Banana Sheet Cake with Salted Caramel Cream Cheese Frosting


   I know, I know... always with the banana recipes.  You guys, I can't help it!  I am not sure if you are thanking me or cursing me, so I choose to think you are loving this crazy banana baked good roller coaster.  Here's what happened.  Jax went on a banana bender.  He HAD to have one every night before bed for a couple of weeks running.  Our supply was dwindling quickly, so I bought another bunch and then the bedtime banana ritual stopped as quickly as it started.  You never know with this kid.  So the banana sat. And ripened. And ripened. And sat.  Until there was only one thing to do, BAKE! Boo hoo!

Triple Peanut Butter Cookies #SundaySupper


      I just love a party!  Any excuse to get everyone together and have a good meal is a perfect one for me.  This time of year it is especially fun to have all of our friends and family over.  We love playing yard games and chasing little ones around outside.  We are able to invite so many more people and still have plenty of elbow room.  Plus, I love the casual nature of a good outdoor BBQ.  So I can't wait to see what everyone is sharing this week for Sunday Supper.  What a fun theme, picked by T.R. Vanilla Ice Cream - The Grand Finale of MiMi's Cook the Book Dinner


    For the grand finale of our Christy Jordan's Southern Plate meal I made homemade ice cream.  Christy says her grandmama and granddaddy made homemade ice cream when their strawberries started coming in, and there was nothing like it.  That's as far as I had to read before I knew that I had to try this recipe.  It calls for six pasteurized eggs. I get eggs from my hens and don't worry about eating them raw.  I went online and found that there are recipes that you can pasteurize eggs your self if you cannot find pasteurized eggs at the store.  I tried one of them and liked the way it works.  This is a quick and easy recipe for a very tasty vanilla ice cream.

Tea Cake Cookies - A Good Family Dinner Needs a Dessert!


     It has been fun sharing our Southern Plate inspired meal with you.  All of our family dinners end up with some kind of dessert.  There were two recipes I wanted to try in the spring chapter of Christy Jordan's cookbook.  Mama Reed's tea cakes sounded like something we should definitely try.  She describes them as tender little cake that is soft and pillowy with just a touch of sweetness.  I chose to add the simple icing that is offered as an option and am glad that I did.  Without the icing these would not have been sweet enough for our liking.

Thousand Island Dressing - Part 3 in MiMi's Cook the Book Series

 
   When I saw this recipe for Thousand Island Dressing I knew I had to try it.  I grew up making this dressing with mayonnaise, sweet pickle relish and ketchup.  That was always my favorite salad dressing.  Well, that changed with this recipe.  We really enjoyed this salad dressing. I cut Christy Jordan's recipe in half and we still had too much.  Pops was happy about that because he got to enjoy it several more times. We have also made it again already, he really likes this!
    I served it over lettuce wedges with tomatoes, bacon and radish slices for a fun wedge salad.

Daddy's Rise-and-Shine Biscuits - Part Two of MiMi's Cook the Book Series


     In my mind, every good southern meal should either have biscuits or cornbread.  Christy Jordan included her dad's recipe for biscuits so I chose to make them as part of our meal.  I have a favorite biscuit recipe so it is hard for me to try a different one.  I'm glad I did.  This is made differently than I am sued to which made it a lot of fun to prepare.  It seems most biscuit recipes call for very cold butter.  This one uses a softened butter which made it very easy to incorporate the flour into it.

Kathy's Country Casserole - Mondays With MiMi


     I had so much fun creating our family meal all out of the Loveless Cafe cookbook shortly after I purchased it that I decided I would make cookbook inspired meals more often.  I did this for a recent family dinner and had a lot of fun again.  I was surprised when I looked back to find out when Carlee posted the first cookbook meal that it took place last June. I can't believe it has taken me almost a year to do it again.  Hopefully it won't take me this long with my 3rd cookbook inspired meal.  My cookbooks are very special to me and I love having a reason to go through them over and over again.

Grilled Cantaloupe Salad with Queso Fresco and Herbs #SundaySupper


     Woohoo, good weather is finally here.  We have had a really interesting spring, but it seems like grilling season is in full swing!  I love grilling this time of year.  It is warm enough to have fun while you are out doing it.  There is plenty to be done in the garden and little man is having the best time spending as much time as he can outdoors.  There gets to be that point in the summer where it is so hot that standing over the grill sounds a bit tortourous and then grilling season comes back around in the fall.  Don't get me wrong, we have been known to grill year round and in all sorts of weather.  But there are a few choice months each spring and fall when it is so much more enjoyable than the rest of the year.

Marmalade Gingerbread Loaf


     It finally happened!  I made a cake for The Cake Slice Bakers that was just... meh.  I mean, it was bound to happen eventually, right?  The worst part is that it is probably mostly my own darn fault.  But such is life.  I was REALLY tempted to make one of the other cakes, or even make this one again so I could give you a more glowing review today.  Then I got busy with Jax's Pirate Party and just life in general and I decided that in real life not everything knocks your socks off anyway and it is ok to post that I didn't love something every once in a while.

    MiMi made a lot of cute birthday cakes for us over the years.  Of course most of the cute ones she made for me I only remember through pictures.  But as the oldest of 6 kids, there were plenty of little ones around to make cute cakes for throughout a good portion of my life.  My littlest sister, Chloe had some cute ones that I can remember.  But the favorite cake my mom made was a treasure chest cake.  She found the idea in a Family Fun magazine, and if I remember correctly it made an appearance at more than one birthday.  It was always a hit.

     My little monkey had a birthday!  He had a monkey lovie that he needed to sleep for the longest time.  He accidentally left it at MiMi and Pops once and it caused dad to make a panicked late night run to track him down.  Then we went through a phase where it even had to go to daycare with him.  We accidentally left him there once too.  Some of the older kids hid him while Jax was out of the room.  He came home without him.  After some tears, he finally went to sleep.  Ever since, monkey doesn't leave the living room.  We don't want to risk leaving him anywhere, even upstairs apparently!

Banana Cupcakes


     It's time to clue you in on my new favorite time of year.... birthday time!  The little man has always been fun to plan parties for.  Starting with the gender reveal and going through his last birthday, they have all been great.  This birthday was even more fun than normal though because he was so excited about it.  All of the anticipation and watching him get excited about each little thing made it that much better.

 What a fun couple of days!  Our little pirate has had one heck of a birthday weekend.  It is late and I am tired, so I will keep it brief for now.  I am sure I'll come back in a couple of days and clean up some pictures and tell you more about the festivities.  In the mean time, I know there are far flung friends and family who want to know how little man's birthday went.

Quick Oatmeal and Chocolate Chip Sourdough Muffins

These muffins are a delicious and nutritious way to start your day! They are quick, easy and full of oatmeal and whole wheat goodness yet they are soft and yummy. So good!


     Can you tell how famously Bertha and I have been getting along?  We have been having the best time.  We loved the Oatmeal Raisin Sourdough Muffins so much, that I couldn't help but to switch them up and make a new version.  I gave away half of that first batch, but Jax and I had the rest of them gone in a couple of days.  We each had one for breakfast and shared another for snack two days in a row.  Then he wanted more muffins, more muffins it was!

Whole Wheat Sourdough Sandwich Bread


    Ever since MiMi had a taste of my first sourdough boule, she has been begging for some of my starter.  Bertha and I were off to such a great start and MiMi wanted in on the friendship.  But sometimes good things come to those who wait.  I wanted to get a good feel for how to take care of Bertha before I gave some of her away.  That way when MiMi had questions, I had a little bit of an idea how to answer.  Plus the waiting just made her want it more!

Italian Lemon Bundt Cake - Mondays With MiMi


    We recently made  Maw-Maw's Italian Braciole for our family dinner. Since we had an Italian inspired dinner I felt we should have Italian all of the way through dessert.  I found a recipe for lemon Italian ice that I decided to make, but felt like baking too.  That's when I found Lemon Pound Cake on My Recipe Confessions. I changed it up just a little bit and the results were wonderful.

Croque Madame Pizza



    All of this brunch week talk has really made my mind swirl with possibilities.  We are a family of egg eaters.  I almost never go to the grocery store without picking some up.  We also buy a couple dozen fresh eggs at a time from my cousin.  Add to that a delivery of eggs every so often from my father-in-law and we are always well stocked.  No a single one goes to waste.  Jax still loves his "eggs in a pan"  which is his code for scrambled eggs with cheese.  We boil eggs a dozen at a time.  Matt eats one almost every day and Jax enjoys making his avocado egg salad.  But brunch week and Mother's day have me thinking more about egg-spanding our egg repertoire.
