Maple Cranberry Baked Brie

Sometimes life just calls for melty cheese.  Whether you are trying to round off the edges of a particularly rough week or celebrating something fun, gooey cheese is bound to help! 

Add a sweet and tart topping and things are really going to be good.  This gooey brie topped with an easy to make cranberry and maple sauce is the perfect combination.  Dig in with a sliced baguette for a really special treat.

I couldn’t resist grabbing a round of brie at the store recently.  Then the wheels got to turning. 

Lately I’ve been using brie sliced and melted like in a grilled cheese or on that brie and pear flatbread that was such a hit with all of us.

It had been quite a while since I just baked the brie and dug in with slices of crusty baguette. Since we were having a cozy Sunday at home, I thought it would be fun to just go for it.

It never takes much convincing for my guys to eat cheese, so I knew they’d be on board. But what to top it with?

Had I been on my own, maple and pecans were calling my name. But my husband won’t eat nuts and I wanted to know I’d have help eating it. I was tempted to work up an apple cinnamon topping.

Finally I settled on cranberries. I always buy some extra bags of fresh berries around the holidays and chuck them in the freezer to use later. This seemed like the perfect time to use one.

If you don’t have access to fresh or frozen berries, you could use a can of whole berry sauce. Just warm it up and doctor it up a bit and you’ll be in business.

This flavor combo was a hit with us. The sweet tart cranberry sauce played perfectly with the creamy tang of the cheese.

I threw a few whole pecans on because I still had them on my brain and that way my husband could easily avoid them.

You will likely have some extra cranberry sauce left when you’re done. It would be great on a turkey sandwich or mixed with yogurt and granola.

Or serve it alongside your pork roast or chicken dinner. Who said you can only have it at Thanksgiving?

Ingredients
 

For Brie

  • 8 oz round of brie
  • 1 cup maple cranberry sauce
  • 1 baguette thinly sliced and toasted
  • optional: toasted pecans

Maple Cranberry Sauce

  • 12 oz fresh or frozen cranberries
  • 1 cup apple juice
  • ½ cup maple syrup
  • ½ cup light brown sugar packed

Instructions
 

Sauce

  • Combine all of the ingredients in a sauce pan.
    12 oz fresh or frozen cranberries, 1 cup apple juice, ½ cup maple syrup, ½ cup light brown sugar
  • Bring to a boil over medium-low heat for 15-20 minutes or until thickened.
  • Set aside to cool.

Assembly

  • Preheat the oven to 350°F.
  • Place the brie on an oven safe dish.
  • Bake for about 15 minutes or until soft and gooey.
  • Top with about a cup of warm maple cranberry sauce.
  • Add pecans if desired and serve with toasted baguette slices.
