Slow Cooker Chicken Parmesan Sandwiches


    Whew!  We are making it through the week.  Sometimes short weeks are the longest.  Maybe I am easily spoiled or maybe I am looking forward to the weekend.  It will be another busy one.  My Maw-Maw and Paw-Paw will be in town, so there are plenty of activities planned.  We are also celebrating my littlest sister's birthday.  She has requested a Brownie Cheesecake with Mocha Whipped Cream for her birthday cake.  I am excited to have the chance to make it again.  I think I might make it in a round pan this time and maybe make a bigger size? Because more cheesecake always seems like a good idea!



    With all of the road time I've had for work lately, I have been relying on the slow cooker a bit more than usual.  That way dinner is more or less ready when I get home.  These sandwiches were a delicious result of looking around the kitchen to see what was within arm's reach before I headed for the door.  It took a few minutes to put the sandwiches together once I got home, but I was able to put together a salad as the cheese melted in the oven.  Dinner was ready within 20 minutes of me getting home and it was delicious!


      Every time we have a good slow cooker dinner like this, it makes me wonder why I don't use it more often.  I have a few ideas I want to try out soon.  Hopefully they'll work out and I can share them with you.  What are your favorite things to cook in the slow cooker?



Slow Cooker Chicken Parmesan Sandwiches
makes 8 sandwiches

Ingredients:

2-3 lb skinless, boneless chicken breasts
24 oz jar of your favorite spaghetti sauce
1/2 tsp garlic powder
1/2 tsp oregano
salt and pepper
1 pack of 8 hamburger buns
1 T butter
1/2 tsp garlic salt
8 slices provolone


  1. Season chicken breasts with salt and pepper and place in slow cooker. Pour sauce over chicken and sprinkle with garlic powder and oregano. Cook on low for 6-8 hours or high for 4.
  2. Preheat oven to 350 F.  Place open buns, cut side up on a baking sheet.  Melt butter and stir in garlic salt.  Brush over bun faces.  Place in oven and cook until lightly toasted, 5-10 minutes.
  3. Shred chicken with a couple of forks.  Then mound on top of the bottom halves of the burger buns.  Top with a slice of cheese and place back in the oven to melt the cheese, this should take only a couple of more minutes. 
  4. Dinner is ready!

  1. I can't tell you how much I love this recipe and that I can't wait to try it! Chicken Parm is near the top of my list of favorite foods, and anytime I can make something in the slow cooker, I'm all for it. I agree with you about your FaceBook comment, we often times think the slow cooker is best in the winter and that's so not true. I love using it in the summer, it helps keep the house cool by not turning on the oven :-)

    1. It really is great for the summer. I have some honey sesame chicken going in the slow cooker now. Fingers crossed it turns out like I have envisioned! I hope you love the chicken parm sandwiches as much as we do!

  2. Hi Carlee, I love using the slow cooker to make dinner! I usually do soups. I have made chicken cacciatore in the crock pot too. I will try this out as it sounds so easy to make!
