Campfire Chicken BLTs

When you can't decide between grilled chicken and a BLT, have both! This sandwich is delicious and fun.  Make it over the campfire, the grill or in the house, just make it!



     We love a good BLT. There is something so simple and delicious about them and they are a sure sign summer is here. In fact my husband is almost ritualistic about it. The second the first big sandwich tomato starts getting color, he makes sure there is bacon in the house.


    A few summers back I was on the road for work and grandma was riding along. My husband and a friend were working on a home improvement project while we were gone. She was worried about what they'd eat in my absence when they were working so hard. I assured her that I made sure there was plenty of bread, bacon and lettuce around before I left. Along with plenty of chips and they would be just fine. She was so tickled at the idea of them making BLTs.


    In fact, thet friend would have had his feelings really hurt if he wasn't invited for the first BLTs of the year. Now that there are kids in the picture, he isn't around for dinner as much as he once was. He's a good daddy and eats with his family. But we always still feel a little guilty when we have BLTs without him.

      So when the tomatoes started turning red this year, I instinctively picked up some bacon and lettuce. It was all planned, the master bacon maker of the family would step up and prepare dinner and give me the night off. We were all looking forward to it.


Until.....

    He was working outside at work amd smelled somebody grilling chicken.


     Who does something so rude?!


      So then he was torn. The chicken smelled so good and he wanted to grill too, but we already had our hearts set on BLTs. He waffled and hemmed and hawed and sweated it out. He was so torn that he stopped what he was doing to consult me on the matter.


    Then inspiration struck. We could do both! I picked up some bakery fresh onion rolls on the way home and we were ready to rock. Now those of you who come here often know he likes to cook over a wood fire. So we did it all that way. He fried the bacon in a cast iron skillet over the fire. Then he did some chicken breasts.

    He envisioned a honey mustard spread, so we did some that way and some with slices of avocado. Both were great. He was so proud of his problem solving capabilities and he is always happy to make a delicious meal for us since that is normally my arena.


   We will definitely be making these delicious sandwiches again! What are your favorite ways to serve up a BLT?


Yield: 1 sandwich

Campfire Chicken BLTs

When you can't decide between grilled chicken and a BLT, have both! This sandwich is delicious and fun. Make it over the campfire, the grill or in the house, just make it!

INGREDIENTS:

For each sandwich:
  • 1 bakery fresh roll
  • 1 grilled chicken breast, seasoned with pepper and seasoned salt
  • 2-3 strips bacon, cooked crispy
  • 1 large tomato slice
  • lettuce
  • 1-2 T honey mustard sauce (recipe below)
  • optional extras: slice of cheese, slices of avocado
Honey Mustard:
  • 1/3 cup mayonnaise
  • 1/4 cup mustard
  • 1-2 T honey

INSTRUCTIONS


  1. My husband likes to make it all over the campfire, but you can obviously do the bacon inside.
  2. Grill the chicken until cooked through. We kept our seasonings simple and stuck to just pepper and seasoned salt to go with all of the toppings.
  3. Assemble your sandwich according to your wishes!
