Lemon Sweetened Condensed Milk Buttercream

This frosting is the perfect combination of rich, fluffy and bright. It has a lovely lemon flavor without being too much and the sweetened condensed milk adds that little something special you can't quite put your finger on!


    I'm sorry. I really am. I made this frosting and then held out on sharing the recipe until today. I was tempted to run to the computer and share it with you the moment I took the first lick of the spatula.

    No, I'm not 10.

    Yes, I still lick the spatula.

    Well, I at least try to sneak a taste before Little Dude dives in to finish it off!

Lemon Velvet Cake

This lemon cake is luscious and easy to make. The crumb is tender and moist. A homemade cake does not have to be hard!

K.C.'s Zucchini Bread #FarmersMarketRecipes

This zucchini bread has the perfect balance of sweet and spice and a great crumb. It is easy to make and a great way to use up the summer harvest. Freeze some zucchini to bake bread this winter!


     If you are a regular around here, you'll recognize the name K.C. He's my middle bother.  I'm the oldest of 6 kids, 3 boys and 3 girls. He is my basically across the street neighbor.

    He is the winner of the poultry grill-off, the chili cook-off and the maker of the chocolate peanut butter pie with bacon lattice at the pie-off.  So he knows his way around the kitchen, the grill and the smoker.

Summer Vegetable and Chicken Stir Fry #FarmersMarketWeek

Summer vegetables and chicken are quickly cooked until tender crisp and then coated in a delicious stir fry sauce.  Dinner is ready by the time the rice is done cooking!


    You'd think with all of these zucchini recipes, that I had a huge garden full of them.  In fact, we haven't planted them in at least 5 years.  Don't get me wrong, we love them.  When we moved to this house we went from a large garden in the backyard to just using the raised beds that were here when be bought the place.  We had to cut down on what we were going to plant and while we enjoy growing and eating zucchini, they take up a lot of space.  So we opted for more plants that grow vertically and greatly reduced the number of plants.

Brown Sugar Zapple Crisp #FarmersMarketWeek

This fun recipe turns summer zucchini into a delicious dessert! The brown sugar crisp tastes so good and it's just like eating an apple crisp. Top with vanilla ice cream for a perfect summer treat!


Zucchini growers know there are phases to zucchini season. Every year it follows the same cyclic pattern.

  1. Gee, I can't wait for these zucchini to start producing.
  2. Mmmmm, I sure do love zucchini bread and zoodles.
  3. Won't my friends love these extra zucchini I have?
  4. My freezer is overflowing with shredded zucchini. I can make a loaf of zucchini bread every other day all winter long!
  5. My friends and family say I'm no longer welcome until zucchini season is over. I just picked zucchini yesterday and there are already new ones the size of my thigh out there!
  6. Man, zucchini season is over. I sure wish I could have made another batch of alfredo zoodles while we had the chance!

     You guys, I finally did it!!!  After months and months of yammering on about how I really want to make overnight oatmeal and how I really should make overnight oats and gee whiz if only I could get myself to make some overnight oatmeal... I finally made overnight oatmeal! I am not sure if this deserves a gold star and a pat on the back or a kick in the pants and a what the heck took you so long?! Maybe a little of all of it.  No matter what, I am proud of myself!

Easy Family Meal Plan Week 30

This week's menu is planned! We have 5 family friendly dinner recipes and one dessert ready for you!


     It's August?!?! How can that even be?  This month is going to be hectic but fun.  There are a lot of big changes in the works at our house, so it is going to be a little bit of cram in as much as we can before next month combined with enjoy life as it is.  So we have fun things planned like hopefully a backyard campout, a trip to the zoo, watching Uncle Zach in a bike race and more fun things.

Super Loaded Queso #TailgateParty

This super loaded queso is creamy, cheesy and loaded with meat, beans and flavor! It is perfect for tailgating, watching the game at home or family game night!


     Naming food is such a strange and hard thing to do. It's something you don't really think about until you start a food blog and then all of the sudden everything you make needs a title. I find it much less difficult when sweets are involved. For some reason savory food is harder.  It is probably because I am usually a bit of this, a pinch of that kind of cook. I love using the bits of whatever is in the fridge and turning them into something new and delicious.

3 Ingredient Caramel Pecan Macaroons

All it takes is three ingredients to make these fun caramel pecan macaroons. They are a bit caramelly candy and part coconut cookie. They are so fun!



      Apparently dulce de leche and I are having a bit of a thing right now. Can you blame us? After making cajeta I just had to make some dulce de leche too. It is strangely satisfying to watch the milk concentrate and carmelize right before your eyes.

Sundae Cone Dream No-Churn Ice Cream

Super simple no churn ice cream sweetened with the goodness of dulce de leche and studded with bits of sugar cones, mini chocolate chips and a chocolate swirl. Make your sundae dreams come true with every bite!


     It turns out when you make multiple batches of dulce de leche just to see what difference the amount of baking soda you add makes,  you find yourself with lots of dulce de leche to use. I know, it's a really tough problem to have.  I am not one to waste food, especially sweet goodness like dulce de leche, so of course I had to do something! I really had no choice.

Super Fudgy Sweetened Condensed Milk Icing

Made quickly in a saucepan and with only three ingredients, this icing is hard to beat! It is so fudgy and has a nice sheen.  Just whisk in a bit of powdered sugar to turn it into a really nice frosting as well!


     Cakes, cookies, cupcakes, graham crackers, spoons, fingers... you name it, I'll try to frost it! Ok, maybe not brussel sprouts. But to be fair I haven't tried it yet so I'm not going to completely rule it out!

Homemade Cherry Chip Cupcakes

Delicious cherries and mini chocolate chips are nestled in a simple cake batter for a fun treat. Cupcakes topped with fudgy icing and loaded with cherries are hard to beat!


       We have been plowing through the cherries lately. It's hard to stop buying the little beauties. Whether they are the deep burgundy sweet cherries or the pretty yellow and red rainier cherries, we love them all.  We are real classy like when we eat them too and have pit spitting contests in the backyard. That's what summer is for, right?

Emily's {no bake!} Peanut Butter Bars

Peanut butter, graham crackers and chocolate come together in a fun no bake bar.  These fun treats are sure to get rave reviews everywhere you take them.  They are so easy to put together they are likely to become your new go to dessert!


     Our love affair with these deliciously easy treats started last summer.  We were at my aunt and uncle's for a summer BBQ.  My cousin Emily is known for her cupcakes and sweets, so she was the dessert committee and her parents handled dinner.

    It's the weekend and I think we should enjoy every second of it! Last week was looooooooooong for us. Was it that way for you too? It was busy and hot and so dang muggy. Every day this week we opened the door to go out in the morning and even at 7 A.M. there was a wall of humidity just waiting to hit us in the face. That first step out was brutal each and every morning.  This morning there was a bit of a breeze and about 15 raindrops came down.  Little Dude and I sat on the porch swing and enjoyed every bit of those 12 minutes of tolerable weather.

Strawberry Bruschetta

Have you ever tried bruschetta with strawberries? It is so good! Strawberries and basil make the perfect topper for a good baguette.  



      Even though our strawberry patch has been done producing for weeks, the berries have been so cheap at the store we have still been swimming in strawberries.  At the store the past few weeks, I have picked out a pound or two of berries and then my little dude will beg to get one too.  He packs his own bag with his stuff at the grocery store and he needed his own berries for his bag.  You know by now that I am a sucker when it comes to this stuff, so of course we get the extra pound of berries. Every. Single. Time.

     My husband is one of those (crazy!) People who could do without sweets. In most instances he would just assume have another helping of meat than save any room for dessert. He is also one of those  (even more crazy!) people who's appetite is directly linked to his activity output for the day and therefore maintains a pretty darn steady weight all of the time, but that's a complaint for another day!

Dilly Cucumber Salad - Mondays With MiMi


     Pops has been harvesting cucumbers faster than I can use them this year.  Although I throw them in every lettuce salad I make and have shared them with friends and family, we have more than we can eat.  I made a batch of refrigerator pickles and still had more to use.  Cucumber salad came to mind.  We really enjoy a creamy cucumber salad and love cucumber dill dip so I combined the two.  this is a keeper.

     I sat down to write this post without much on my mind to say.  They I typed in the title and when I got to week 27 it made me pause for a minute. Week 27? Really?! That means we are more than halfway through the year.  I know, it makes sense. It is July afterall.  But it is the first time it hit me and I'm not sure how I feel about it. Grateful? Relieved? Rolo Poke Cake

      It just so happens that my aunt and her daughter share a birthday. It also happens to be that one is my godmother and the other is my goddaughter.      I think I may be slightly obsessed! After making a few batches of homemade cajeta and telling you how similar it is to dulce de leche, it occurred to me that I've never actually made dulce de leche. I know, it was a wrong that needed to be fixed immediately!

Jan's Almost Apple Pie

    This pie tastes just like apple pie, but there isn't a single apple in it! You'd never guess what it is though.  But I'll tell you! It's zucchini! This is a great way to use up some of the surplus. If you don't tell them, they'll never know! 


     You will never guess what is in this pie or how I came across the recipe!  I was at a conference in the Ozarks.  For those of you who don't know, I used to work for an environmental lab.  I traveled a bit and sometimes found myself at conferences for a few days.  Anyway, it was dinner time, so I found myself a seat.  There were two ladies sitting next to me who appeared to know each other and were in a conversation.  So, I was minding my own business until I heard it... Pie!  Now, I had to start paying attention.  What kind of pie could they be talking about?

Our First of July Hog Roast

We celebrated the 4th of July on the first this year and we had a blast! I can see this hog roast becoming and annual event.  Here's a peek at how our day went.



          Monday mornings are not known for being especially pleasant.  Monday mornings before a Tuesday holiday are even worse in my opinion! Don't get me wrong, I am happy to have a holiday any day of the week. But if there were a petition going around to make all holidays long weekends, I would certainly sign it!  Motivation is so hard to come by on Mondays anyway and my guess it is going to be even harder today.  Oh well, we'll plod through anyway.

Peanut Butter Chocolate Chip No Churn Ice Cream #IceCreamSocial

Smooth, creamy and oh so good! This no-churn ice cream is exploding with peanut butter flavor and is dotted with chocolate chips.  It is almost too easy!


     To tell you the truth, I've been trying to avoid the whole no churn ice cream craze. It's not because I don't think I'd like it. In fact, it's for the complete opposite reason. You see, we love ice cream. Too much.

     Luckily I have self control at the store and can pass up the frozen treat aisle more often than not. If I cave and buy a tub of creamy cold deliciousness, it is unlikely to make it longer than a few days at home. The three of us all know we have to enjoy what little we get because the others may polish it off at any time, without warning. If I buy some for a party, I have to hide it in the dark recesses of our deep freezer, you know under the frozen vegetables, if I want it to still be around for its intended use.

12 great ideas to celebrate the 4th of July.  We have everything from appetizers, main dishes, side dishes and plenty of red, white and blue desserts. We also have decor and more!


     How do you normally celebrate the 4th of July? We almost always cook out. Most of the time it's hamburgers, either Maw-Maw's hamburger surprises or American lava burger surprises.  Sometimes it's pork chops.  Either way there are plenty of traditional BBQ sides, baked beans, potato salad and more!

Baseball Baby Shower

A little rookie is coming soon, so it's time to celebrate! This baseball shower was a perfect way to celebrate my sister and my soon to be nephew!


       You may remember that I through my middle sister a bridal shower brunch last fall.  Well, guess what?!  I just had the chance to throw her a baby shower as well!   I think she liked the last shower so much that she couldn't wait to have an excuse for another one!  I kid, I kid.  But really, I am going to be an aunt in a couple of months, so we wanted to make sure that the baby has everything he needs.

Caramel Apple Empanadas {With Cajeta or Dulche de Leche} #DairyMonth

These caramel apple empanadas are easier to make than you'd think and so good.  Try eating one still warm from the oven and you are sure to be hooked!


      Would you like to hear how these caramel apple empanadas came to be? I knew you would! Little dude and I were busy making homemade cajeta from Ol' McGrandpa's goat milk. We were supposed to be going to MiMi and Pops' that night for family dinner. So we called to say we'd bring cajeta and apple slices for dessert. I know, how virtuous of us to do fruit slices for dessert!  But in the background my littlest sister was requesting empanadas instead.

How to Make Homemade Cajeta #DairyMonth

This Cajeta is liquid gold. It is thick, sweet and caramely. It is great over ice cream, pound cake, as a dip for apples or on a spoon! It is made with goat's milk for the full flavor, but this recipe could be easily made with cow's milk as well!



      We are so lucky to have such great parents and even luckier that they are all relatively close to us. We are even luckier yet that a couple of them have homesteads that produce delicious food... and sometimes they share!

A Visit to Ol' McGrandpa's Farm for #DairyMonth

Checking out my father-in-law's homestead is always a treat. Getting a behind the scenes look at a small dairy goat operation is a perfect way to celebrate June being dairy month!



      I thought it would be fun to take a small break from recipes and celebrate dairy month in a different way for a day. My father-in-law and his wife have a small dairy farm. I would venture to guess that this farm is different than what you are picturing though.  Close your eyes and think dair farm.  What are you seeing?  If the only thing you can picture is a giant barn filled with black and white cows you may be in for a surprise when I tell you about their dairy operation!
