Baked Creamy Chicken Taquitos

These taquitos are full of chicken, cheese and flavor. They are really easy to make and are a great snack, fun for game day or a great dinner!

These flautas or rolled tacos were originally my cousin’s recipe but we have adopted them as one of our own. It has been love at first bite for everyone in our family.

They are creamy, cheesy, full of flavor and easy to make. Serve them with your favorite dipping sauces for an extra special treat. They are a great hearty game day snack or a super fun dinner entrée.

When I asked my family for some family favorite recipes, this is one of the recipes my aunt Marlene gave me.  She said she couldn’t take credit for it though, it was really my cousin Laura who had started making but everyone loved them!

I was really excited to give them a try as Laura is quite the cook.  They were delicious and much easier to make than I had anticipated.

They are so creamy cheesy and the flavor is great!  The mix of spices, cream cheese and chicken really makes for one delicious filling.

The tortillas get nice and crisp without the need for a fryer, which is a double bonus.  The oven does a nice job of toasting them to light golden perfection.

My little family was instantly in love with this recipe.  My extended family didn’t take long to follow suit.

MiMi made them a few years ago for a girls night after she saw them here on the blog.  Grandma joined us at that girls night and she made them after that!

We all love them and make the frequently!  Since this was originally posted long only a little over a month into my blogging adventure, I thought I should refresh the post and share it with you again.

Tips and Tricks

Cold tortillas are hard to roll.  Make sure your tortillas are room temperature or slightly warm before you use them.

We like making taquitos with flour tortillas.  You can make them with corn tortillas if you would like. 

Corn tortillas will work best if you give them a quick dip in warm oil before you use them.  That warms them up and makes them pliable. 

You can also try microwaving them for a few seconds before rolling them.

Try mixing up the fillings a bit if you’d like.  These would be great with salsa verde instead of tomato salsa

You can also experiment with different cheeses.  Anything that melts nicely would be worth a try!

If you like bbq, trying giving these a BBQ slant and use BBQ sauce instead of salsa.  It would be a fun twist, a lot like my creamy pulled pork enchiladas

Time Saving Tips

I like to make big batches of chicken all at once. Then I use it several times throughout the week or freeze some for later.

Ingredients
 

  • 6 ounces cream cheese softened
  • ¼ cup salsa
  • 1 Tablespoon lime juice
  • 1 teaspoon chili powder
  • 3 teaspoons garlic powder
  • ½ teaspoon onion powder
  • 4 Tablespoons cilantro chopped
  • ¼ cup chopped green onions
  • 2 cups shredded cooked chicken
  • 1 cup shredded cheese I usually use cojack or cheddar
  • 12 6 inch flour tortillas

Instructions
 

  • Preheat oven to 425°F
  • Mix together all of the ingredients but the tortillas until thoroughly combined
    6 ounces cream cheese, ¼ cup salsa, 1 Tablespoon lime juice, 1 teaspoon chili powder, 3 teaspoons garlic powder, ½ teaspoon onion powder, 4 Tablespoons cilantro, ¼ cup chopped green onions, 2 cups shredded cooked chicken, 1 cup shredded cheese
  • Make sure your tortillas are nice and soft. If they aren’t, warm them in the microwave for about 20 seconds to make them pliable.
    12 6 inch flour tortillas
  • Spoon about 3 Tablespoons of filling down the center of a tortilla. Roll it tightly and place in seam side down on a parchment lined (or sprayed) cookie sheet.
  • Repeat until tortillas and chicken mixture are gone.
  • Bake for 15-20 minutes until they start to crisp and brown.

We make these too, your version sounds even better! Green chilies are a great flavor , mild, to be family friendly. We get more crispy tortillas by brushing lightly with oil, olive or whatever is on hand.
