Savory Spinach and Cheese Pie

This is THE savory pie to beat all savory pies.  It would be perfect for brunch, a fun lunch or as a hearty side.  Spinach and feta make this super creamy and delicious.

This savory pie is creamy and flavorful. The cheesy spinach filling is savory and filling. It is perfect served alongside a salad for lunch or dinner. Or take a small slice as a side dish, almost like a fun pie variation of creamed spinach.

Happy Pi Day!!  This is one of those holidays that I didn’t even know was a thing until high school.  You’d think we would have celebrated it in math class, but no.  My first Pi Day was celebrated in typing class of all things.

I think I must have had a hungry teacher.  Either way, we all brought in pies and feasted in honor of 3/14, the day of pi!

I am not one to let a chance to celebrate go unnoticed, especially when it involves pie.  So, I was really excited to see that Coleen from The Red Headed Baker was hosting a Pi{e} Day event.

I knew immediately I wanted to participate, but had the hardest time deciding what to make.  In fact I made a delicious chocolate pie that I thought for sure would be it.

I dubbed it Not Your Mama’s Chocolate Pie because it was my own updated twist on an old fashioned chocolate pie.

It was DELICIOUS, but the pictures only turned out so-so.  It  disappeared too quickly for me to reshoot and as tempted as I was to remake it, I decided to take it as a sign that I should make something else.

 My mom recently came across her grandma’s apple pie recipe, so of course that was tempting as well.  But MiMi is still working on sourcing just the right lard to make it.

She remembers her grandma’s pie crust as being the pinnacle of pie crusts, so it has to be just so.  I can’t wait to give it a try, hopefully she makes it soon!

I thought about a peanut butter pie.  I have a really good old fashioned baked peanut butter pie on the blog already, but I haven’t had the icebox version since I was a kid and I have really fond memories of them.

(Update: I now have a no bake peanut butter pie with a chocolate covered pretzel crust!)

But I would want to rework it completely to take out a few ingredients that I tend to shy away from now and I just didn’t have enough time to do that much tinkering.

Then I had an idea!  Why not do a savory pie?  So I did a riff on the filling we love in Jenny’s Feta and Spinach Stuffed Chicken Breasts and turned it into a pie!  It is cheesy and spinach=y and creamy and delicious.

It would be a fun brunch dish.  It would also make a fun lunch served with a simple salad.

If you are looking for a new way to go meatless on Mondays, or maybe for Lent, this is a hearty dish that won’t leave you wondering where the meat is.  Or if you want something different as part of your Easter menu, this would be perfect for that as well!

The look might remind you a bit of a quiche, but I promise you it is a lot different.  The filling is almost more along the lines of a savory cheesecake.

The feta maintains some integrity as you bake it so the textures and flavors change as you take a bite.  I’m telling you, this is definitely something worth trying.

I made it as an extra side for people to try and one of my family’s weekly family dinners.  My brother had said he was bringing the meat, but wouldn’t tell anyone what it was going to be.

It turns out he did a rib roast on the smoker.  This savory spinach pie went so well with it!  It was like having an amped up version of prime rib and creamed spinach. I mean… DELISH!

The picture does not do it justice.  We dined outside and the sun was going down. Besides, I didn’t plan on taking any pictures when I filled my plate.

But I couldn’t help myself when the moment came.  The dinner was so good and my little man and I had no problem gobbling it up!

Savory Spinach and Cheese Pie

Ingredients
 

  • 1 pie crust
  • 16 ounces cream cheese softened
  • 3 eggs
  • 10 oz frozen chopped spinach defrosted
  • 1 Tablespoon butter
  • 1 small onion chopped
  • 2 cloves garlic minced
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • dash of nutmeg
  • 4 ounces crumbled feta cheese

Instructions
 

  • Prepare pie crust and place in pie dish. Cover and place in refrigerator to chill until ready to use.

  • Preheat oven to 350° F.
  • In a large mixing bowl, beat cream cheese until it is smooth. Add the eggs, one at a time and beat until completely mixed.
    16 ounces cream cheese, 3 eggs
  • Squeeze as much moisture out of the spinach as you can and add to cream cheese mixture.
    10 oz frozen chopped spinach
  • In a skillet over medium-low heat, melt butter and cook diced until translucent. Stir in the garlic, salt and pepper and a dash of nutmeg. Cook for just a minute, stirring frequently and remove from heat.
    1 Tablespoon butter, 1 small onion, 2 cloves garlic, ¼ teaspoon salt, dash of nutmeg, ¼ teaspoon ground black pepper
  • Stir onions and spinach into cream cheese until well mixed. Fold in feta and pour filling into chilled pie crust.
    4 ounces crumbled feta cheese
  • Bake for about 40 minutes or until just set in the middle.
  • Allow to cool for at least 10 minutes before slicing. It is best served warm, but is delicious at room temperature as well.

I think this sounds delicious, but I think my husband would question the savory pie concept. Did you husband give it a thumbs up?? If so, I should be good to try baking it!

I wish I could tell you, but he wasn't able to make this family dinner. The little that was leftover didn't stay around quite long enough for him to try either. Though he did think it smelled lovely when he popped in while it was baking and my youngest brother loved it!
