Mini Chocolate Bundt Cakes with Peanut Butter Whipped Cream #Choctoberfest

Imperial Sugar provided me with sugar for recipe development in conjunction with #choctoberfest. All opinions are my own.

Perfect single sized chocolate cakes drizzled with a chocolaty glaze and topped with peanut butter whipped cream.  They are a little indulgent and perfect for a party!

Sometimes you just have one of those days when you need a whole cake. Like to yourself. The whole dang thing! No? Just me? Forget I said anything!

Starting over. There is something extra fun about mini desserts and extra big desserts. Can we agree on that at least? Whew!

Skillet Monster Cookie (Spiderwebs Optional!) #Choctoberfest

One of our all time favorite cookies, a monster cookie is taken to epic proportions and baked in a skillet. With crisp edges and a chewy center ever piece has the best of both worlds. Rich fudge frosting and a cute spider web take it to the next level!

Something spooky is coming to town. Mwah-ha-ha! Well that is if you consider peanut butter, oatmeal, candy and fudge frosting spooky.  I personally find each and every one of those things to be wonderful. In fact that lists a lot of my most favorite things.

Crocktober Linkup #Celebrate365

As the busy fall season gets into full swing and we want comfort food at it's finest, it's time to break out the slow cookers and instant pots. Here's a chance to share your favorites and be inspired!

This time of year is always extra busy for us.  We are in the middle of birthday season, there is holiday after holiday and I can't help but to throw in an extra party here and there. It seems to happen every year.  Couple the busy days with cooler weather and a hankering for comfort food and it is the perfect time to pull out the slow cooker.

Easy Family Meal Plan Week 40

We have this week's menu planned for you! With 6 family friendly dinner recipes and a fun (and spooky) dessert, the deciding is done!

Another week, another menu!  Deciding what to make is always the hardest part for me, so it is nice to have some of the work done.  Now that fall seems to have rolled into town and will likely be staying this time, heartier more comforting meals are just the ticket.

Maw-Maw's Lamb Curry

This simple curry was created by my Maw-Maw and is full of memories for my mom. I think you will agree that it is a hearty and flavorful meal!

I knew as I was going back through and updating some posts that this lamb curry needed to be one that got a little attention.  When I first started this project, this was one of the recipes that my mom was adamant we got from my Maw-Maw.  It was something she remembered enjoying frequently during her childhood.  Now we get to enjoy it too.  The first time I published the recipe, it was right around Valentine's Day, so that is the explanation for the pink sweets comments.  Not that pink sweets need an excuse!

Chili Cheese Spritz Crackers

These crackers are cute as can be and packed fulled of cheddar, chili and just a bit of kick.

Chili season is upon us! That means there's a pot on the stove and a game on the TV almost every weekend. The back door is open, come on over!

Most of the time I make a venison chili with a mix of lots of beans and whatever else strikes my fancy. No two pots are the exact same, but they are similar and my husband's favorite.

Dori's Beer Bread

Homemade beer bread is so easy to make and a perfect accompaniment to stew, soup, chili and more.  It is also perfect on it's own with just a schmear of butter!

This is one of the original recipes that was sent it when I put out that initial call for recipes from family and friends way back when.  Who would have guessed that a quick email like that would have resulted in a blog that is still going strong almost three years later?!  It has been a wild ride to say the least.  A lot of those early recipes that are the real reason why this blog is here are in need of some updating.  I hope to work my way back through them as time allows.  When I made the apple pumpkin chili, I knew this beer bread with a hard cider twist would be a perfect side and I was right!

Easy Family Meal Plan Week 39

We have dinner planned for you this week! With 6 family friendly recipes and a fun dessert treat!

Fall Harvest Pumpkin Sourdough Muffins #PumpkinWeek

There is a ton of fall flavor packed into the muffins. Apples, pumpkin and cranberries join forces with sourdough to bring you surprisingly healthy but still deliciously tender muffins.

Fall is finally here and I couldn't be happier. I've always liked fall but I've been looking forward to it this year more than most. I'm ready for it all!

Of course one of the things I'm looking most forward to is baking! Cooler weather makes it feel so cozy to have something in the oven and the smells of fall baking are the best.

Apple Ale Pumpkin Chili #PumpkinWeek

This chili is loaded with fall flavors! It is perfect for game day or for warming you when it's chili outside!

Crisp nights, bonfires, warm apple cider, sweaters, hoodies, football and chili! Fall is finally rolling in everyone and I couldn't be more excited! I love fall weather, fall clothes and fall flavors. Now if only we could find a way to make fall last until spring!

Cheesecake Stuffed Pumpkin Bundt Cake #PumpkinWeek

This slightly spiced pumpkin bundt cake is dotted with chocolate chips and stuffed with a cheesecake layer. Fall is here and it tastes good!

I always feel a little bit bad starting pumpkin week. After spending the last month prepping you for #appleweek, I barely have time to get you excited for all things pumpkin. But I have a feeling if you are team pumpkin, you won't mind the lack of notice and prep.  Besides I did give you a bit of a warning in the peanut butter yogurt dip post, so you shouldn't feel completely blindsided!

Easy Family Meal Plan Week 38

Deciding what to make for dinner is the hardest part, so we've done it for you! With 5 great dinner recipes and a fun dessert the worst part is over!

Oh my goodness everyone! What a fun week we had, right? I am still swirling in all of the apple goodness from #AppleWeek! Did you find some new favorite recipes?  I already have heard of at least two people making the apple pie steel cut oatmeal at least two times each already! It's worth doing just for how good it smells.  Plus I know at least one friend has made a bread recipe and the dust hasn't even settled yet.  I know my to make list is about 15 miles long now and I can't wait to eat my way through it!

Fast and Easy Peanut Butter Yogurt Fruit Dip #AppleWeek

Veggie Wash provided me with product for recipe development and a great prize package for our readers as part of #AppleWeek.  All opinions are my own.

This fun dip is perfect for snacking. It just has a few simple ingredients and comes together in not time at all.  The best part is all of the ingredients are wholesome as well. Perfect after school snack or fun for a party!

Are you a snacker?  We love snacks at our house, especially on the weekends. When it's nice out we tend to be outside most of the day. Whether we are working or playing, it is hard to stop for a meal. Plus our dinner time gets pushed back so we can utilize as much daylight as possible.

Savory Apple Bacon Pizza #AppleWeek

Casabella and Dreamfarm provided me with product to use in recipe development and prize packs for you to win in conjunction with #appleweek.  All opinions are my own.

This pizza is loaded with delicious gooey cheese, bacon, apples and thyme. You will not believe how creamy and delicious it is, not to mention how good it smells! #appleweek

Here I am with a pizza on #appleweek and it doesn't involve a sugar cookie crust or any brown sugar. You didn't expect that, did you? Me either! But here I am with a gooey, cheesy, melty, bacon topped pizza hoping you'll like it.

Actually, I am sure you will! What's not to love? There's cheese! And apples! And BACON!

Whew, please forgive me. All of this apple fun has gone to my head!

Fresh and Fun Fall Dinner Salad #AppleWeek

Rainier Fruit provided me with apples for recipe development and a great prize package for our readers as part of #AppleWeek.  All opinions are my own.

The crunch of fresh apples, the sweetness of dried cranberries, savory chicken and cheese, and fresh greens come together in this great salad that helps bridge the seasons when you still want something light but fall flavors are calling your name! The homemade dressing is perfect for all kinds of salads as well!

This time of year is always interesting to plan dinners for. I have eaten my weight in fresh tomatoes from the garden and I am ready for something different. There is a nip in the evening air that makes you think fall, but it is still too warm to actually make casseroles and braises.

Applesauce Cake With Soft Caramel Cream Cheese Frosting #AppleWeek

Rodelle Vanilla provided me with extracts for recipe development and a great prize package for our readers as part of #AppleWeek.  All opinions are my own.

Slightly spiced and super moist applesauce cake goes perfectly with a soft and luscious cream cheese and caramel frosting.  This is the stuff fall dreams are made of!

I have something to tell you. Cake and I have been in a serious relationship for a little while now. We've been trying to keep it quiet, but have decided to go ahead and make it public.

Are you shocked?

I didn't think so!

Apple Pie Steel Cut Oatmeal #AppleWeek

Flahavan's Irish Oatmeal provided me with oatmeal for recipe development and a great prize package for our readers as part of #AppleWeek.  All opinions are my own.

Loaded with apple flavor and that hearty steel cut oatmeal chew, this apple pie oatmeal is sure to be a favorite fall breakfast.  Grab a spoon and dig in!

I just love oatmeal. Of course I enjoy it the traditional way and as overnight oats. I've also been known to throw it into muffins, pancakes, cookies and even meatballs.  It feels good to add oats and they are so versatile.

Welcome to #AppleWeek 2017!

Our great sponsors provided products for our bloggers to try and prizes for you to win. All opinions are 100% our own.

1 week, 101 recipes all related to apples.  Get ready to go on an apple filled journey! Not only can you find sweet and savory apple recipes of all kinds, but you can enter to win great prizes as well. This is going to be fun!

It's finally here! It's really actually here! I have been looking forward to #AppleWeek all year and here it is!

In case you don't remember, last year I got some of my blog friends together for a week celebrating all things apple. We had drink recipes, appetizers, breakfasts, savory items and even a few crafts. They all highlighted apples and apple products.  It was so much fun that we couldn't wait to do it again.

So that brings is to this very moment. AppleWeek 2.0 is starting off with a bang. We have 29 bloggers sharing 101 recipes and they all look and sound amazing.

All Things Apple #Celebrate365

Welcome to Celebrate 365 Blog Party! Where your hosts gather together to pull off a party to gather together all kinds of recipes, crafts, and ideas all year long that celebrates the holidays and seasons that we are in!

Are you ready for some apples? I sure hope you are because we have a lot of good stuff coming your way.  I am a big fan of apples in all of their forms. My brother's trees were loaded this year so we have a freezer full of homemade applesauce and hand-pressed cider.  Both were a lot of work, but also kind of fun and the results were worth it.

Easy Family Meal Plan Week 37

With 6 fun dinner recipes and a sweet treat, this week's menu is planned for you. We have a little something for everyone from a delicious sandwich to pasta, pulled pork to breakfast for dinner. And that cheesecake? Well, that's all mine!

Eeeeek! Another weekend! As has been the plan for the last few weekends, the boys have working on the playset in the back yard.  The second floor is all decked and the monkey bars are up.  Hopefully tomorrow will bring railings on the second level and MiMi will be able to sleep better at night.  I am busy putting the finishing touches on #appleweek.  It is going to be fun and I can't wait for it to finally start tomorrow!

Simple Key Lime Roasted Shrimp #FoodBloggers4FL

This roasted shrimp is kissed with the citrusy goodness of key lime juice. Dip them into lime butter for an extra special treat.  They are like taking a bite of Florida.

After a few years of mild hurricane seasons  (I say typing a comfortable 12 hour drive from any hurricane zone,) this one came out of the gate with a vengeance. As my blogger friends and I were trying to figure out a way to show our support to those affected by Hurricane Harvey, the news of Irma started rolling in.

While Irma may sound like a sweet old lady who might bake you cookies and pinch your cheeks, this storm seemed to have other things in mind. She was big. She was angry. She had her sights set on Florida.

Lemon Texas Sheet Cake

This Lemon Texas Sheet Cake is perfect for feeding a crowd.  It is so easy to make and has just the right amount of lemon flavor. Take it to your next BBQ, family reunion or potluck!

Did you know that Texas Sheet Cakes can come in other flavors than chocolate? It's true! I know that chocolate is the traditional version everyone knows and loves, but the possibilities don't have to end there.

In fact there are a ton of flavors you could make.  Now I do have a variety of jelly roll sheet cakes on the blog. There's the Elvis version with banana, peanut butter and bacon. There's the banana with salted caramel cream cheese frosting and both of those are amazing. But MiMi says they are NOT Texas sheet cakes.

Grandma's Oatmeal Pie - Post by MiMi

Recipes from grandmas just have to be good! This is a great recipe for oatmeal pie from a friend's grandma. It is loaded with oatmeal and coconut, but even coconut haters love it! You have to try it!

This post was written by MiMi just a few months after the blog was started. I recently remade it and took a few snapshots to update the pictures. We'll see if you can spot the old ones I left!

I got this recipe from my friend Lynn.  She has baked a couple for her family and posted a picture of them on Facebook.  I saw it and just had to get the recipe from her.  Her daughter-in-law verified that it's awesome.  She doesn't even like coconut either.

Brownie Baked Oatmeal

The taste of brownies is now an acceptable breakfast. It is really loaded with oatmeal and yogurt.  Go ahead and make some, I dare you!

Sometimes in life you just need some chocolate? Am I right?  Of course I am! I'm always right, just ask my husband! 😉

Sometimes that chocolate craving comes at breakfast time. Do you know what? You don't have to choose between suppressing the craving or feeling guilty for indulging it any more!

Easy Family Meal Plan Week 36

Deciding what to make is usually the hardest part about making dinner. Luckily we've done the work for you! 5 yummy dinner recipes and a fun dessert will keep your family fed and happy this week!

Hoooooray for another weekend!  After spending 4 nights this week working on making homemade applesauce from my brother's trees, we switched gears to press some into cider.  As I am writing this we haven't done it yet, but chances are by the time you read it we will have.  I will try to put some pictures up on instagram so you can check it out if you are interested.  You would think after all of the #appleweek prep, I'd be sick of apples but it hasn't happened yet!

Pineapple Right Side Up Baked Oatmeal

Take a bite of the tropics with this fun breakfast! This baked oatmeal has a great creamy texture but is hearty enough to be cut into pieces. It is just sweet enough to taste like a treat but is a pretty healthy way to start the day!

Have you ever had an idea in your head that just gets embedded and won't leave you alone? That was this baked oatmeal for me.  I thought of it months ago and even went so far as to buy the pineapple rings and cherries. Then life happened and I didn't get it made.

Usually if something isn't made within the first week or so after I think of it, the ingredients end up being used for something else and I move on. Not with this oatmeal though. I just new I had to give it a try and see how it worked.

Avocado and Shrimp Bruschetta #FoodBloggers4TX

Delicious shrimp, creamy avocado, lime, cilantro and a hint of chili powder piled atop some delicious garlic bread. It is a one of a kind bruschetta appetizer that reminds me of our trip to the Houston shore.

What a crazy start to hurricane season!  A couple of weeks ago we watched in horror as hurricane Harvey hit the coast of Texas.  As if the damage from the winds wasn't enough, Harvey continued to dump rain on an already damaged city. Then it rained and rained and rained some more.  It was heartbreaking to turn on the news each night and the images were almost unbelievable. Foot after foot of rainwater forced people to climb onto their roofs to escape the water.  Good Samaritans were rescuing people in their fishing boats and the world watched amazed.

Easy Family Meal Plan Week 35

We have this week's menu put together for you! With 4 great dinner ideas, one of my favorite appetizers and a couple of breakfast treats we have everyone covered and it's going to be delicious!

Woohoo for another weekend!  We are on to phase two of operation playset build.  The first floor decks are going on.  It is really starting to come together.  I am interested to see what phase three brings.  I have been operating on the execution phase but have been leaving the planning to my husband.  He's loving every minute of it!  I think he is building the jungle gym of his childhood dreams.

Pepperoni Pizza Cheese Ball

This cheese ball is full of pepperoni pizza flavor but in a fun, spreadable appetizer form! It is sure to be a hit at your next party and would be great at a tailgate!

How was your long weekend? I hope you all had a blast. Ours was a good mix of productive and fun. We got married on Labor Day weekend 7 years ago, so we got to celebrate our anniversary. It's amazing how fast seven years can come and go. It's also amazing how it feels like it's been this way forever. A lot has changed in those seven years and we are grateful that almost all of it has been good.

Caramel Apple Sourdough Muffins

These muffins are bursting with apple flavor! They bring a healthy punch of oatmeal, sourdough, whole wheat flour and yogurt as well. Start your day off deliciously!

I am really starting to get excited about fall baking. The days are still feeling like summer but there is definitely a hint of fall in the evening breeze. Plus our favorite local apple orchard is picking the early varieties of apples. Fresh cider is a little ways off still but they have the best cider slushies from last year's pressing and the frozen cider is perfect for the still warm days.

Easy Family Meal Plan Week 34

We have some great dinner ideas coming your way. Easy, family friendly and ready to go! Plus a fun chocolate poke cake as a special treat!

Hooooooooray for long weekends!  Are you guys doing anything exciting over the Labor Day weekend?  We are hosting our annual shrimp boil.  Other than that my husband and Little Dude have big plans to get a play set built in the back yard.  It will probably take the rest of the fall to get it done unless they shrink their plans a bit.  I came home from work and they were plotting it out on paper, tape measures in hand.  It should be interesting and I will try to share pictures and keep you updated!

These fun little energy bites are just like eating monster cookie dough. There is no baking, chopping or work involved. Just stir up the goodness and roll them into balls. Easy peasy and perfect for snacking!

Sometimes in life you just need a little snack. Whether it's an after school snack, or after work snack. Maybe it's a 3:00 slump snack... or just because you're hungry, bored, tired, happy, sad, silly or just because you're awake snack.

No?

Just me?

Chewy Maple Cinnamon Cookies

I am grateful to be included in this campaign in which OXO provided me some tools for recipe development and donated $100 to Cookies For Kids' Cancer on my behalf. All opinions are my own. #OXOgoodcookies #CookiesForKidsCancer

These cookies are kissed with the warmth of maple and brown sugar and a hint of cinnamon.  They are big and chewy and oh so good!

Today's post is really special to me. I get to share with you two things that are important to me. The first, of course, is cookies. We all know my sweet tooth is larger than life. But the second thing is a cause that is near and dear to my heart, childhood cancer research.

Easy Family Meal Plan Week 33

This week's menu is planned for you! We have family pleasing recipes that include plenty of pasta, some fun salads, pizza dippers and more!

I have some really fun things headed your way this week!  Tomorrow I'm sharing some fun fall cookies with you.  I even dressed a few of them up for Halloween in case you are starting to get in the spirit already.  Plus they are for a great cause, so I'd love it if you could come back by and check those out.  I've also got some fun ideas to add a few more veggies to your Labor Day and football watching menus, so look for that on Wednesday.  Then we'll round out the week with some fun no-bake treats.  So this week is going to be fun and delicious!

16 Brilliant Back To School Ideas #Celebrate365

Here are some great back to school ideas! Everything from breakfast to lunch, after school snacks and dinner ideas too! There are fun DIY ideas as well. There is something for everyone!

Judging by my Facebook feed, school is back in session for more folks than not. For those few lucky kids (and teachers!) who aren't back in the grind yet, the days are numbered.  For millions of families, that means that daily schedules have changed and things are a bit more hectic.

Campfire Chicken BLTs

When you can't decide between grilled chicken and a BLT, have both! This sandwich is delicious and fun.  Make it over the campfire, the grill or in the house, just make it!

We love a good BLT. There is something so simple and delicious about them and they are a sure sign summer is here. In fact my husband is almost ritualistic about it. The second the first big sandwich tomato starts getting color, he makes sure there is bacon in the house.

Monday, August 21, 2017

Super Simple Roasted Salsa

Take those garden fresh veggies and turn them into a flavorful roasted salsa in just a matter of minutes.  It takes longer to char the veggies under the broiler than it does to do anything else! This is going to be a hit for sure!

It's salsa season! Of course it's kind of always salsa season, but right now is garden fresh salsa season. If you have a garden, you likely have most of these ingredients in spades right now. If you aren't the gardening type, you likely can get them really fresh and affordably from a farm stand or neighbor who gardens.

Easy Family Meal Plan Week 32

This week's menu is a fun one! We have 4 great dinner recipes, a fun breakfast and a delicious no bake dessert!

Woop, woop! It's the weekend!  I know I say this a lot, but this is going to be a fun one. We are visiting the zoo and watching my brother-in-law race on his bicycle.  We did both for this same event last year and had a blast.  This year should be even more fun.  Little dude being a year older means we can look forward to it more and I think he will appreciate it even more! I am sure I will tell you all about it as the week rolls on.

Baked Breakfast Chimichangas

These fun baked chimichangas have a crisp golden exterior and are stuffed with eggs, cheese, potato and ham. They are ready in about 30 minutes and will have them all satisfied!

I love to cook. I know, that's really surprising coming from a food blogger. The thing is even though I love the process of creating a yummy meal for my family, sometimes I still lack inspiration.  On my drive home from work the other day I was mentally going through the refrigerator and cabinets trying to figure out what in the heck I was going to make.  I'm sure we've all been there.

15 Fabulous Frosting Recipes

Frosting makes everything better! Whether you spread it on cakes, cookies, cupcakes, graham crackers or eat it off a spoon, it is all good! Here are 15 delicious frosting recipes ranging from fun to fruity along with some foundation frosting recipes.

My love for all things frosting runs deep.  In fact the main reason why I bake a cake is normally because I have an idea for a frosting I want to try.  I know I am not the only one with an affinity for frosting either because my frosting board in Pinterest is my most popular one.... by far!

Lemon Sweetened Condensed Milk Buttercream

This frosting is the perfect combination of rich, fluffy and bright. It has a lovely lemon flavor without being too much and the sweetened condensed milk adds that little something special you can't quite put your finger on!

I'm sorry. I really am. I made this frosting and then held out on sharing the recipe until today. I was tempted to run to the computer and share it with you the moment I took the first lick of the spatula.

    No, I'm not 10.

Yes, I still lick the spatula.

Well, I at least try to sneak a taste before Little Dude dives in to finish it off!

Lemon Velvet Cake

This lemon cake is luscious and easy to make. The crumb is tender and moist. A homemade cake does not have to be hard!

Surprise, surprise... I'm back with another cake! After all of those farmer's market recipes last week it seemed like we needed a treat! 😉 In all honesty, I wanted to make some lemon frosting. You know it's all about the frosting for me, right?! So I needed a lemon cake to put it on.

Easy Family Meal Plan Week 31

We have this week's menu planned for you! With 5 tasty dinner recipes and a super fun {chocolate and peanut butter!} dessert, your family is going to be happy!

Hooray for the weekend! Am I right?! We have a fun one planned.  We went to a local BBQ last night.  Actually BBQ isn't the right word, but that's what it's called.  We actually had fried fish! But there are rides and games and lots of people.  The little guy had lots of fun and if you hurry up, you may catch a glimpse on my Instagram stories.

K.C.'s Zucchini Bread #FarmersMarketRecipes

This zucchini bread has the perfect balance of sweet and spice and a great crumb. It is easy to make and a great way to use up the summer harvest. Freeze some zucchini to bake bread this winter!

If you are a regular around here, you'll recognize the name K.C. He's my middle bother.  I'm the oldest of 6 kids, 3 boys and 3 girls. He is my basically across the street neighbor.

He is the winner of the poultry grill-off, the chili cook-off and the maker of the chocolate peanut butter pie with bacon lattice at the pie-off.  So he knows his way around the kitchen, the grill and the smoker.

Summer Vegetable and Chicken Stir Fry #FarmersMarketWeek

Summer vegetables and chicken are quickly cooked until tender crisp and then coated in a delicious stir fry sauce.  Dinner is ready by the time the rice is done cooking!

You'd think with all of these zucchini recipes, that I had a huge garden full of them.  In fact, we haven't planted them in at least 5 years.  Don't get me wrong, we love them.  When we moved to this house we went from a large garden in the backyard to just using the raised beds that were here when be bought the place.  We had to cut down on what we were going to plant and while we enjoy growing and eating zucchini, they take up a lot of space.  So we opted for more plants that grow vertically and greatly reduced the number of plants.

Italian Sausage and Summer Vegetable Sheet Pan Dinner #FarmersMarketWeek

This dinner is full of flavor and fresh summer vegetables! It is quick to make and is perfect as is or served with a bit of rice or pasta.

Summer brings a lot of things to be thankful for.  Whether it is more sunshine after the short dark days of winter or the warmer weather, even if it always turns to oppressive heat faster than I think it should. It also brings the summer produce!

Brown Sugar Zapple Crisp #FarmersMarketWeek

This fun recipe turns summer zucchini into a delicious dessert! The brown sugar crisp tastes so good and it's just like eating an apple crisp. Top with vanilla ice cream for a perfect summer treat!

Zucchini growers know there are phases to zucchini season. Every year it follows the same cyclic pattern.

  1. Gee, I can't wait for these zucchini to start producing.
  2. Mmmmm, I sure do love zucchini bread and zoodles.
  3. Won't my friends love these extra zucchini I have?
