Creamy Broccoli and Rice Casserole - Made by MiMi

Creamy and cheesy, this broccoli and rice casserole is a popular side dish. Creamy broccoli and rice casserole is a stick to your ribs side that is sure to become a favorite at your house as well. 



   When K.C. invited us over for his crab fest, MiMi and I got together to decide who would make what side dishes.  I was thinking I would make either some sort of macaroni and cheese or a cheese and broccoli rice bake.




     MiMi said she was making cookies and broccoli and rice casserole.  It's funny how these things work!  So, I set off to make a new version of a spring pea salad instead.

     I figured we might appreciate something cool and light with all the rich and yummy food everyone else was making.



    MiMi's broccoli and rice was really good.  It was nice and creamy with lots of cheese.  It was so smooth and yummy.  The adults all really liked it, but Jax loved it!

Creamy Broccoli and Rice Casserole

Creamy and cheesy, this broccoli and rice casserole is a popular side dish. Creamy broccoli and rice casserole is a stick to your ribs side that is sure to become a favorite at your house as well.
prep time: 10 minscook time: 1 hourtotal time: 1 hours and 10 mins

ingredients:


  • 1 stick butter
  • 1 small onion, chopped
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 bag frozen broccoli
  • 1 1/2 cups rice, uncooked
  • 2 cups Velveeta, cubed
  • Pepper to taste

instructions

  1. Put onion and 7 Tablespoons of butter in the bottom of a 9 x 13" pan.
  2. Put the pan in the oven and turn it on to preheat to 350 F, allowing the butter to melt and the onions to soften.
  3. Stir in the rice, soups, broccoli, milk & black pepper to taste.
  4. Dot the top with bits of the extra Tablespoon of butter. 
  5. Cover with foil and bake for 45 minutes, stir an then bake 15 more minutes

  2. I am always on the lookout for recipes suitable for my toddler. I think this would be great as the broccoli is almost "hidden". He loves rice so this is something I will be trying out! Thanks for linking up at Mum-bo Monday
