Grandma’s Oatmeal Pie

A flaky pie crust loaded with warm flavors, oatmeal and coconut is a treat to be sure. Grandma spent years perfecting this recipe so you don’t have to. All you have to do is give it a try!

If you have not had an oatmeal pie, you have to try this! Even if you have, you have to give this particular recipe a try.

A family friend’s grandma tinkered with it until it was absolutely perfect. And you know grandmas know what they are doing in the kitchen. 

The recipe makes two, so you are prepared when everyone wants a little more.  However it is easily cut in half if you just want one pie.

Recipes from grandmas just have to be good! This is a great recipe for oatmeal pie from a friend’s grandma. It is loaded with oatmeal and coconut, but even coconut haters love it! You have to try it!

This post was written by MiMi just a few months after the blog was started. I recently remade it and took a few snapshots to update the pictures. We’ll see if you can spot the old ones I left!

I got this recipe from my friend Lynn.  She has baked a couple for her family and posted a picture of them on Facebook.

I saw it and just had to get the recipe from her.  Her daughter-in-law verified that it’s awesome.  She doesn’t even like coconut either.

Lynn told me that she got this recipe from her grandmother.  Her grandmother had a way of changing original recipes to make them her own.

She is not sure where the original recipe came from.  Remember, this was before we had food blogs and Pinterest and things.  Lynn said that her grandmother was a wonderful cook and baker.

She believed very strongly in the quality of her dishes.  She believed her recipes were the best and would stand up for them.

I’d love to see her in a baking competition.  It sounds like she is a woman who would hold her own.

I made this for Carlee’s Mother’s Day dessert buffet.  It seems fitting to use a vintage recipe that was handed down from a grandmother to her granddaughter.  Who knows?

Lynn’s grandma might have gotten this from her mother.  Maybe Little Dude will bake this someday and know that he got the recipe from his MiMi.

Lynn’s grandchildren are able to say that they got the recipe from their great-great-grandma. I love the thought of that!

I made one oatmeal pie in a chocolate pie crust and another in an extra flaky pie crust. Both were really delicious.

Ingredients
 

  • 1 prepared pie crust
  • 2 eggs
  • ¾ cups white corn syrup
  • ½ cup milk
  • ¼ cup butter melted
  • 1 Tablespoon vanilla extract
  • 1 pinch salt
  • ¼ cup all-purpose flour
  • 1 cup flaked coconut
  • ¾ cups old fashioned oatmeal

Instructions
 

  • Preheat oven to 350°F
  • Mix all ingredients together and pour into prepared 9 inch deep dish pie crust
    2 eggs, ¾ cups white corn syrup, ½ cup milk, ¼ cup butter, 1 Tablespoon vanilla extract, 1 pinch salt, ¼ cup all-purpose flour, 1 cup flaked coconut, ¾ cups old fashioned oatmeal
  • Bake at 350°F for about an hour
  • Allow to cool before slicing

Oh this looks amazing! My Mom loves both oatmeal and coconut so I will have to make this for her. What type of oatmeal did you use? I get confused with all the varieties (large flake, quick, rolled etc). Thank you!
