Cori's Beef Rollups

    My cousin, Cori, passed this recipe on to me.  Cori got this from her husband Adam's aunt.  She got it from his grandma.  If a recipe is passed on this many times, it has to be good!  This calls for it to be rolled up in tortillas and cut into spirals, which is what I did.  But it could very easily be made into a cheeseball which would be yummy too!  Another variation could possibly be using some picked jalepenos instead of the pickles? I haven't tried it, but in my head it would be pretty yummy!

Cori's Beef Rollups


2 8 oz packages of cream cheese, softened
2 2 oz packages chipped beef
2 cups shredded cheddar cheese
1 package dry ranch dressing mix
2 dill pickles or a handfull of pickle slices
1 package tortilla shells, the bigger the better - I used 3 of the big burrito shells

  1. Chop the pickles and chipped beef
  2. Mix together seasoning and cream cheese
  3. Stir beef, cheese and pickles into cream cheese
  4. Spread on tortillas and roll tightly
  5. Chill for at least an hour, then cut into 1/4-1/2 inch slices
