I LOVE frosting. As far as I am concerned, most of the time cake is mostly just an excuse for frosting. I have had a particular crush for cooked frostings lately. There is something magic that happens when you cook milk and flour to a paste and then whip it into butter or cream cheese and make it into something so light and airy and sooooooooooooooooooooo good.
So I just knew I was going to love this caramel frosting recipe Di sent. I adjusted it slightly because I didn't have any heavy cream and I wasn't in the mood to go to the store. It was still wonderful!
Di sent this as the recommended topping for her now famous banana cake. Since the banana cake requires a trip to the freezer, I just beat until the frosting is mixed but still warm.
Then I pour the frosting on the cake fresh from the freezer. You just pour and spread. The frosting sets quickly on the frozen cake.
Then set it aside and let it come to room temp. You will never have a more moist and delicious banana cake in your life and the frosting is a perfect consistency too!
If you are frosting a room temperature cake, just beat the frosting a little longer. As it cools down it will become a spreadable consistency.
I mean, really. Just give me a spoon... and a glass of milk... this frosting is a sweet one!

Caramel Frosting
Smooth, sweet and creamy, this caramel frosting is easy to make and is a perfect topper to butter cake, chocolate cake, banana cake and more!
prep time: 10 MINScook time: 5 MINStotal time: 15 mins
ingredients:
- 1 stick butter
- 1 cup brown sugar
- 1/3 cup whole milk
- 1/4 tsp salt
- 1 T vanilla
- 2 cups powdered sugar
instructions
- In a small saucepan, melt butter.
- Add sugar and milk and cook over medium low heat until the sugar is fully dissolved, about two minutes.
- Remove from heat and add vanilla.
- Transfer to your mixer bowl. Beat on medium, adding a little powdered sugar at a time. Adjust by adding more sugar or milk until you reach your desired consistency.

ReplyDeleteIt's a good one! I love that the cake I use it on is frozen so I can just pour it on while it is still warm and give it a quick spread and call it a day! I hope you're surviving ok, Andrea! I'm sure he'll do wonderful!
