The Great Pie-Off

   Our friends and family enjoy a good food competition.  This is the third in our "sanctioned" series to get your name on the winner's board. Whose pie would reign supreme?



     Memorial Day Weekend seemed like the perfect time to host the third installment of our friends and family cook-off.  So we sent out the alert: a pie off and BBQ was coming!!  Everyone got out their rolling pins and their thinking caps and went to work.  Since my brother K.C. has won the title at both the Poultry Grill-off and the Chili Cook-off, he definitely had a target on his back.  Everyone was gunning for his pie.  Baking isn't really his calling, so he wasn't feeling all that confident going into it.  Even still, we all knew he was going to be stiff competition and we had better bring our A game if we were going to get somebody else's name on the board.

Laura's Creamy Chicken Taquitos

   These taquitos were originally my cousin's recipe but we have adopted them as one of our own. We all love them! They are creamy, cheesy, full of flavor and easy to make!

Creamy inside and crunchy outside, these creamy chicken taquitos are so much fun to eat!

     When I asked my family for some family favorite recipes, this is one of the recipes my aunt Marlene gave me.  She said she couldn't take credit for it though, it was really one Laura had started making but everyone loved them!  I was really excited to give them a try as Laura is quite the cook.  They were delicious and much easier to make than I had anticipated. They are so creamy cheesy and the flavor is great!

Strawberries and Cream Skillet Roll

Your breakfast just got an upgrade. This giant sweet roll is stuffed with cream cheese, fresh strawberries and tons of flavor. It's so much fun to slice and serve!

One giant sweet roll stuffed with cream cheese and strawberries. It's like a giant strawberry cheesecake danish!


   I have had this idea for a little while now, I was just waiting for the perfect opportunity to try it.  The three of us don't need to eat a sweet treat this size all by ourselves.  With a dozen people coming over, it seemed like a good time to make it a part of the menu.  Plus, I had plenty of other options if this didn't work.  Luckily it wasn't a problem.  It got rave reviews!

Pacific Pineapple Pulled Pork {Slow Cooker}

This pulled pork is a little bit teriyaki and a little bit char siu and all flavor! It is great on a sandwich and perfect over rice. Throw it in your slow cooker and dinner will be ready when you are!

This Pineapple Pulled Pork is part teriyaki, part char siu and all done in the slow cooker!


     I'm sure by now you know all about our love affair with pulled pork. It's just such an easy way to feed a crowd! Of course it doesn't hurt that my amateur pit master brother lives across the street and is usually happy to throw an extra pork butt on for us when he fires up the smoker.

Cheesy Potatoes {with bacon!!}

Loaded with cheese and bacon, these potatoes are going to disappear before you even know what happened! Great for BBQs, potlucks or family dinners!


   We all love the traditional cheesy potato casserole.  It is so creamy and delicious, but sometimes it is nice to switch it up a bit.  These potatoes are just the thing!  MiMi first made these back in 2015.  It had been a little while so we had to have them again.  So when grilled pork chops made the family dinner menu, it was time to break these gems back out!

    Woot woot!  We made it to another meal plan!  You know what that means? It's time for the weekend!  I feel bad wishing the week away.  I mean it is 5/7 of the week and we only get so much time, but to be honest it's all about the weekend!  But we are going to have to eat again next week, so I thought I'd go ahead and share the menu with you now.  After all, tomorrow is the twentieth and we know what that means... cake!  So the menu is a day early so we can hurry up and put some veggies on the grocery list so we don't feel bad when we add all of the chocolate we'll need for tomorrow!

All Aboard! Little Dude Turns 4!

A fun train birthday party for my little engineer!

     How is it even possible that my little dude turned 4? It doesn't seem quite right. The funny thing is how hard it seems to be hitting me. My own birthdays have never affected me that way. For instance turning 30 was like no big deal. I didn't really have any of those "this is the last time I'll be doing such and such in my twenties" feelings. But little dude turning 4? Bring on all of the feelings! I couldn't help but get a little sad about cuddling my three year old for the last time or kissing him goodnight for the last time before he was a big four year old. It was a good thing he was SO excited about his birthday and kept me giggling or I might have actually broke out in tears!

Chocolate Chip Cookie Dough Sheet Cake

This chocolate chip cookie Dough Sheet Cake takes the one of my favorite guilty pleasures and turns it into a Texas style sheet cake. You are going to love it!



     Maw-Maw and Paw-Paw were coming for a visit on Labor Day weekend.  The guys were in charge of manning the grill and smoker for the weekend.  I was the dessert committee.  I wanted to try making a homemade chocolate chip cookie dough ice cream.  Since I have been excited about creating new Texas sheet cake recipes I thought it would be fun to make a chocolate chip cookie dough flavored sheet cake.  I am especially proud of this one.

      I'll be honest with you, when I got a package from Nielsen-Massey with lemon extract, almond extract and rose water I immediately had a thousand ways to use the lemon and almond extract in mind.  I love Nielsen-Massey products and actual bought a whole quart of their vanilla bean paste because I loved it that much!  The rose water, on the other hand I wasn't quite sure what to do with.  That is, of course, the precise reason why I just knew I had to create something with that!

     Happy Monday everyone! It seems we've survived the Cinco de Mayo celebrations, which is great because we have a whole new reason to be excited. Well, a few reasons if you live in our house. Peach Breakfast Cake, a New Take on an Old Favorite

Use fresh or frozen peaches to make all of tour breakfast dreams come true. This cake is perfect for tea time too. It's an old fashioned recipe that will quickly become a an all time favorite. 

     I thought it would be fun to keep the peach recipes coming.  Peaches are one of my favorite summer fruits, even if they are a bit tricky.  In their own way they are a bit like avocados;  you wait and wait and wait for them to be at their peak and 10 minutes later they start to shrivel.  So I always try to buy them a half dozen or so at a time and just do it frequently throughout the season, that way there are always good peaches ready to go.  But still every once in a while, one sits just a bit too long.  They are still good, but you can just tell that when you bite into it you will have peach juice running down to your elbows.  It is delicious, but sticky!  So if I find a couple of peaches got to that point, it is time to fire up the oven.  You know, as if I need an excuse!

   Hip hip hooray for the weekend!  This time of year is always jam packed with activities.  It has been for as long as I can remember.  As a kid it was sporting events, dance recitals, end of school activities, graduations and the like.  Now its parades, blog events and more (super fun) blog events and birthday parties to throw!  I am chasing my tail, but at least it is all for happy things.  But all this craziness means having our meals planned out in advance is that much more important.  Every little bit of organization helps when you don't know if you are coming or going.  So without further ado, I present this week's menu!
