Monster Cookie Dip - Mondays with MiMi


Carlee and Matt hosted a Big Game Party and invited family and friends.  As with most parties I got busy thinking about what I could make to bring.  I got this idea from a food blog titled The Girl Who Ate Everything. I pretty much followed what she did, but I added a little extra brown sugar and vanilla knowing that's the way my family would like it.  Carlee had so many wonderful things to eat that everybody was pretty full by the time we put the sweets out.  Most of her guests were curious so they put a little on their plate so they could try it.  I happened to be sitting in the dining room where the food was being served.  It got to be funny watching those that thought they would just want a little taste come back and fill their plates.  This was quick and easy to make and something that we had never tried before, but will certainly enjoy again!

Throwback Thursday #27

Hey all! Welcome back to Throwback Thursday, we are so glad you are here. What a great mix of links last week, it's always so hard to choose our faves! How do you all like the new layout? It's more simple and sleek, just what we are aiming for. 

Baked Barbacoa Chimichangas


     It is finally time for this dinner to come together.  After the beans cooked all night and the meat cooked all day I could not wait to see if it turned out as good as I had hoped. Of course anything with some melty cheese and a tortilla that is just the right mix of crisp and soft makes it hard to go wrong.  But this took it to the next level.  I was really happy with all of the flavor in the barbacoa.  The beans were a great spreading consistency and the cheese was well... cheese! Yum!

    I don't know if you've noticed, but there are a few things we are guaranteed to love.

  1. Anything that is going to be wrapped in a tortilla.
  2. Anything that is easy to eat after a busy work day
  3. Anything that is braised meat
  4. Anything that is full of flavor!

Slow Cooker Refried Beans


     We just love our Mexican inspired food.  I am sure most of what we eat is really Tex-Mex or maybe more likely Midwest-Mex, but whatever it is we love it.  Slap it in a tortilla and we are likely to eat it.  Sprinkle it over tortilla chips and douse it in melty cheese... even better!

Chocolate Chip Cookie Dough Cheesecake - Mondays with MiMi


     Boy oh boy did that fettuccine alfredo recipe bring back memories.  The subject of the special chocolate chip cookie dough cheesecake recipe came up.  For special dinners, Carlee often requested that I make the alfredo, a salad with Aunt Ellen's Garlic Parmesan Dressing and this cheesecake.  Her friends enjoyed this before several formal dances too.

Coffee and Cream Sponge Cake #TheCakeSliceBakers


     It's that time of month again, cake time!  This is my 6th installment in my Cake Slice Bakers tenure and I think this one might be my favorite so far.  It's hard to say that as a definitive because they have all had their merit and a couple have been REALLY DARN GOOD!  Like the cinnamon buns.  The gooey, ooey, soft and scrumptious potato dough cinnamon buns. Oh, the cinnamon buns. Those were good too.  But this cake is something entirely different altogether and was an impressive dessert for a more adult pallet.

Wholesome Banana Rice Pudding


      Somehow it happened that we had one lone overripe banana in the house.  Usually I try to make sure we have a few at a time so I can make Di's Banana Cake or these delicious Banana Oat Muffins. I just made a batch of our favorite Whole Grain Banana Yogurt Pancakes for Fat Tuesday, so those were out.  What the heck was I going to do with one banana?! Then genius struck!

Seafood and Chorizo Paella and a look into our Valentine's Feast



     This paella was over the top, almost literally!  It was so loaded with goodness that it almost escaped the pan.  Luckily we were able to keep it in check and scarf it down.  If you are in the mood for seafood and full flavor, this is the dish for you!

Pink Velvet Ice Cream with Cream Cheese Icing Swirl - Mondays with MiMi


     With Valentine's Day approaching it appeared that red velvet cake was all over the internet.  I suddenly came across a recipe from the Cookie Rookie for a red velvet cake ice cream.  Since I love creating new ice cream recipes in my kitchen, I knew this would be one I just had to try.  I have been experimenting with a new ice cream base so I changed up her recipe a little to work for me.  I also decided I liked the idea of making it pink.  I added a little more cocoa and a neon pink food color gel.  This ice cream was a great success.  Tank goodness I have a family full of willing taste testers.

Valentine's Day Peanut Butter Blossoms


     It's all hearts and chocolates at Valentine's Day!  So, Jax and I had a date in the kitchen last night.  We wanted to make treats for his friends at daycare.  We love to cook together and I want to take advantage of making treats before he gets to school and homemade treats are frowned upon.  Last year he wasn't quite old enough to help much, so I made sour cream cutout cookies (and a chocolate version too!) for his Valentines.  So this year we played to his strengths and made a delicious treat to share with his friends.

Grandma's Napa Salad


     I can still remember the first time I had this salad.  We went over to my grandma's house for a holiday dinner.  She was just pulling the toasted ramen out of the oven and it smelled wonderful.  I always loved holidays and grandma and grandpa's, and I still do. So I am sure that adds to the warm and fuzzy feelings I get every time I make this salad.

Chicken Paprikash - Mondays with MiMi


    MiMi definitely rose to Josh's challenge when she made the Hungarian Chimney Cakes.  But if she was going to have us over for a Hungarian inspired dessert, she needed to have dinner too.  She likes to make some of her favorite recipes for the blog and has been fun writing posts for the blog as well.  I have been trying to get a new series of Mondays with MiMi posts going.  Of course I have had to break in for a few fun posts that I worked on with some other bloggers and were meant to go live on specific days.  So the Valetine's Day Ideas and the 50 Ideas for the Big Game posts interrupted the flow.  Hopefully we can get this going as a weekly post and hopefully MiMi can keep up!!  Anway, I will turn it back over to MiMi now.

Chloe's Naan


     Apparently my sister Chloe has learned about more than engineering while she has been away at school.  The Chloe I knew left loving pancakes, Oreo balls, and sweet potatoes with marshmallows.  Throw in a batch of guacamole every once in a while and she was a happy camper.

Homegrown Blackberry Pie #FoodieExtravaganza


     When we moved into our house a few years ago, we knew we were getting a couple of bonuses to go along with the house.  The first was a strawberry patch and the second was a stand of thornless blackberries.  We moved in September though, so we had no idea just how fruitful they would be.  The first year we had soooo many strawberries.  We ate our fill and had plenty for the freezer.  The second year we had a little munchkin in the spring time that was eating the strawberries as quickly as we could pick them.  Now we tend to use them up as we go, but occasionally have a few extra for the freezer.  They are great for winter time smoothies, purees and sauces.

Cottage Cheese Stuffed Crepes for La Chandeleur



      Hooray! It's crepe day!  In full disclosure, I have never celebrated crepe day.  But when Audrey from That Recipe mentioned it a few days back, I took notice.  It would be the perfect time to share this fun recipe for cottage cheese stuffed crepes.  Audrey mentioned a little bit about the holiday in her post and a little more background can be found here.  It is fun to read about the superstitions.  I had better practice flipping crepes with my left hand! In the end, I find any excuse to eat crepes must be a good one!

     Truth time: My husband has never taken me out for Valentine's Day.  I know, gasp!  The best part is I couldn't be happier about it.  We almost never go out to eat, so I don't want to blow such a special occasion as a dinner out with long wait lines and no reservations to be found.  We would both much rather celebrate at home and perhaps schedule a date night on a less predictable evening.
