Dinner is served and it's delicious! This chicken and broccoli casserole has so many of our favorite foods in it, pasta, chicken, broccoli and cheese! It is a hit every time I make it. It is also a great way to use up some leftover chicken or turkey. It comes together quickly and bakes to perfection. Serve some to your family today!
My husbands's grandma sent me this recipe as a response to the original email I sent out that started this wild ride. I had some leftover turkey breast from when I made turkey and homemade egg noodles.
This recipe seemed like a great way to use it up. Obviously you can used leftover roast chicken, chicken breasts or you could pick up a rotisserie chicken at the store.

I knew I would be on the road, so I made the casserole the night before up until the point you put the cheese on it. Then I put it in the refrigerator.
When I got home from work, all I had to do was pull it out of the fridge and preheat the oven. I added a few minutes to the bake time because the casserole started cold. Everyone was a fan of this one.
The first time we had it everyone raved about it. Now I keep it in my back pocket for whenever I have some leftover poultry. So I pull it out a few times a year.
I think the boys in this house have limited memory, so they act like it is the first time they see it ever time. But they love it every time!

So if you are looking for a quick and tasty way to change up leftovers, this is the recipe for you. But don't let lack of leftovers get in your way. It is definitely worth cooking up some chicken breasts too.
If you like tasty and comforting meals like this one, you may also enjoy creamy one pot chicken and noodles. It is a stovetop meal that all comes together in one pot.
Or you could try MiMi's creamy chicken pot pie. My siblings request that one for their birthday dinner and our friends always ask for it too!

Grandma was definitely on the right track sending us this one! I need to ask her if she has any more like this in her recipe box! What are some of your favorite ways to use up leftover chicken and turkey?

This is such a great recipe to use those leftovers! I don't mind making it from scratch as well!! Cheezy goodness! What I love the most about it is that I can do the meal prep and keep it in the fridge and bake with the cheese whenever needed!
ReplyDeleteIt is handy to have a recipe you can assemble ahead, isn't it? Thanks Deepika!

DeleteThis does look like a great way to use up those turkey leftovers, as well as a fabulous recipe. We like casseroles, and we like grandma's recipes too! Thanks for sharing.
ReplyDeleteGrandma's recipes are the best, aren't they? This is definitely one that I find myself reaching for every time I have turkey leftovers my husband hasn't already claimed for sandwiches!
DeleteI pinned it for later. I always looking for ways to add veggies to quick meals and this does the trick. Thanks.
ReplyDeleteThis definitely hits on both counts! I hope you enjoy it!
DeleteHi Carlee, Grandma knew how to feed the family and keep it quick! I like one dish recipes, the less fuss the better. I usually make a pie with chicken or turkey leftovers, that always goes down well with the family.

Mmmm! Now I wish I would have made a pie too! My husband started eyeing me anxiously when I was using too many leftovers in recipes. He loves the leftovers for sandwiches and he was worried he wouldn't get his fill!
DeleteThis sounds so good! I make a similar recipe using rice but I love the idea of mixing it up with some noodles. Pinned.
ReplyDeleteI'll have to try it with rice now!
DeleteWould you be willing to share your recipe that uses rice?

ReplyDeleteI hope you love it! Thank you!
DeleteMy family does the same thing where they act like they've never had a dish that they have raved about before.
ReplyDeleteIt is funny that they don't remember, but reaffirming that they like it so much the second time! Sillies!
DeleteI love this kind of comfort food!! It's everything you need in one dish. Not to mention, Grumpy would be all over it!
ReplyDeleteIt is like a warm hug from grandma on a plate! <3
DeleteYay! A casserole that all but one daughter liked (but she doesn't like much so it really doesn't counnt)! I didn't have provolone and it was a little dry so I just added more broth. Leftovers in lunch tomorrow.
ReplyDeleteYAY! I am so glad everyone but one liked it. I have subbed some mozzarella in for the provolone a few times when I didn't have it. Maybe it will grow on her in time ;-)
DeleteThis is delish. Only change I made was I used left-over rotisserie chicken and halved the recipe. It’s only me now and it made enough to share with my grand daughter. NOW SHES MAKING FOR HER FAMILY. I will be making this again and again it’s so good.
ReplyDeleteI am so glad you liked it! Rotisserie chicken is a great way to make this!
DeleteI’ve been looking for a recipe for my picky kiddos so this worked so well with a few changes. I used the pasta shells from a velveeta box bc they like to eat those but I ditched the cheese sauce that comes in the box. I substituted a half tablespoon of onion powder instead of the chopped onions and sprinkled some cooked chopped bacon on top just after I pulled the casserole out of the oven. I also made sure to sit the frozen broccoli in a strainer to drain as much excess water out. It came out good and my kids ate it!
ReplyDeleteYAY! it is always nice to find something the picky kids will eat. Your substitutions sound great.
DeleteHi Carlee, Looking forward to trying this. I like 'quick and easy' recipes, especially on Mondays (what is it about Mondays? LOL) Glad I found your blog today. Also watched you and your son making ice cream in a bag. His enthusiasm made me chuckle! :) Have a great weekend, Lisa
ReplyDeleteMondays are tough for sure! I am glad you liked the ice cream video. We have a blast cooking and making videos together =)
