix with butter and eggs.

Press it into a greased 9×13-inch pan to form a crust. It should take a few minutes to make the crust from start to finish.  

Then, stir together vanilla, cream cheese, eggs, and powdered sugar. Pour over the crust and spread to make an even layer.

Add more sprinkles, then just a few more for good measure. Then bake it up.

Let it cool, the refrigerate it to let it finish setting up. Cut into squares and enjoy.

You will get the best looking pieces if you cut them cold, but they will be gooier if you enjoy them at room temperature.

My little sister Chloe is the master of warming microwave desserts in the  microwave.  She warms them all up before eating it.

I wasn’t sure about warm ooey gooey cake, but it was pretty darn good.  So feel free to warm a piece to try… or use this as a license to not let your cake cool completely before you dig in.  I’m not judging!

The gooey butter cake is done when the very center isn’t jiggly anymore. Just open the oven and give the pan a little shake. If the center is mostly set, it’s time to take it out of the oven.

Gooey butter bars stay good at room temperature for up to 4 days, or a week in the refrigerator. Make sure to cover it tightly to keep it from drying out.

Can You Freeze Gooey Butter Cake?

Gooey butter cake can be frozen for up to 3 months. Freeze individual slices if you don’t want to have to defrost the whole thing later.

Ingredients
 

Crust

  • 1 box cake mix
  • 2 large eggs
  • ½ cup butter melted
  • 2 Tablespoons Jimmies or large sprinkles

Filling

  • 8 oz cream cheese softened
  • 2 large eggs divided
  • cups powdered sugar
  • 1 teaspoon vanilla extract
  • cup jimmies or large sprinkles
Makes: 9 x 13inch rectangle

Instructions
 

  • Preheat oven to 350°F
  • Stir together cake mix, eggs, and melted butter. Fold in sprinkles until evenly distributed. Press into a 9×13-inch cake pan.
    1 box cake mix, 2 large eggs, ½ cup butter, 2 Tablespoons Jimmies or large sprinkles
  • In a medium mixing bowl, beat cream cheese until smooth.
    8 oz cream cheese
  • Add eggs, powdered sugar, and vanilla. Mix until smooth. Spread over crust in pan.
    2 large eggs, 2½ cups powdered sugar, 1 teaspoon vanilla extract
  • Distribute sprinkles over the filling.
    ⅓ cup jimmies or large sprinkles
  • Bake for 25-30 minutes, or until set. Let cool before serving.

Notes

You can use a funfetti cake mix for the most sprinkles. Or use a white, or yellow cake mix. You can also experiment with other flavors if you would like.
