Bacon Wrapped Shrimp Jalapeno Poppers


     I have told you before of our family's obsession with poppers.  During this time of year, stuffed jalapenos of one form or another make an appearance at almost every weekend's family dinner.  It's kind of a running joke.  Pops makes peppers stuffed with different fillings.  He usually uses mostly cheese, sometimes bacon and he's even stuffed them with taco meat before too.  We all go to town, then Pops' eyes start watering.  He claims he "got the hot one." Every week.  Some how he always ends up with the hot one of the group.  He has the WORST luck (or lowest tolerance, it's a weekly debate) of all of us.

Tomato Slab Pie with Cornmeal and Parmesan Crust


       Yes.  You caught me.  I am "borrowing" another recipe from Mollie at Frugal Hausfrau.  She has been on a big cornmeal kick lately.  It all started with her post on Polenta Budino with Plum Marmellata that inspired my cornmeal/blueberry version. Then she posted a delicious looking Orange Apricot Snack Cake with more cornmeal in the batter.  It looks and sounds delicious!  Usually I only reach for cornmeal when I need cornbread to go with ham and beans or to sprinkle a little under a pizza crust.  All of these new fun ideas had me inspired and hungry!  Then I came to yet another one of her delicious looking cornmeal recipes.  Her Garden Tomato Tart looked gorgeous, sounded delicious and allowed me to further indulge this little cornmeal obsession I have going right now.  So, Mollie - I apologize for borrowing so heavily from you these past few weeks.  I would say it's not you, it's me, but it wouldn't be true!  You are posting too many delicious looking treats and fanning the flame!

Creamy Pulled Pork Spaghetti


      Here I go again with another recipe for using up left over pulled pork.  It is just handy to have a variety of things to do with what is left.  I mean if you are smoking  some pork butt you might as well do two right.  Or in my brother's eyes, if you are doing two you might as well do four.  He'll bring one to share with the guys at work and have a family dinner.  He keeps some and the rest seems to find it's way to my fridge.  He's never heard me complain about it.  Not even once!

Simple (yet finger lickin' good!) Roasted Shrimp

    These shrimp didn't stand a chance!  Shrimp is an absolute favorite in our house anyway.  I think shrimp and steak are two of Matt's all time favorite foods.  Then there is Jax.  I was trying to get him to eat dinner when he was one and half or so.  He was refused, saying "I like shrimp."  Like if it's not shrimp, it's not worth eating!  So anyway, the minute they heard shrimp was on the menu, they were hungry!

Jenny's Feta and Spinach Stuffed Chicken Breasts



   This is a good one!  It looks like it took some time and effort, but was really easy to make after work.  A skillet that can go from the stove to the oven is the only equipment you need. Jax loved it and so did Matt.  When Jenny gave me the recipe, she said that Andrew doesn't like feta and doesn't like spinach.  He came back for seconds anyway.  I like feta and spinach, so I knew I would love it.

Creamy Chanterelles and Chicken Over Rice

     Here it is.  My final chanterelle recipe of the season.  Hopefully I'll be back with more next year!  I think I am hooked, so let's hope they return again!  We had fun harvesting these golden beauties with my father-in-law.  You cut them rather than pull them because they grow from roots and not spored.  So we got our scissors, grabbed some bags and went off on a bumpy ride to the yellow brick road!

K.C.'s Award Winning Turkey Bacon Explosion #SundaySupper


     At long last, the recipe is finally here!  Ever since I posted about our Poultry Grill-Off, people have been asking for the winning recipe.  Can you blame them?  It has a lot of things going for it.  First of all, it is award winning after-all.  It did beat out the competition at our event.  Secondly, if you've been around for long, you know that my brother K.C. is the grill/smoker master of the family.  If he made it, there is a good chance it has been researched and tweaked and perfected.  Then there's the name, bacon explosion, it just sounds like something you have to try!

Russian Style Chanterelles Over Eggs and Toast

      After trying the chanterelles my father-in-law gave us on the AMAZING Chanterelle Tart, two things went through my mind.


  1. Thank goodness those were really chanterelles and nobody had any ill effects.
  2. When can I get MORE?!
     I was instantly hooked.  When I asked my father-in-law what his favorite way to have them was, he answered with eggs.  So, I knew I wanted to try them that way as well.  I worked out that Jax had a week off of daycare.  We hadn't been to grandpa's farm in a while, so we were hoping to visit.  We couldn't help that the visit happened to be during mushroom season. ;-)

Char Siu Chicken

     Today I am going to give you a quick peek into the strange inner workings of my family.  I hope it doesn't weird you out to much!  We went through a phase when I was a kid where we went to the chinese buffet semi-regularly for lunch.  I don't remember if it was a birthday thing or just a way to get us out of the house for a bit when we were all at home during the summer.  I guess it doesn't really matter.  One of the items on the buffet that always found its way onto everybody's plate was the red meat threaded on a skewer.  You know what I'm talking about.   None of us knew what it was really called, so we had a family nickname for it.  Are you ready?  Oh my.  No, really prepare yourself.  Ready now? Ok, we all called in monkey butt on a stick.  Who knows how it started, but it stuck.  We still call it that to this day.  I don't know what's wrong with us... please send help!

Vanilla Bean Peach Jam


     It's been at least a couple of days since I shared something peachy keen with you, so I figured it was high time I talk about peaches again.  I mean they are perfectly sweet and wonderful still.  There are still Illinois peaches in the store and things are looking and smelling too sweet to stay away.  I think between all of the peaches and blueberries we've eaten lately, we might be dangerously close to turning into a fruit salad.  Oh well, it seems like there might be worse fates!

Healthy Banana Sourdough Muffins and a Starbucks Gift Card #Giveaway

     By now it's no surprise that sourdough muffins are my jam.  Bertha (my sourdough starter) and I love to make muffins together.  We do a pretty darn good job too, if I do say so myself.  She just loves to get a taste of a bit of sugar and I love having a quick and easy breakfast waiting for Jax.  We have two or three kinds of muffins in the freezer at any given time.  So he just picks one, we warm it up and breakfast is ready.  

Caramel Frosting

  I LOVE frosting.  As far as I am concerned, most of the time cake is mostly just an excuse for frosting.  I have had a particular crush for cooked frostings lately.  There is something magic that happens when you cook milk and flour to a paste and then whip it into butter or cream cheese and make it into something so light and airy and sooooooooooooooooooooo good.  So I just knew I was going to love this caramel frosting recipe Di sent.  I adjusted it slightly because I didn't have any heavy cream and I wasn't in the mood to go to the store.  It was still wonderful!

Di's Banana Cake


    My coworker Diane and I hardly ever get to see each other.  But we talk a lot.  We both spend a lot of time on the road and like to bounce ideas off of each other as we go.  She is a wealth of information, so she is my first call when I come across something I am unsure of.  We go over how our days have been going, what strange things have popped up and then the most important part... food!

Dilly Cucumber Salad - Mondays With MiMi


     Pops has been harvesting cucumbers faster than I can use them this year.  Although I throw them in every lettuce salad I make and have shared them with friends and family, we have more than we can eat.  I made a batch of refrigerator pickles and still had more to use.  Cucumber salad came to mind.  We really enjoy a creamy cucumber salad and love cucumber dill dip so I combined the two.  this is a keeper.

Easy Cornmeal Budino with Blueberry Marmellata #SundaySupper



      What I am about to share with you my husband rated a 9 out of 10.  And that's really saying something considering he is more of a meat and potatoes kind of guy and this is neither meat nor potatoes!  So I am really excited to share it with you for today's Sunday Supper summer corn event, hosted by Ellen from Family Around the Table.  The funny thing is at first glance it really isn't the most summery  recipe.  It really isn't the corniest (I know, I know, it's not the best grammar but sometimes you just have to roll with it) recipe either.  But I saw the final call go out for posts for this Sunday Supper event and I panicked!  We love more traditional summer corn recipes.  Corn on the cob never goes out of style, frozen corn is always in our freezer, we love corn dip, creamy corn, corn casserole, heck we'll even put corn in our macaroni and cheese.  But I was under the gun and I had to make a choice.  I am really glad I made this one.  I think you will agree that when you look at it with a wide lens, it really is a perfect summer corn recipe afterall!

Delicious Peach Vanilla Sauce

Sourdough Waffles

     There have been a couple of factors that have lead to a sharp increase in the number of waffles eaten in our house.


  1. I bought a Belgian waffle maker.  There is just something so much more fun about a Belgian waffle.  The deep wells leave plenty of room to catch all of the good stuff and there is more room for a crisp exterior and soft interior.
  2. We have a sourdough baby that loves to be fed.  Luckily our new housemate, Bertha, also loves to make delicious food.  She has made quite a few batches of muffins, plenty of bread, even some pasta.  But the freezer is full of muffins, the freezer is full of bread and though we have a lot of fun making pasta we can't really go through the whole process on a weekly basis.  Luckily Jax loves getting a muffin out of the freezer and warming it up for breakfast.  I love toasting a slice of homemade bread from the freezer and frying an egg to put on top for lunch.  I am sure we will make more pasta when winter rolls back around.
    In the meantime... we have been making waffles!!
