Great-Grandma's Scalloped Corn

This vintage recipe is a hearty filling side dish that was a staple at many family dinners of my childhood and those of the generations before me.  Great-grandma's scalloped corn is a perfect side to so many dinner entrees!



      This recipe is definitely a retro recipe that deserves a relook.  I had great-grandmas on both sides of my family that were known for making this recipe.  One from Indiana and one from Wisconsin, so I am guessing it was a popular recipe with a lot of families in that generation.

      Here I go again with another recipe for using up left over pulled pork.  It is just handy to have a variety of things to do with what is left.  I mean if you are smoking  some pork butt you might as well do two right.

    Or in my brother's eyes, if you are doing two you might as well do four.  He'll bring one to share with the guys at work and have a family dinner.  He keeps some and the rest seems to find it's way to my fridge.  He's never heard me complain about it.  Not even once!

Pulled Pork Enchiladas with Sour Cream Cheese Sauce

The perfect use for leftover pulled pork! These pulled pork enchiladas are part BBQ and part enchilada. They are creamy, cheesy and oh so good! 



    We LOVE pulled pork around here.  I usually make it by braising it inside, but my dad and brother both have smokers and love to smoke whole pork butts.   Either way it is delicious and when you are cooking a whole pork butt at a time there is plenty of leftovers.  I love using leftovers.

French Silk Pie

This pie is creamy, luscious, rich and popular every time I make it! Full of chocolaty french silk filling and topped with whipped cream, it is a favorite and so full of memories!



    As far as I know,  my Great-Grandpa "Buck" never made a French Silk Pie.  But, I can't imagine there ever being a time where a french silk pie doesn't remind me of him.  When most of MiMi's family still lived in the Chicago area, Maw-Maw and Paw-Paw used to host Sunday dinners.

     I was young, but still do have some memories of the house and the weekly ritual.  They had a strawberry shortcake toy in the closet upstairs that I liked to play with and a putting green in the backyard.  Yes, you read that right.  They had their very own practice green... in the backyard.  But that is unrelated to the pie.

Kitchen Sink Cookies - A Panera Copycat Recipe

Sweet, salty, crunchy and soft, these cookies have it all.  Full of caramel, chocolate and even bits of pretzel. They mimic the Panera kitchen sink cookies.


     It is that time of year. The festive Christmas decorations are put away.  The cozy glow of the tree is gone. It is still dark and freezing outside and the holiday cheer isn't there to make it tolerable. The Christmas cookies have been gone for at least a week. Sad stories all the way around!

   Sometimes you just want a little chocolate pudding.  There is just something so comforting about it.  Now, you could run to the store and buy a box of mix.  Then all you have to do is stir in the milk and let it sit.  Or you can do something that is almost as easy and tastes twice as good.  Chances are you have most of the ingredients in your pantry already, and as a bonus you get to sneak a little warm pudding to tide you over until it cools!

Baked Crab Rangoon Egg Rolls

Cori's Sausage Stuffed Mushrooms

These creamy sausage filled stuffed mushrooms are always a hit. They are the perfect appetizer for a party or great for game day as well! 


     This recipe is a big favorite in our family.  My cousin Cori made them again for Christmas and they disappeared even though she made a double batch.  So I figured I better make some more and update the pictures in this post.  I also made a double batch for our New Year's Eve appetizer buffet.  They were a hit again. My husband, Little Dude and I could probably polish off a batch ourselves and happily call it dinner!
