Sandra's Spinach Salad

   Sandra Guegel's parents lived in the house next to Great Grandma & Grandpa Rees when she and grandpa were kids.  So she and grandpa have always known each other.  Grandpa still lives in that same house and Sandra's mom stayed next door until she had to go to the nursing home.  Sandra kept her mom's house and came to visit a handful of times each year.  So, though she was not blood relation but she was always "Aunt Sandra."  She was kind, generous and quick witted.  She passed away suddenly during a visit to Quincy this past year and she is still missed.

Sandra's Spinach Salad
1 bunch spinach
1/2 pound of bacon- "fried out"
1/3 cup katsup
1/4 cup vinegar
1/2 cup olive oil
1 T Worcestershire sauce
1/2 cup sugar
1 medium onion, grated
Mushrooms, sliced
Bean Sprouts, fresh or drained from a can
Water chestnuts, sliced
2 Boiled Eggs
Salt and pepper to taste

  1. Wash spinach leaves and tear them into bite sized pieces
  2. Place spinach in salad bowl and top with mushrooms, bean sprouts and water chestnuts in desired proportions.  (I didn't have bean sprouts or water chestnuts on hand today, and I didn't feel like a trip to the store, so I skipped them.)
  3. Mix katsup, vinegar,, oil, Worcestershire, sugar, onion.  Season with salt and pepper.  Pour over spinach.
  4. Top with bacon pieces and egg.
  5. Toss before serving.
I love these kinds of salads!  This salad or wilted leaf lettuce in the spring are really tasty.  We don't make them often, but I always really enjoy it when we do.  It hardly qualifies as a health food, but at least it gets some good greens in you!
