MiMi’s Oven Baked BBQ Chicken

Sometimes you get a hankering for BBQ chicken but standing over the grill isn’t possible.  That’s when you break out this recipe for baked BBQ chicken, it is the best way to do it indoors!

BBQ chicken doesn’t have to be done on the grill. You can make tender and flavorful chicken in the oven as well. This recipe helps you get that delicious BBQ flavor on the table no matter the weather.

MiMi makes this recipe when she is in the mood for BBQ chicken, but it is too cold outside to grill.  It turns out really tasty and is really easy.

MiMi’s recipe calls for a whole chicken broken down into its pieces.  I never make it that way. I almost always use single parts.

Sometimes we use split chicken breasts like in these pictures. We also like using chicken thighs.

(If you have extra thighs, try making Instant Pot frozen chicken thighs sometime too.)

Little Dude’s favorite is when we just have chicken drumsticks. It’s handy when your food comes with a built in handle.

We prefer to use bone in, skin on pieces of chicken, but you can use boneless skinless.  Just reduce the baking time.

If you have a good nonstick baking pan, it makes clean up easier. I used my Swiss Diamond roasting pan and the cooked on bbq sauce wiped out easily.

We have a few favorite sides to serve with bbq. On this particular day we had our favorite corn casserole and some roasted green beans.

I will share the recipe for the green beans soon. Slow cooker macaroni and cheese with corn or instant pot shells and cheese would be more great side dish options.

If you find yourself with leftovers, we love BBQ chicken pizza or quesadillas. You could also easily make a chicken version of the pulled pork rice skillet supper.

How long does it take to bake a split chicken breast at 350?

It takes about 30 minutes to bake a chicken breast in the oven. It’s done when the center registers 165F on a meat thermometer.

Ingredients
 

  • 3 to 4 split chicken breasts
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • cups BBQ sauce

Instructions
 

  • Preheat oven to 350°F
  • Place chicken in baking dish and sprinkle with spices
    3 to 4 split chicken breasts, ½ teaspoon salt, ¼ teaspoon black pepper, 2 teaspoons garlic powder, 1 teaspoon onion powder
  • Cover and bake for one hour
  • Drain grease then brush BBQ sauce over chicken
    1½ cups BBQ sauce
  • Bake uncovered for 30 minutes
  • Use a thermometer to ensure the middle of the chicken is 165°F
  • Let rest for 5 minutes, then serve

I personally don't love barbecued anything, but my family does. This looks like a pretty simple method to get a good barbecued chicken.

That is true. Luckily there are a lot of options to choose from or you could always use homemade.
