Slow Cooker Salsa Chicken for Burrito Bowls

Make a delicious Mexican inspired meal while you do other things! This salsa chicken is so full of flavor and makes the best burrito bowls. Dinner is served! 



     Everybody needs a couple of really simple to make really big on flavor recipes in their box of tricks.  This is a simple dump and go slow cooker recipe that results in a delicious dinner. Come home, make some rice and you have burrito bowls in no time! You could also use tortillas to make fun tacos or burritos!


    This week has been really busy.  I knew I had a lot of travel on the calendar, so I wanted to have a few things that were quick to throw together.

    Then my cousin, Sarah, posted her make ahead slow cooker meals for the week on Facebook and I figured I would take the opportunity to follow along. This may be a new favorite.



    All you have to do is throw the ingredients in the slow cooker and let it go.  When you are ready to eat, shred the chicken, stir in some cilantro and make some cilantro rice.  Yum!

     Simple dump and go slow cooker recipes like this are always great for busy weekdays. There is nothing like coming home to having dinner mostly ready.

     If you love salsa chicken like this, but forgot to get it ready before you left the house... don't despair! You can speed the process up by making salsa chicken in the instant pot!

     No matter how you make it, just promise yourself you'll give it a go. It's flavorful and easy!

Slow Cooker Salsa Chicken
Ingredients
  • 1 lb Chicken Breasts
  • 1 1/2 cups dried black beans*
  • 1 1/2 cups frozen corn
  • 1 cup salsa
  • 1 pkg taco seasoning
  • 3 cups water
  • 1 medium onion, chopped
  • cilantro to taste
Instructions
*You can use 2 cans of black beans and cut the water to 3/4 cup if you'd like1. Place black beans in the bottom of slow cooker. Add beans, corn, salsa, taco seasoning and water. Stir to combine. Add chicken breasts.2. Cook on low for 6-8 hours.3. Using forks, shred chicken and stir in cilantro.4. Serve over rice and top with your favorite toppings. We like guacamole, a little more salsa, sour cream, cilantro and cheese.

    1. I love using dry beans when I can. And black beans are prefect for the slow cooker! It makes for a really affordable and filling meal! I hope you have a great day as well!

  2. This is a great idea for when you are gone all day. It cooks 6-8 hours, that is perfect. Especially if you make the rice the night before and warm it up, dinner could be on the table in a few minutes! Awesome.
