Thousand Island Dressing - Part 3 in MiMi's Cook the Book Series

 
   When I saw this recipe for Thousand Island Dressing I knew I had to try it.  I grew up making this dressing with mayonnaise, sweet pickle relish and ketchup.  That was always my favorite salad dressing.  Well, that changed with this recipe.  We really enjoyed this salad dressing. I cut Christy Jordan's recipe in half and we still had too much.  Pops was happy about that because he got to enjoy it several more times. We have also made it again already, he really likes this!
    I served it over lettuce wedges with tomatoes, bacon and radish slices for a fun wedge salad.

For those of you who missed Monday's post, MiMi made a family dinner completely from one of her favorite cookbooks.  Every part of the meal came from the following book.  MiMi loves the book and highly recommends it!


Thousand Island Dressing

Ingredients:

2 cups mayonnaise
2 hard boiled eggs, chopped
4 ounces of chili sauce (I will make it with Sriracha next time- we like a little heat)
4 ounces sweet pickle relish
1 tsp minced onion (I used dehydrated minced onions)
2 1/2 ounces finely chopped pimento

  1. Mix all ingredients well and refrigerate overnight.  You can thin with a bit of milk if needed before serving.

  3. I like this dressing too. We always put a teaspoon of fresh horseradish in it. The chili sauce has horseradish in it I think. Thanks for the reminder. This will be good for summer salads.

  4. I've never made homemade thousand island. There's some really good stuff in this dressing, definitely going to try it! It sounds like it would be perfect for my hubby!

    1. Thank you! We haven't made wedge salads in ages and now all of the sudden we have been on a kick. They are so easy and we have just been setting out a variety of toppings for a wedge salad bar. So fun!
