Then he adds some rub, followed by ground pork, BBQ sauce and crumbled bacon.
Then he rolls up the ground pork and rolls the bacon around it.
Then the masterpiece is ready to hit the grill.
He smokes it for a couple of hours, and once it reaches temperature he bastes it in more BBQ sauce!
Doesn't that look good?! It is pretty hard to resist!
Bacon Explosion
Ingredients:
2 lbs bacon
2 lbs ground pork
1-2 tsp of your favorite BBQ rub, KC used Blue Hog's rub
1-2 cups BBQ sauce
- Cook a pound of bacon until crisp. Crumble and set aside.
- Basket weave the other pound of bacon. Sprinkle with rub.
- Spread ground pork over bacon and drizzle with a couple of tablespoons of BBQ sauce.
- Spread crumbled bacon over the ground pork. Roll ground pork and cooked bacon into a tight roll. Then roll the basket weaved bacon over the ground pork roll.
- Place in low smoker for a couple of hours, or until it reaches 160 F. Or you could grill it over indirect heat if you don't want to worry about smoking it. KC. used his gas grill as a smoker.
- Once the bacon explosion reaches temperature, spread remaining BBQ sauce over it and cook until warm and yummy.
- Let rest for a few minutes, then slice and serve!
KC also grilled some corn on the cob and bacon wrapped deer loin for dinner. MiMi made some pasta salad and a cheese and sausage tray for appetizers. I was in charge of dessert, so I made grilled doughnut shortcakes. We all went home plenty full!
KC was so happy at the grill that he forgot to rub it in the he and Kristie beat Pops and me at the bag game. It was fun! I really enjoyed the flavor of the pork. Hickory smoke is one of my favorites. I feel bad for the neighbors who smelled the goodness and didn't get any of it.
