Baseball Baby Shower

A little rookie is coming soon, so it's time to celebrate! This baseball shower was a perfect way to celebrate my sister and my soon to be nephew!

       You may remember that I through my middle sister a bridal shower brunch last fall.  Well, guess what?!  I just had the chance to throw her a baby shower as well!   I think she liked the last shower so much that she couldn't wait to have an excuse for another one!  I kid, I kid.  But really, I am going to be an aunt in a couple of months, so we wanted to make sure that the baby has everything he needs.

     I love getting to explore the world in my kitchen. I may not have the time or money to get all of the places I'd like to visit in person, but trying another culture's food is a great way to get to know a little bit more about them.

How to Make Homemade Cajeta #DairyMonth

This Cajeta is liquid gold. It is thick, sweet and caramely. It is great over ice cream, pound cake, as a dip for apples or on a spoon! It is made with goat's milk for the full flavor, but this recipe could be easily made with cow's milk as well!

      We are so lucky to have such great parents and even luckier that they are all relatively close to us. We are even luckier yet that a couple of them have homesteads that produce delicious food... and sometimes they share!

A Visit to Ol' McGrandpa's Farm for #DairyMonth

Checking out my father-in-law's homestead is always a treat. Getting a behind the scenes look at a small dairy goat operation is a perfect way to celebrate June being dairy month!

      I thought it would be fun to take a small break from recipes and celebrate dairy month in a different way for a day. My father-in-law and his wife have a small dairy farm. I would venture to guess that this farm is different than what you are picturing though.  Close your eyes and think dair farm.  What are you seeing?  If the only thing you can picture is a giant barn filled with black and white cows you may be in for a surprise when I tell you about their dairy operation!

This Orange Creamsicle No Bake Cheesecake is the perfect creamy mix of vanilla and orange in a fun cheesecake package. This is the perfect summertime dessert!

   The flavors of orange and vanilla are a match made in heaven. And (not so) shockingly I am not the only one who thinks so.  Pops loves creamsicles, so much so that my sister and her husband once got him a box as part of his Christmas gift!  There is just something so refreshing about the citrusy orange outside and the creamy vanilla center.  I like the popsicle version well enough, but that is not my favorite variation on the flavors.

Breakfast Pizza With a Hash Brown Crust

This breakfast pizza can be customized with all of your favorite toppings.  The hash brown crust is what will steal the show though! What a fun base for a breakfast pizza!

    Apparently June is when I make breakfast pizza.  I originally posted this in June of 2015 and here I am again revisiting it!  This pizza has been a favorite for a number of years now.  MiMi made a bunch of them for Cori's bridal shower.  They were a big hit with everyone.  You can adjust the toppings to whatever you like.  I had some leftover ham to use and our green onions are going strong in the herb garden... so that was the combination we went with!  It would be good with sausage, bacon, peppers or mushrooms.  Anything you like in your omelets would be a perfect addition!

All Natural Strawberry Rhubarb Sauce

This delicious sauce is so simple to make and so delicious! Strawberry, rhubarb and apples get sweetened with just a touch of honey for a great snack. It is perfect eaten alone or a fun dip for your animal crackers!

     My husband grew up eating rhubarb, at least on occasion.  We never really did.  In fact at our pie-off my little sister thought the rhubarb pie might be a celery pie.  She said she was glad when she tasted it that it wasn't! Ha! Can you imagine a celery pie? Maybe one of you has a good recipe?!

    I think I am still in a breakfast frame of mind after all of the fun brunch posts last month.  Did you find a new favorite?  I know we certainly did.  We will be making the Parmesan Polenta Brunch Bowls and Croque Madame Waffles for brinner plenty this year and I've already done another twist on the Pineapple Sweet Rolls that was delicious. Easy Family Meal Plan Week 23

    We made it through another week.  I don't know about where you are, but the temperatures are really starting to heat up here.  This week is forecast to be in the 90s (F) most of the week.  I have a lot going on at work this week and I need to get geared up for my sister's baby shower.  Then next week we are celebrating dairy month on the blog.  Some blog friends and I are going all out.  I have some fun things planned and I hope I can pull them off like I have envisioned them! So thank goodness for meal plans.  This menu is going to be yummy and at least we have that much planned!

Portillo's Inspired Chopped Salad for a Crowd

This chopped salad is perfect for a party! It is part pasta salad, part green salad and all yum! A simple dressing and all of your favorite ingredients will be great for dinner, a potluck or a BBQ!

   This salad is a little bit meaty of the leafy, cheesy, meaty salad we all love and a little bit pasta salad.  All of the flavors come together wonderfully and this salad is sized for a party.  Of course you can cut back and make it for a smaller group easily enough.  I have made it for a few big gatherings at our house.  I usually mix up the dressing the morning of the party.  I also get all of the chopping done a couple of hours in advance.  I leave the dressing off until right before it is time to serve.  Sometimes I'll even only dress half of the salad at a time just in case we don't need it all. Since the rest isn't dressed, it keeps longer and can be my lunches during the week!

Maple Bacon Asparagus Salad

This simple salad showcases fresh spring asparagus with a simple dressing, some bacon and eggs. It is a great way to celebrate the simplicity of spring.

    One thing I always look forward to as spring rolls around is fresh asparagus. It is so good and so much better when it is in season locally.  I love it roasted so much that I normally make more than my fair share of it that way.  Of course I grill a bunch or two and usually end up with some in a cheesy tart but a good ninety percent of the asparagus I buy ends up tossed in olive oil, dusted with salt and pepper and roasted.  This year I vowed to try a few new things and I am so happy I did.

The Great Pie-Off

   Our friends and family enjoy a good food competition.  This is the third in our "sanctioned" series to get your name on the winner's board. Whose pie would reign supreme?

     Memorial Day Weekend seemed like the perfect time to host the third installment of our friends and family cook-off.  So we sent out the alert: a pie off and BBQ was coming!!  Everyone got out their rolling pins and their thinking caps and went to work.  Since my brother K.C. has won the title at both the Poultry Grill-off and the Chili Cook-off, he definitely had a target on his back.  Everyone was gunning for his pie.  Baking isn't really his calling, so he wasn't feeling all that confident going into it.  Even still, we all knew he was going to be stiff competition and we had better bring our A game if we were going to get somebody else's name on the board.

Laura's Creamy Chicken Taquitos

   These taquitos were originally my cousin's recipe but we have adopted them as one of our own. We all love them! They are creamy, cheesy, full of flavor and easy to make!

Creamy inside and crunchy outside, these creamy chicken taquitos are so much fun to eat!

     When I asked my family for some family favorite recipes, this is one of the recipes my aunt Marlene gave me.  She said she couldn't take credit for it though, it was really one Laura had started making but everyone loved them!  I was really excited to give them a try as Laura is quite the cook.  They were delicious and much easier to make than I had anticipated. They are so creamy cheesy and the flavor is great!

Strawberries and Cream Skillet Roll

Your breakfast just got an upgrade. This giant sweet roll is stuffed with cream cheese, fresh strawberries and tons of flavor. It's so much fun to slice and serve!

   I have had this idea for a little while now, I was just waiting for the perfect opportunity to try it.  The three of us don't need to eat a sweet treat this size all by ourselves.  With a dozen people coming over, it seemed like a good time to make it a part of the menu.  Plus, I had plenty of other options if this didn't work.  Luckily it wasn't a problem.  It got rave reviews!

Pacific Pineapple Pulled Pork {Slow Cooker}

This pulled pork is a little bit teriyaki and a little bit char siu and all flavor! It is great on a sandwich and perfect over rice. Throw it in your slow cooker and dinner will be ready when you are!

This Pineapple Pulled Pork is part teriyaki, part char siu and all done in the slow cooker!

     I'm sure by now you know all about our love affair with pulled pork. It's just such an easy way to feed a crowd! Of course it doesn't hurt that my amateur pit master brother lives across the street and is usually happy to throw an extra pork butt on for us when he fires up the smoker.

It's time for the weekend!  I feel bad wishing the week away.  I mean it is 5/7 of the week and we only get so much time, but to be honest it's all about the weekend!  But we are going to have to eat again next week, so I thought I'd go ahead and share the menu with you now.  After all, tomorrow is the twentieth and we know what that means... cake!  So the menu is a day early so we can hurry up and put some veggies on the grocery list so we don't feel bad when we add all of the chocolate we'll need for tomorrow!

All Aboard! Little Dude Turns 4!

A fun train birthday party for my little engineer!

     How is it even possible that my little dude turned 4? It doesn't seem quite right. The funny thing is how hard it seems to be hitting me. My own birthdays have never affected me that way. For instance turning 30 was like no big deal. I didn't really have any of those "this is the last time I'll be doing such and such in my twenties" feelings. But little dude turning 4? Bring on all of the feelings! I couldn't help but get a little sad about cuddling my three year old for the last time or kissing him goodnight for the last time before he was a big four year old. It was a good thing he was SO excited about his birthday and kept me giggling or I might have actually broke out in tears!

     Maw-Maw and Paw-Paw were coming for a visit on Labor Day weekend.  The guys were in charge of manning the grill and smoker for the weekend.  I was the dessert committee.  I wanted to try making a homemade chocolate chip cookie dough ice cream.  Since I have been excited about creating new Texas sheet cake recipes I thought it would be fun to make a chocolate chip cookie dough flavored sheet cake.  I am especially proud of this one.

Peach Breakfast Cake, a New Take on an Old Favorite

Use fresh or frozen peaches to make all of tour breakfast dreams come true. This cake is perfect for tea time too. It's an old fashioned recipe that will quickly become a an all time favorite. 

     I thought it would be fun to keep the peach recipes coming.  Peaches are one of my favorite summer fruits, even if they are a bit tricky.  In their own way they are a bit like avocados;  you wait and wait and wait for them to be at their peak and 10 minutes later they start to shrivel.  So I always try to buy them a half dozen or so at a time and just do it frequently throughout the season, that way there are always good peaches ready to go.  But still every once in a while, one sits just a bit too long.  They are still good, but you can just tell that when you bite into it you will have peach juice running down to your elbows.  It is delicious, but sticky!  So if I find a couple of peaches got to that point, it is time to fire up the oven.  You know, as if I need an excuse!

Easy Family Meal Plan Week 18

   Hip hip hooray for the weekend!  This time of year is always jam packed with activities.  It has been for as long as I can remember.  As a kid it was sporting events, dance recitals, end of school activities, graduations and the like.  Now its parades, blog events and more (super fun) blog events and birthday parties to throw!  I am chasing my tail, but at least it is all for happy things.  But all this craziness means having our meals planned out in advance is that much more important.  Every little bit of organization helps when you don't know if you are coming or going.  So without further ado, I present this week's menu!

    I actually first posted this recipe a couple of years ago when the blog was in its infancy. I had maybe three readers at the time and they were probably all my mom, just in different devices!  So now that at least four or five of you are kind enough to stop by on a regular basis, I thought I should share it again so none of you miss out on the deliciousness!

Tequila Lime Grilled Chicken #MexicanRecipes

      I hope you are enjoying #MexicanRecipes week as much as I am. I just love all of the inspiration! Since we started off the week with a side dish, I thought we better do a main dish as well.  Of course I love just about anything wrapped in a tortilla, but I figured with all of the carbs in the Mexican Street Corn Barley Salad I should probably take it easy on the entree. Besides, it's grilling season and we better take advantage while the getting is good!

Easy Family Meal Plan Week 17

Noodles, Noodles and More Delicious Noodles and a #Giveaway

     You guys are never going to guess what I found.  Ok, so technically I didn't find it so much as it showed up at my doorstep.  To be fair though, I did find it on the front porch.  On second thought, I am totally taking credit for finding it!  Think about making your favorite restaurant style noodles at home in just a matter of minutes and that is just the start of it!  Sit down and let me tell you more.

Tart Cherry Pie

     This story probably actually starts a few years ago.  My aunt has a cherry tree that is very prolific.  So my grandma, my aunt and I spent an entire afternoon pitting cherries.  We enjoyed each other's company and really had a great time despite the work. In the end we each had bright red fingers and enough cherries for a pie.  There is something about fresh cherries that you worked so hard for that makes the pie taste all that much better.
