Oriental Mushrooms

   It is Chinese New Year tomorrow and we're getting the celebration kicked off right!  We knew the baked crab ragoon egg rolls were going to be a hit.  And who doesn't love fried rice?  But we thought we might still need a side dish.  Some vegetables would be good.  It was nice to have a little something lighter and brighter to accompany our favorites.

Oriental Mushrooms


1/4 cup extra virgin olive oil
1/8 cup white vinegar
2 T soy sauce
2 T chopped garlic
1 lb mushrooms
1 red onion, chopped

  1. In a skillet, mix together all ingredients
  2. Bring to a boil, then reduce heat and simmer for 15 minutes or until liquid is mostly reduced
  3. Serve with your favorite fried rice


  1. I love these and so does my whole family! I might have to go buy some mushrooms tonite and fry some of these up!
