Spaghetti and Meatball Casserole #SundaySupper

     On top of spaghetti, all covered with cheese.  I lost my poor meatball, when somebody sneezed.... This week the Sunday Supper gang is hosted by Ellen from Family Around the Table and we are celebrating childhood favorites.  Of course spaghetti and meatballs is one of those foods that makes you feel like a kid again.  There is something so fun about long noodles covered in sauce and cheese.  Plus there is a satisfaction that comes with taking a bite out of a meatball.   But I'll let you in on a little secret.  (Shhhhh!)  As a parent to a toddler, spaghetti and meatballs are not quite as much fun.

Falafel Waffles


      This past week has been so much fun.  I love all of the lemon, yogurt and chickpeas we have been eating.  And then there's the homemade pita.  Mmmmmmm, so many homemade pita!   While we were at it, I figured this would be the perfect time to venture a little bit farther on our international culinary tour.  This recipes uses a lot of those same flavors but is a bit more Middle Eastern in nature.  Maybe it is Middle Easter/Midwest fusion?!  Either way, ever since I read the description of Waffled Falafel Sandwiches on Food Lust People Love, I have been interested to give them a try.  I bought a bag of dried chickpeas a while back, but had never got around to doing anything with them.  This seemed like the perfect chance to use them before they turned permanently into pea gravel!

Yogurt and Tahini Sauce

     Our second batch of pita required a second sauce!  If the original batch of homemade pita had homemade hummus for dipping, the sourdough pita deserved something too.  I wanted something that could be drizzled over some falafel, would be good with cucumbers and tomatoes and would be a cool and creamy finish to wrapping all of that in a pita.  So this yogurt tahini sauce was born!

     The first thing MiMi asked when she saw that I made some homemade pita was "is that sourdough?"  It wasn't.  But it seemed like it would be a perfect use for sourdough.  It was so fun and easy to make that I figured I would give it another go.  So, I know it is my second pita recipe this week... but we ate them both within a week, so I figured it was ok to share them within a week as well!

     This is one of those simple recipes that it almost seems silly to share.  But it is a good one, and it seems MiMi and I both come here to find recipes because it is so much easier that digging them up out of recipe boxes or remembering which book you found it in.  So I am putting it here as much for us as I am for you.  But you can certainly make it too! ;-)

Low Fat Tzatziki Style Orzo Salad


     Our Greek week would not be complete without something Tzatzkiki. I mean the cool creamy cucumber and yogurt sauce it what really makes a gyro.  I love it when they really pile it on there.  So I knew I had to make something like that for our Greek feast.  The thing is, I didn't really want it as a sauce or dip.  I wanted it to be it's own thing.  And that's when it hit me.  It would make a perfect pasta salad!

Lemon and Yogurt Marinated Grilled Chicken


      This chicken is really lovely!  It comes together super easily and the lemon and yogurt really make for juicy, tender and delicious chicken.  This was Matt's favorite part of the Greek inspired feast, I would guess.  It would be hard for me to pick between this and the pita bread (Hello, I'm Carlee and I'm a carbaholic).  He loves grilling anyway and really seems to like it even more when I come up with new marinades to try.  The char siu chicken we made for the poultry grill-off  has inspired him.  We still need to make that chicken again so we can get pictures and write a post... and he is already asking for this chicken again too.  Our "to make" list is always longer than our time to make it!

Delicious Semi-Whole Wheat Pita Flatbreads


     Happy Monday morning to you!  I hope your weekend was lovely.  Ours was certainly a good one.  Somehow they are always busy, but I might as well accept that and move on right?  Luckily it was full of lots of family and plenty of good food.  We (and by "we" I definitely mean I) decided to have a Greek themed dinner.  Luckily my husband is happy to play along with these things.  His job was to light the grill and cook the meat I gave to him... then eat everything placed in front of him.  Two jobs he is always happy to do!   So, I thought I would share our Greek feast with you.  It just so happens that it pretty easily turned into a week worth of posts, so welcome to Greek Week!

Amazing Chanterelle Tart with Ricotta, Rosemary and a Phyllo Crust


     The best thing happened the other day.  The chanterelle fairy showed up out of nowhere!  It's true.  (Kind of at least!)  My father-in-law stumbled upon a couple of large patches of chantarelles on their land last year.  He did a lot of research to determine if what he had found was edible or not.  Those darn mushrooms are always a bit scary that way.  Even after he determined they were chantarelles, he still started with just a small taste the first day.  He said he read if you misidentified them, it probably wouldn't kill you but might make you wish they had... so that first bite came with some trepidation.  When that bite didn't send him running for the hills, they went for it! And thank goodness they did.

No Bake Chocolate Cheesecake


     Sometimes you want something sweet.  Ok, I want something sweet all of the time.  But sometimes you you have to control yourself. Unfortunately.  It is what it is, we don't have to like it.  Anyway, during the summer it is nice to have some treats that are easy to make and don't require the oven.  This recipe only add 1/2 cup of sugar as well.  I am certainly not going to pretend it is holy. Or light. Or anything but delicious!  But I did make this as a lower sugar option.  My Paw-Paw is watching his sugar intake.  So when I made my sister the Chocolate Brownie Cheesecake With Mocha Whipped Cream that she requested for her birthday, I knew it would be nice to make something a little less full of sugar for Paw-Paw.

Chocolate Brownie Cheesecake w/ Mocha Whipped Cream


    Do you know what today is?  It's Cake Slice Day!  It is so fun to have an excuse to bake something a little extra special once a month and share it with my cake baking friends!  We have been baking our way through Maida Heatter's Cakes since November.  Each month we are given four recipes to choose from and we each bake one.  Usually it is a surprise what everyone else baked, but there has been a little cheating on that this month! ;-)  In the end, that only ends up being a win for you guys as there is a great chance you will get to see them all!  I love the book, but there are no pictures and I have no imagination so I love seeing what everyone made!

Mini Zucchini Loaves from Seattle


    Guess what day it is.  It's Cake Slice Day again!  We are coming close to the end of baking our way through Maida Heatter's Cakes. And I think you may be surprised that I went with a loaf.  I normally pick the biggest most frosting filled choice.  There really wasn't an option like that this month, which helped point me in this direction.  Add to that the fact that I had some zucchini on my counter waiting to be used and zucchini bread happens to be one of my favorites and this choice was sort of a no-brainer!

Peach Breakfast Cake, a New Take on an Old Favorite

     I thought it would be fun to keep the peach recipes coming.  Peaches are one of my favorite summer fruits, even if they are a bit tricky.  In their own way they are a bit like avocados;  you wait and wait and wait for them to be at their peak and 10 minutes later they start to shrivel.  So I always try to buy them a half dozen or so at a time and just do it frequently throughout the season, that way there are always good peaches ready to go.  But still every once in a while, one sits just a bit too long.  They are still good, but you can just tell that when you bite into it you will have peach juice running down to your elbows.  It is delicious, but sticky!  So if I find a couple of peaches got to that point, it is time to fire up the oven.  You know, as if I need an excuse!

Peach and Blueberry Wine Slushies #SundaySupper

     I don't know about where you live, but here in the midwest it gets downright stifling during the summer.  I try not to complain too much about it so I can complain all I want about the snow and ice and bone-chilling temperatures.  Once the cold causes me to lose feeling in my fingers and toes, it can take hours to get them back to normal.  You know what I'm saying?  I figure I can't have it both ways, so I save (most) all of my complaining for when it matters.  But that doesn't mean I like the heat and humidity.

Cori's Pasta Salad


    A while back, I asked my Facebook friends how they like their pasta salad best.  I am 90% sure that my cousin Cori responded saying she likes hers with pepperoni, cheese and Italian dressing.  That is it, pure and simple.  So when I was planning her baby shower, I went back to confirm that this was in fact the case.  I couldn't find the post anywhere!  How does it just disappear like that?!  Anyway, Cori, I hope I got it right!

    Update:  Cori has confirmed that this is her favorite pasta salad.  Sometimes simple and delicious is the way to go!

Whole Wheat Cinnamon Swirl Sourdough Bread

     I would say I have a newfound sourdough obsession, but instead I'll just say that I am a responsible sourdough caretaker.  I don't want Bertha to starve.  I certainly don't want her to feel unloved.  And it turns out I am always happy for an excuse to make breads, muffins, pancakes, waffles cakes.... carbs!  Mmmmmm, carbs!

Samoa Smacky Delicious Mix #SundaySupper


     I'll begin this post with a word of warning. This Samoa Smacky Delicious Mix is addicting.  You will innocently pick up the first piece just to give it a little try.  Then you will find your hand inexplicably back in the bowl.  A few more bites and you'll tell yourself you should quit.  Then just one more bite sneaks its way into your mouth. So you move across the room thinking the distance will make you safe.  But then you need your drink that just so happens to be sitting by the bowl... so you grab a sip and a quick bite.  And so it goes until you reach the bottom of the bowl.  With the last little crumb comes a simultaneous sense of sadness and relief.

    Don't say I didn't warn you!

Orange Creamsicle Sourdough Muffins


     I think I'm in a phase... I'm just not sure which phase I'm in.  Perhaps it's my orange creamsicle phase.  That's a perfectly good summer phase, right?  I mean creamy and citrusy and yummy seems like a pretty decent phase to be in.  But I am pretty sure I'm in a sourdough muffin phase too.  I mean I have my starter, Bertha, and she likes to be fed regularly.  She has to share the fridge with other food, so she is only allowed to get so big.  So she nicely helps make delicious pizza dough and plenty of yummy muffins to keep her size in check.  So what do you do when you are caught between to phases?  Let them collide and see what deliciousness results, of course!

Sunshine and Summertime Muffins (with summer squash, lemon and blueberries)

     My aunt, uncle and cousin recently moved back to town.  It has been a lot of fun having them around after they lived 3 hours away for so long.  They planted a really nice garden in their backyard with plenty of zucchini.  So, when the plants started going crazy they were doing what zucchini growers do at the peak of the season... calling in reinforcements to help eat the zucchini.  I was all to happy to help.  I love zucchini and though I tried to talk Matt into planting some again this year, he was resistant.  We had a major squash bug catastrophe a few years back and we were supposed to be paring down the garden this year.  So zucchini was out.  Thank goodness for family! ;-)

Easy (No Bake!) Two Bite Berry Pies #SundaySupper


     I don't know about you, but I have really been loving all of the red, white and blue projects and recipes in anticipation of the 4th of July.  I'll be a little sad to see them all go after tomorrow.  The worst part is there isn't a fun food holiday in sight for a while after that.  Is there?  Am I missing one?  Or after the 4th do we have to wait for pumpkin season to have something to celebrate?!  I know... just the mere mention of pumpkin season brought twinkles to some of your eyes and the rest of you are rolling them.  Ok. Fine. I'll move on.

Deviled Egg Potato Salad

    I am definitely still in cookout mode.  It is so much fun to stare down a three day weekend and think about the possibilities.  One day really does make a ton of difference, doesn't it?  The extra day in the weekend and the fact that there is a holiday makes it seem like we really need to take advantage.  Of course summer holidays mean firing up the grill.  I asked Matt what he wanted to do this weekend and his answer was "grill something." Easy enough, I suppose.
