Cherry Quinoa Salad


     So here is the story with this one.  I was working on some recipes for our Easter brunch.  I knew I wanted a salad on the menu and the Caprese Quinoa Salad was a hit last summer.  Of course there are no decent tomatoes this time of year so it wouldn't be that easy.  My favorite green salads are full of fruit, nuts and cheese.  So it made sense I would go that route on this salad as well.



     Dried cherries, feta and pistachios would make a great salad!  So, I went to work cooking and cooling some quinoa.  I chopped up the cherries, stirred in some fresh herbs and made a quick dressing.  I served it up and Matt's first words were this salad tastes like Christmas!  Not the worst thing in the world, Christmas food is good food.  However, "tastes like Christmas"  was certainly not what I was going for on my Easter menu!  So, I am not serving this at Easter but will certainly be making it again. (Maybe at Christmas!)



Cherry Quinoa Salad

Ingredients:

1 cup (uncooked) quinoa
1/2 cup pistachios
1 cup dried cherries, roughly chopped
1 cup feta, crumbled
1/4 cup fresh herbs (use a mix of what you like - chives, basil, mint)
3/4 cup plain yogurt
1 T honey
2 T balsamic vinegar (cherry balsamic if you have it!)

  1.  Cook the quinoa according to the package directions.  Allow to cool and then chill in the refrigerator. 
  2. Toast the pistachios.
  3. Mix together the yogurt, honey and vinegar.  
  4. Stir together the chilled quinoa, cherries, feta and herbs.  Toss with dressing. 
  5. Sprinkle with pistachios and serve!

  14. I have read and reread your recipe. Step 2 says to toast the pistachios; however, the ingredients list does not give pistachios or an amount for them. Could you please clarify this for me? Thanks! It looks awesome!

    1. I am so sorry about that! I will add it to the ingredient list. I toasted a half cup of pistachios and sprinkled them on top. Pecans or walnuts would be good too!
