I served it over lettuce wedges with tomatoes, bacon and radish slices for a fun wedge salad.
For those of you who missed Monday's post, MiMi made a family dinner completely from one of her favorite cookbooks. Every part of the meal came from the following book. MiMi loves the book and highly recommends it!
Thousand Island Dressing
2 cups mayonnaise
2 hard boiled eggs, chopped
4 ounces of chili sauce (I will make it with Sriracha next time- we like a little heat)
4 ounces sweet pickle relish
1 tsp minced onion (I used dehydrated minced onions)
2 1/2 ounces finely chopped pimento
- Mix all ingredients well and refrigerate overnight. You can thin with a bit of milk if needed before serving.
