Slow Cooker Corn Casserole From Scratch


      Corn casserole has long been a favorite side dish in our family.  My in-laws love it too, so it shows up at a lot of celebratory dinners, holidays and even BBQs.  It is one of those simple sides that everyone is happy to eat.  But sometimes you don't want to turn on the oven... or the oven is already full.  So I thought this would be a perfect slow cooker side.  And you know what? I was right!



      I would imagine you could take our classic Corn Casserole in a slow cooker too.  But I never have the little boxes of mix on hand and quite frankly I never have cans of corn on hand either.  Sometimes you have to make due with what you have, so I created a recipe that does just that.  What I do always have on hand is flour, sugar, eggs, oil, frozen corn and milk.  We also always have cornmeal on hand.  I like to dust my pizza pans with it when we make homemade pizza, which is an almost weekly endeavor.  So this recipe is perfect because it is all things we use anyway!  I don't even have to add anything to my grocery list as everything is a pantry staple around here.


     There are a few things that I really love about this.  Of course, there is the fact that it doesn't require the oven which is handy in so many circumstances.  Then there is the fact that what little prep work it does take is done hours ahead of the big meal.  All in all, it is an easy, delicious, family pleasing side dish that is sure to become a favorite.  I love making it in my casserole crock pot. but you could definitely make it in your favorite slow cooker.

Slow Cooker Corn Casserole From Scratch
Ingredients
  • 2/3 cup flour
  • 1/2 cup corn meal
  • 1/3 cup sugar
  • 1 T baking powder
  • 1/2 tsp salt
  • 4 T melted butter
  • 1 cup sour cream
  • 2 eggs
  • 2 cups frozen corn
  • 1 cup cheddar cheese, grated
Instructions
1. Stir together flour, corn meal, sugar, baking powder and salt.2. Stir in butter. Then add remaining ingredients and stir until combined.3. Spoon into greased slow cooker crock and smooth out top.4. Cook on low for 2.5 to 3 hours or until completely set.

    3. How have I never heard of Corn Casserole? And I live in the South! Crazy 😂 This looks like an amazing side dish to introduce to my in-laws though, I would bet money my hubby's mom would love it! 😁
