No Bake Christmas Tree Cookies

These festive cookies are a Christmasy twist on a favorite family recipe. They are no-bake and sure to put a smile on your face!

Ho ho ho! I just love having plenty of cookies around during the holidays. I tend to bring a tray everywhere we go during the weeks leading up to Christmas. That is a lot of places, so I get to make a lot of cookies.

Every year I make sugar cookies and gingerbread men. There need to be fudge covered crescent cookies and kolacky as well. Perhaps some chocolate covered cherry snowballs to help round things out.

But each year I like to try a few new things as well.  The peppermint mocha shortbread cookies and big and chewy chocolate mint chip cookies were both big hits on early seasonal trays. But I wanted something completely different!

There had been some chatter on Facebook about no bake Christmas cookies.  Of course the peanut butter oatmeal no bake cookies are always fun and so are their chocolate cousins, but neither are particularly seasonal. So I put on my thinking cap and started rummaging through my pantry for ideas.

I had a couple bags of those crispy chow mein noodles hanging around. That’s when it hit me!

My family loves the chow mein mests so much that they are an annual first day of spring tradition. They would likely stage a mutiny if we didn’t make any!

Why not make them into trees for Christmas? 

Indeed, why not? (So of course I did!)

It’s the same basic recipe we’ve used all of these years, but with some green food coloring mixed in. It’s totally not necessary, but the chocolate dipped trunks were delicious.

A few mini candy coated chocolates or fun sprinkles for ornaments and they were all decked out for the holidays. As I expected, Little Dude had fun decorating them and my family went nuts for them.

So if you are looking for a quick and easy treat that is still festive and fun this holiday season, definitely consider these. My guess is they are going to be a requirement at our house from here on out!

No Bake Christmas Tree Cookies

Ingredients
 

  • 6 Tablespoons butter
  • 4 Tablespoons creamy peanut butter
  • 6 cups mini marshmallows
  • green food coloring or gel
  • 12 oz bag chow mein noodles
  • Optional: Chocolate for dipping stems candies and sprinkles for decorating

Instructions
 

  • In a large pot over the stove, or a large microwave safe bowl, melt together the butter and peanut butter.
    6 Tablespoons butter, 4 Tablespoons creamy peanut butter
  • Add the marshmallows and cook until just melted. Stirring until the mixture is smooth.
    6 cups mini marshmallows
  • Tint to the desired shade of green with food coloring and stir in the chow mein noodles.

  • Grease your fingers and working quickly, form lumps of the chow mein mixture into tree shapes on wax paper. Decorate with candies and sprinkles. Allow to set until firm.
  • If desired dip trunks in chocolate or spread with a bit of melted chocolate.
  • Once set, store in an airtight container until ready to serve.
