If you have followed Carlee for long, you may have guessed that we are never at a shortage for a little something sweet after dinner. I always try to make a special dessert for our weekly family dinners. On this particular week I was planning to serve this honey cinnamon crunch ice cream. I saw a recipe fr cinnamun crunch ice cream on SugarHero, but it was a cooked custard type ice cream. I usually try to avoid cooked ice cream recipes so I came up with my own base and love the flavor of cinnamon in the ice cream. It tastes very similar to the churro ice cream I made last year for Cinco de Mayo. The cinnamon crunch makes this really different in a really good way.
I got this ice cream into the freezer when Carlee called and asked if she could bring dessert to our family dinner. She had a recipe that she was really excited to make and I didn't have the heart to tell her that I had already made and ice cream that would not go well with what she was bringing. I hurried up and made some vanilla ice cream and we had another great ending to our meal.
This happened several weeks ago so I sent most of it back to school with Chloe. Pops and I try not to east desserts through the week so Chloe was happy to take this temptation away from us. I saved enough to take pictures to share with you.
Honey Cinnamon Crunch Ice Cream
2 1/2 cups whole milk
Pinch of salt
1/3 cup honey
1/3 cup brown sugar
1 T. vanilla
1 T. cinnamon
For the crunchies:
2/3 cup cinnamon chips
1/4 teaspoon coconut oil
1 cup crispy rice cereal
To make the cinnamon crunchies:
Microwave the cinnamon chips for 25 seconds and stir until melted. Heat them again in short intervals if necessary until it is smooth. Add the coconut oil and stir well.
Pour the melted cinnamon chips over the crispy rice cereal and stir until well coated.
Spoon this mixture onto a baking sheet that has been lined with waxed paper and spread into a thin layer. Refrigerate until your ice cream is done churning.
To make ice cream:
To make the ice cream blend together the milk, salt, honey, brown sugar, vanilla and cinnamon. Stir in the cream. It had to be bowl of your ice cream churn and follow your manufacturers directions
Break the crunchies into small pieces and stir into the ice cream.
Put into a freezer safe container with a cover and freeze until firm.
