Open Face Cucumber Tea Sandwiches

Like an open faced tea sandwich, these cucumber ranch bread bites are a great appetizer especially in the spring and summer. Fresh, simple and great for making a bit ahead!

Cucumber ranch bread is a fun spring or summer appetizer.  It would also make a great light lunch. 

You can make it on small slices of baguette for an appetizer, or larger slices of Italian bread for a light meal. Either way, these open faced tea sandwiches are refreshing and delicious.

Isn’t food fun that way? You can be transported back to a place and time with that first bite.

Cucumber bread bites are perfect for serving an bridal or baby showers or would be fun at a tea party as well! They only take a few ingredients and almost no effort to make.

I was introduced to these open face cucumber sandwiches almost twenty years ago now. The first time I had them is associate with a fun memory and no I think about it every time I make them.

Making Open Faced Cucumber Cream Cheese Sandwiches

Luckily this recipe is super easy to make. So whipping it up at a moment’s notice isn’t a problem, plus it is a great way to use some cucumbers which tend to come on in droves in our garden.

I have made this on several different types of bread.  Baguettes work great for smaller cucumbers or halved cucumber slices.  This smaller, two bite version works especially well for appetizers.

Italian bread works well also.  Depending on the loaf you may be able to fit one or two slices of cucumber on each piece of bread.

The ranch spread is just a few ingredients.  The recipe includes mayo which makes it extra creamy and delicious.

Sometimes I forget to add it or don’t have it on hand and it is still good without.  Just mix in the ranch seasoning and you are good to go!

I tend to do the cucumber slices different each time too.  Sometimes I peal the cucumbers. 

Sometimes I peel part of them.  Sometimes I don’t bother to peel it at all. Do whatever your mood and preferences dictate!

If you want a little extra frill, you can add some fresh dill on top of the cucumbers. It gives it that little extra something.

We are usually in too much of a hurry to dig in to garnish them, though. But you can do whatever you would like!

Can I Make These Cucumber Tea Sandwiches Ahead of Time?

Yes, you can make these a few hours ahead of time, just cover and chill them until you are ready to serve.  They are good slightly chilled, but I prefer them at room temperature.

Just pull them out a few minutes before you are ready to enjoy!

You can also prep everything farther in advance if you want to, then assemble them closer to time to serve. The cream cheese mixture can be made up to a day or two in advance and refrigerated.

You can slice the cucumbers and bread ahead of time as well. Just store the bread in a ziploc bag and store at room temperature.

The cucumbers can be stored in an airtight container in the refrigerator for a day before use. Then all you have to do is assemble when you are ready.

Ingredients
 

  • 8 oz cream cheese
  • 1 pkg ranch seasoning mix
  • 2 Tablespoons mayonnaise
  • 1 baguette or loaf of Italian bread thin sliced
  • 1 to 2 cucumbers thinly sliced

Instructions
 

  • Mix cream cheese, ranch mix and mayo until smooth
    8 oz cream cheese, 1 pkg ranch seasoning mix, 2 Tablespoons mayonnaise
  • Spread over bread slices and top with cucumber slices, you may want to cut the cucumber slices in half if you are using a baguette.
    1 baguette or loaf of Italian bread, 1 to 2 cucumbers
  • That’s it! You can make them as far as a day in advance and store them in the fridge.

I ave never heard of such a thing! I have read about ppl eating cucumber sandwiches in the old day but I can see how this could be kind of addicting! Cool, creamy!

I think it is very similar to the cucumber sandwiches, but I love to serve them open faced! They are addicting and great for a spring or summer day!
