Di's Buttery Potato Rolls


     There is just something about the smell of fresh bread in the oven.  It is intoxicating to say the least!  Bread is one of the things my little guy really likes to help make.  He enjoys scooping the flour, dumping the flour, running the mixer.  I really love kneading.  There's something a little bit cathartic about it as long as you have the time to sit back and enjoy it.

      I am really excited to bring you this week's menu!  It is chalk full of all of the things my family loves to eat.  We are big pot pie fans.  We love pizza and a flavorful meatloaf! Jess's Chicken Enchiladas

    These enchiladas are so good!  If you remember, my sister-in-law is an excellent baker.  She makes fun cakes and blogs about it at year of cake.  She makes more than great cakes though!  She also makes wonderful enchiladas.  Matt and I were amazed.  These smelled so good while they were cooking and they tasted even better.

Fresh Strawberries and (Sour) Cream Bundt Cake


     I have been wracking my brain trying to decide what to make for Valentine's Day this year.  I wanted something sweet and fun, but not too complicated.  I have a heart bundt pan, so it seemed like the perfect way to infuse a little love into the situation.  Of course a cake never hurt anything either.  I was really tempted to do something chocolaty and rich and luscious.  But we just did the Devil's Food Cake and I was feeling a little more in the mood for bright and fresh.

Blueberry Coffee Cake - A suggestion from one of you!



     Those of you who come around here regularly will probably recognize the origin of this recipe.  It is a fun variation on my great-great grandma's Dutch Apple Cake.  It is a very simple cake that comes together easily and is topped with fruit and struesel to make a delicious breakfast cake or an easy treat for tea time or dessert.  It is a family favorite that has been made by at least 6 generations now that my little guy helps so much in the kitchen.

Devil's Food Cake


      It's Cake Slice time again!!  You knew it was bound to happen, didn't you?  A big tall chocolaty layer cake wrapped in a creamy chocolate frosting was coming.  It was just a matter of time!  I almost talked myself out of it.  In fact, I did talk myself out of it at least two or three times.  Who needs a three layer devils food cake?  I mean it is a TON of butter, and it was just Christmas... We survived 12 days of cookies, but how far do we want to push it.  Maybe you should just make one of the smaller cakes.  Doesn't a lemon cake sound lovely?

Fall Harvest Maple Baked Oatmeal



     It has been a little while since I shared a new baked oatmeal recipe.  But this is a great time of year to make a warm, hearty and healthy breakfast so it seemed time to make another batch.  Baked oatmeal is one of my favorite things to make with my little guy.  The measurements don't have to be super exact, the techniques are not difficult and it is something he can more or less do on his own with a little direction.

Peach Habanero Chicken Wings



    I have had my mind set on making chicken glazed with my Peach Habanero Jelly for quite some time now.  I love the sweet heat combo that the jelly brings.  It is perfect spread over cream cheese and crackers.  In fact it is always one of my favorites!  But, I just knew there had to be other ways to use it!

Warm and Cheesy Pulled Pork Dip


      When I posted the recipe for Pulled Pork Enchilada Verde Soup I promised a super amazing dip recipe using some more leftover pulled pork.  I think this leftover pulled pork is quickly becoming one of my favorite things to have on hand.  I actually just bought a couple more pork butts because they were on sale so cheap at the store... now I just need to talk my dad or brother into smoking them for me!  If nothing else, I can always braise it I suppose!

K.C.'s Fish and Shrimp Chowder

      When my family got together for Christmas, we did what we tend to do while gathering for the holiday... talked about what we were going to make for New Year's Eve!  I mean, isn't that what your family does when they get together too?  We are always planning out what we are going to eat the next time.  There was a stretch last fall where the menu was planned out at least 5 weeks in advance.  Normally we don't take it quite that far, but for an event like New Year's Eve we have to get the ball rolling!

Pulled Pork Enchilada Verde Soup #SoupWeek


       You all had to have known it was bound to happen, another leftover pulled pork recipe!  I hope you love them as much as I do.  My brother smoked 4 pork butts in the beginning of December.  He was doing some for my sister's wedding and figured while he was smoking some meat, he might as well really go for it!  We were lucky enough to end up with a few quart sized bags of yummy, smoky, delicious pulled pork for the freezer.  One portion ended up becoming a deliciously smoky and out of this world addictive dip that I hope to share soon.  Another portion became soup for #soupweek!

Maw-Maw's Chili Mac Soup #SoupWeek


      Believe it or not, this soup is what we knew as chili growing up.  Of course, the chili I make for the football watching crew these days is quite a bit different than this.  But you can certainly see why a mom with 6 hungry kids would whip up this more kid friendly version.  A mild chili flavor with just enough beans to make it a complete meal and plenty of macaroni to make it kid friendly makes it accessible to everyone.

Grandma's Copycat Kelly's Cheese Soup #SoupWeek



      My town has a group of restaurants that are some of the most popular in town.  They are all owned by a local family and have some of the best food around.  In fact, my husband worked at one for a good part of his twenties.  It serves pizza and Mexican food.  I know it sounds like a strange combo, but it really works.  Add in pitchers are margaritas and you are really in business.  Kelly's is the Irish pub version of the four hot spots.  They serve great burgers, salads, sandwiches, chicken fingers and all of the things you would expect at a family pub.  They also have a salad bar with everything you would expect plus big fluffy cinnamon rolls and their famous cheese soup.

Zach's Birthday Cookies - AKA Crack Cookies


  This barely counts as a recipe.  It is so easy.  And so good.  If you like soft cookies that come together in a minute, this recipe is for you!

   They got their name a few years ago.  It was Zach's birthday.  He was coming over to watch football.  I didn't have time to bake a cake, let it cool and then frost it.  So, I made these instead!  Everyone loved them.  Ever since Ro has called them Zach's birthday cookies.  Zack, however, calls them crack cookies.  Either way, they are always a hit and great in pinch!
